CHEESE-STUFFED DATES WITH PROSCIUTTO



Cheese-Stuffed Dates with Prosciutto image

1/4 cup (2 ounces) goat cheese, at room temperature
1/4 cup (2 ounces) mascarpone cheese, a room temperature
1/4 cup finely chopped fresh basil leaves
Kosher salt and freshly ground black pepper
16 Medjool dates (12 ounces), pitted
8 thin slices prosciutto, halved lengthwise

Steps:

  • In a small bowl, mix together the cheeses and basil and season with salt and pepper, to taste.
  • Gently pull the dates apart and stuff with about 1/2 teaspoon of the cheese mixture. Close the dates around the filling. Wrap a piece of prosciutto around each date and secure with a toothpick.
  • Arrange the stuffed dates on a platter and serve.

Steps:

  • Use a knife to make a lengthwise slit into each of the dates and remove the pits.
  • Use a spoon to fill each date evenly with the various nut butters.Top each with different toppings listed above.

6 ounces creamy goat cheese
24 plump Medjool dates
12 slices thinly sliced bacon, cut in half
1/3 cup honey
1 tablespoon chopped fresh rosemary
1/2 teaspoon cayenne pepper (using more or less to taste)
kosher salt and black pepper
candied or toasted walnuts ((optional))

Steps:

  • 1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. 2. Split the dates in half lengthwise, but don't cut the date all the way through. Remove the pit and discard. Stuff each date with goat cheese, then gently squeeze to seal. Wrap each date with bacon and place seam side down on the prepared baking sheet. Repeat with the remaining dates.3. In a small bowl, combine the honey, rosemary, cayenne, and a pinch each of salt and pepper. Evenly drizzle 1/2 the honey over the dates. The goal is to coat the bacon in honey so that it caramelizes in the oven. 4. Transfer to the oven and bake 20-25 minutes, until the bacon is crisping. Serve warm or room temperature with any remaining honey and walnuts, if desired.

4 skinless, boneless chicken breast halves
4 Borden® Gouda Cheese Slices, or more as needed
1 (4.75 ounce) package seasoned coating mix for chicken

Steps:

  • Melt butter in a skillet over medium-low heat. Add onions and saute until golden brown, stirring frequently. Continue cooking over medium-low heat until onions turn deeper brown, 35 to 45 minutes. If they start to burn, reduce heat. When completely caramelized, remove skillet from heat.
  • Preheat oven to 400 degrees F (200 degrees C). Line a rimmed baking sheet with aluminum foil.
  • Cut a pocket into the side of each chicken breast. Evenly stuff pockets with 1 or 2 slices of Gouda cheese (depending on size of breast) and 1 tablespoon caramelized onions.
  • Place seasoned coating mix in a shallow dish. Evenly dip each chicken breast in coating mix and place on prepared baking sheet.
  • Bake in preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

4 boneless skinless chicken breast halves (6 ounces each)
2 ounces smoked Gouda cheese, cut into thin pieces
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons canola oil, divided
1 garlic clove, minced
1 cup reduced-sodium chicken broth
1 cup apple cider or unsweetened apple juice
2 large tart apples, thinly sliced
1 tablespoon honey

Steps:

  • Cut a slit lengthwise through the thickest part of each chicken breast; fill with cheese. In a shallow bowl, combine the flour, salt and pepper. Dip chicken in flour mixture on both sides; shake off excess., In a large nonstick skillet coated with cooking spray, cook chicken in 1-1/2 teaspoons oil over medium heat for 8-10 minutes on each side or until juices run clear. Remove and keep warm. , In the same skillet, saute garlic in remaining oil for 30 seconds. Add broth and cider, stirring to loosen browned bits. Bring to a boil. Aged Balsamic (From Olive Oil Store)

Steps:

  • Preheat oven to 450°F. Using small knife, make small cut in side of each date; remove pit. Insert 1 piece of cheese into each date. Wrap each date with 1 piece of bacon, sprinkle with pepper. Secure bacon with toothpick. Arrange dates on rimmed baking sheet. Roast until bacon is browned on bottom, about 6 minutes. Turn dates; roast until bacon is cooked, about 6 minutes longer. Transfer to plate; cool slightly. Remove toothpicks. Drizzle with balsamic.

2 (16 ounce) packages bacon
3 (24 ounce) bags small red new potatoes, scrubbed
1 ½ (8 ounce) packages cream cheese, softened
1 ½ cups shredded smoked Gouda cheese
¾ cup milk
½ cup butter, softened and cut into pieces
½ cup minced fresh chives
¾ teaspoon salt
¼ teaspoon ground white pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lay bacon strips on the foil in an even layer.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain and allow to cool slightly.
  • Place bacon in the preheated oven and bake until browned and crisp, about 15 minutes. Drain bacon slices on paper towels and chop into tiny pieces when cool enough to handle. Leave oven on.
  • Mix cream cheese, Gouda cheese, milk, butter, chives, salt, and pepper together in a bowl. Mix in chopped bacon.
  • Cut each potato lengthwise. Use a small spoon or melon baller to carefully scoop out some (but not all) of the flesh from the centers. Add potato flesh to the cream cheese mixture and mix until creamy.
  • Fill each potato half with 1 rounded tablespoon cream cheese mixture and place on a baking sheet.
  • Bake until filling is hot and looks melted, 20 to 25 minutes.

4 russet potatoes
vegetable oil or vegetable shortening
1 1/2 cups gouda cheese, shredded and divided
2 -3 tablespoons heavy cream
1/2 cup sour cream
2 tablespoons butter
2 tablespoons green onions, thinly sliced
1 tablespoon fresh parsley, minced
4 slices bacon, cooked crisp and crumbled
salt and pepper
minced fresh parsley (to garnish)

Steps:

  • Preheat oven to 400 degrees. Scrub and dry potatoes. Rub surface with a little vegetable oil or vegetable shortening. Prick in several places with fork.
  • Bake in preheated oven for approximately 1 hour or test for doneness by gently squeezing the middle of the potato, using a pot holder. If it gives in easily to your touch, it is done. Remove potatoes to a work surface.
  • Reduce oven temperature to 350 degrees. Cut potatoes in half lengthwise and allow to cool long enough to handle. Scoop out flesh with a spoon, being careful to leave shells intact (about 1/4-inch thick) and place in a bowl. Add 1 cup of the cheese, plus the sour cream, heavy cream, butter, green onion, parsley, salt and pepper to the potato flesh. Mash with potato masher or beat until just smooth with an electric mixer.
  • Fill potato shells with potato mixture; sprinkle with bacon and remaining cheese. Bake at 350 degrees for 20 minutes or until golden. Garnish with minced fresh parsley.
