Crisp-tender green beans are tossed with shallot, toasted pine nuts and a simple dressing of lemon and olive oil.

1 shallot, thinly sliced
2 tablespoons extra-virgin olive oil, plus more for drizzling
Juice and zest of 1/2 a lemon
2 tablespoons toasted pine nuts

Steps:

  • Bring a large pot of salted water to a boil. Add the green beans and cook until crisp-tender, 4 to 5 minutes, add the shallot in the last 30 seconds of cooking time. Drain well and transfer to a large bowl.
  • Add the olive oil, lemon juice, zest and pine nuts and toss well. Season with salt and pepper.

1/3 lb fresh green beans (ends trimmed)
1 tablespoon butter
1 tablespoon finely minced shallot
1 tablespoon pine nuts
1 teaspoon fresh lemon juice
salt
pepper

Steps:

  • Blanch green beans in salted boiling water. Drain and pat dry.
  • In a large skillet melt butter over medium to medium high heat.
  • Cook shallots approximately 1 minute. (Stir often to prevent burning).
  • Add pine nuts to toast for an additional minute.
  • Add green beans and toss (just enough to warm and coat.).
  • Add lemon juice, salt, and pepper. I like to add some fresh lemon peel as well. Gives it a great additional taste.
  • Toss well to combine all ingredients.
