1/2 medium onion (thinly sliced)
3/4 cup celery (~2 stalks, halved and chopped 1/2 inch pieces)
3 garlic cloves (chopped)
1/2 teaspoon fresh thyme (chopped)
1/4 teaspoon white pepper
1/2 teaspoon salt
2 cups fresh green beans (1 inch cut pieces)
1 cup wild rice blend
1 1/2 cups vegetable broth
1 1/2 cups homemade condensed cream of mushroom soup

Steps:

  • Pre-heat oven to 375°F. Heat a large skillet over medium-high heat with olive oil. Add onion slices and celery; cook for 3-4 minutes until translucent and soft. Add garlic, thyme, white pepper, and salt (additional black pepper as desired). Stir in green beans and wild rice. Remove from heat and stir in vegetable broth and cream of mushroom soup until well combined.
  • Transfer green bean and rice mixture to 9x13 baking dish. Bake for 45-55 minutes, until liquid is absorbed and rice is tender. Let sit for 10 or so minutes before serving to set up. Garnish with fresh parsley and/or crispy onion pieces.

1 pkg. (8 oz.) KRAFT Shredded Three Cheese with a TOUCH OF PHILADELPHIA, divided
1/2 lb. fresh green beans, cut diagonally into 2-inch lengths

Steps:

  • Heat oven to 350ºF.
  • Heat oil in large nonstick skillet on medium heat. Add onions; cook and stir 2 min. Stir in mushrooms; cook 3 to 5 min. or until evenly browned, stirring occasionally.
  • Combine rice, broth, sour cream and 1-1/2 cups cheese in large bowl. Add mushroom mixture; mix well.
  • Spoon rice mixture into 9-inch-square baking dish sprayed with cooking spray; top with beans and remaining cheese. Cover.
  • Bake 35 to 40 min. or until casserole is heated through and broth is absorbed, uncovering for the last 5 min.

2 garlic cloves, minced
3 Tbsps. white onion, chopped

1 tsp. salt, divided
3 1/4 cups chicken broth
1 (18 oz. can) cream of mushroom soup (not condensed)
1 (10 oz. pouch) frozen cut green beans
1 cup Mexican style cheese (Manchego or Oaxaca), shredded

Steps:

  • Amp up this holiday classic with some added Mexican-style cheese and fluffy parboiled grains for a tasty twist you'll be sure to continue making year after year. Step 1
  • Preheat oven to 350°F. Coat an 8×8-inch baking dish with non-stick cooking spray. Step 2
  • In a small skillet, melt butter over medium heat. Stir in pine nuts and sauté, stirring frequently, until pine nuts turn golden brown. Set aside. Step 3
  • Heat oil in a large saucepan over medium-high heat. Add garlic, onion, rosemary and 1/2 teaspoon salt. Sauté, stirring constantly, for 1 minute. Add rice and sauté for 1 to 2 minutes, stirring occasionally. Add broth and bring to a boil. Reduce heat to low. Cover and cook for 28-32 minutes, or until rice is cooked and liquid is absorbed.   • In a large bowl, add rice, soup, green beans and salt. Mix and set aside. Step 5
  • Add rice mixture to prepared dish and sprinkle with cheese. Cover loosely with foil and bake for 15 minutes. Carefully remove foil and bake for 15 more minutes, or until cheese has melted and green beans are tender. Sprinkle with pine nuts. Step 6

1 pound green beans, ends trimmed
1 tablespoon olive oil
8 ounces sliced mushrooms
2 cloves garlic, minced
2 teaspoons chopped fresh thyme leaves
Kosher salt and freshly ground black pepper
1/3 cup brandy or cognac
1/3 cup red wine
1/3 cup chicken broth
Fried Onions, recipe follows

Steps:

  • Cook green beans in boiling salted water until tender, about 3 or 4 minutes. Drain well.
  • Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 3 to 4 minutes. Add the garlic and thyme. Season with salt and freshly ground black pepper, to taste. Cook until garlic is fragrant, about 1 minute.
  • Add brandy or cognac, red wine and chicken broth, bring to a boil. Simmer to blend flavors and reduce sauce, about 2 to 3 minutes. Add green beans to mushroom sauce and toss to coat. Place on a large serving dish, season again with salt and pepper, to taste.
  • Top with fried onions before serving.
  • 2 quarts peanut oil, for frying
  • 2 large red onions, thinly sliced and separated into rings

  • 2 cups arborio rice coating, recipe follows

  • Heat peanut oil in a deep fryer or deep pot to 375 degrees F.
  • Put onion rings in a large bowl. Pour buttermilk over onions and toss to coat. Shake off the excess liquid.
  • Dip onions into Arborio rice coating, covering thoroughly
  • Fry the onions in small batches until crispy, about 2 minutes per batch. Scoop out with a slotted spoon and drain on paper towels. Set aside. Season with salt, to taste.

1 tablespoon EVOO, plus some to drizzle
2 ribs celery, chopped
2 cloves garlic, chopped
1 carrot, chopped

2 3/4 cups chicken stock/poaching liquid from Poached Chicken, recipe follows
1/2 cup fresh parsley leaves, finely chopped, plus more to garnish

1 tablespoon fresh rosemary leaves, finely chopped
2 tablespoons butter, plus more for greasing
1 pound hot or sweet Italian sausage, casing removed
1 cup grated Parmigiano-Reggiano, plus more to pass
Finely chopped red onion, for garnish
1 whole chicken, 4 to 5 pounds
1 teaspoon whole black peppercorns
2 ribs celery, coarsely chopped
2 cloves garlic, crushed
1 large fresh bay leaf
1 carrot, peeled and coarsely chopped
1 lemon, sliced
1 onion, peeled and quartered
Herb bundle of parsley, rosemary and thyme

Steps:

  • Soak the beans 4 hours or overnight.
  • Rinse the beans after soaking. Place the rinsed beans in a pot with 1 tablespoon of the EVOO, the celery, garlic onions and some salt and pepper. Add enough water to cover, about 1 quart, and bring to a low boil. Cook until tender, adding a bit more water if necessary, about 30 minutes. Puree half of the mixture, reserve.
  • Meanwhile heat the stock to a boil, then add the rice and stir. Cover and reduce the heat to low. Simmer for 16 minutes, then stir in the herbs and butter. Cook 1 minute more and remove from the heat, fluff the rice with a fork.
  • Brown and crumble the sausage in a skillet with a drizzle of EVOO over medium-high heat.
  • Grease a large casserole dish. Combine the rice with half of the cheese, the pureed beans, whole beans, vegetables and sausage. Top with remaining cheese. Cool and cover, then store in the fridge until ready to eat.
  • Preheat an oven to 350 degrees F. Bring the casserole to room temperature.
  • Bake until heated through, top with an extra drizzle of oil, the reserved parsley and raw onions before serving. Pass the cheese at the table.
  • Place the chicken in a large stockpot. Add the peppercorns, celery, garlic, bay leaf, carrot, lemon, onions and the herb bundle tied with string. Sprinkle with salt. Cover the chicken with water and bring to a boil. Reduce the heat to low, a rolling simmer. Simmer 1 hour to 1 hour 15 minutes. Then cool chicken in its stock. Strain the stock, discarding the vegetables. Remove the chicken in large pieces from skin and bones. Reserve the meat for another use.

1 1/2 cups instant brown rice, dry
3 (5 ounce) cans tuna in water, drained
2 (14 1/2 ounce) cans del monte seasoned green beans (with onions, red peppers & garlic)
1 (14 1/2 ounce) can health valley cream of mushroom soup (heat & serve, not condensed. Other brands usually add gluten, which is fine if you're not on a glute)
3/4 cup milk
1/2 cup shredded cheddar cheese

Steps:
