A meatless main dish or a tasty side to serve with your grilled meats, this lima bean, corn and quinoa combo is easy to make with frozen vegetables.

3/4 cup uncooked quinoa
1 1/2 cups water
1 box (9 oz) frozen baby lima beans
1 box (10 oz) frozen corn & butter sauce
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium plum (Roma) tomatoes, seeded, chopped
Sliced green onions, if desired

Steps:

  • In fine strainer, rinse quinoa under cold water 1 minute; drain well. In 2-quart saucepan, heat quinoa and water to boiling. Reduce heat to low; cover and simmer 12 to 15 minutes or until tender and liquid is absorbed.
  • Meanwhile, cook lima beans as directed on box; drain. Cook corn as directed on box. Pour drained lima beans and corn & butter sauce into 10-inch skillet. Add paprika, salt and pepper; mix well. Stir in cooked quinoa and tomato.
  • Cook over medium heat, stirring frequently, 1 to 2 minutes or until mixture is thoroughly heated. Sprinkle with green onions.

This may be America's oldest vegetable recipe, coming from a Narragansett Indian word, 'msickquatash,' which, according to the Merriam-Webster Dictionary, means 'boiled corn kernels.' When most of you hear the word succotash, you probably don't think of a delicious vegetable side dish, you probably think of the catchphrase, 'Sufferin' succotash!' But succotash really is a great and very underrated recipe.

1 tablespoon olive oil
1 ½ teaspoons butter
½ yellow onion, diced
salt and freshly ground black pepper to taste
½ red bell pepper, diced
1 jalapeno pepper, sliced
3 cloves garlic, minced
½ cup diced tomatoes
½ teaspoon ground cumin
1 pinch cayenne pepper
2 green zucchinis, cut into cubes
4 ounces fresh green beans, cut into 1/2-inch pieces
¼ cup water
1 ½ cups corn
1 cup frozen baby lima beans, thawed

Steps:

  • Heat olive oil and butter in a skillet over medium heat. Cook and stir onion with a pinch of salt in hot butter and oil until onion is softened and slightly golden, 6 to 7 minutes. Add red bell pepper, jalapeno, and garlic; cook and stir until peppers are fragrant and softened, 3 to 4 minutes.
  • Stir tomatoes, cumin, black pepper, and cayenne pepper into onion mixture; cook and stir until heated through, 1 to 3 minutes. Add zucchini, green beans, water, and a pinch of salt; cook until zucchini are almost tender, 5 to 6 minutes. Stir corn and lima beans into zucchini mixture until heated through, about 3 to 5 minutes more. Season with salt.

This a recipe from Serious Eats that DH and I love. It can be used a main dish or a side dish with grilled fish or chicken. It uses Green Giant frozen baby limas and corn.

3/4 cup quinoa, uncooked
1 1/2 cups water
1 (9 ounce) box green giant baby lima beans
1 (10 ounce) box green giant frozen corn, in butter sauce
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium plum tomatoes, seeded and chopped
green onion, sliced (optional)

Steps:

  • In a fine sieve rinse quinoa under cold running for 1 minute.
  • Drain well.
  • In a 2 quart saucepan heat quinoa and water to boiling.
  • Reduce heat to low and cover and simmer for 12-14 minutes or until tender and liquid is absorbed.
  • Meanwhile, cook lima beans as directed on package and drain.
  • Cook corn as directed on package, do not drain/.
  • Place corn and lima beans into a 10 inch skillet.
  • Add paprika, salt and pepper and mix well.
  • Stir in cooked quinoa and tomatoes.
  • Cook over medium heat: stirring frequently 1-2 minutes or until thoroughly heated.
  • Sprinkle with sliced green onions, optional.

8 ounces green beans, trimmed
2 tablespoons olive oil
1 cup frozen lima beans, thawed
1 cup fresh corn kernels (cut from 2 medium ears)
3/4 cup diced red bell pepper
2 tablespoons (1/4 stick) butter
1/2 teaspoon Old Bay seasoning

Steps:

  • Blanch green beans until crisp-tender, about 4 minutes. Transfer to bowl of ice water to cool; drain.
  • Heat oil in large skillet over medium-high heat. Add green beans and sauté 1 minute. Add lima beans, corn, and bell pepper. Sauté until vegetables are crisp-tender, about 4 minutes. Mix in butter and Old Bay; season to taste with salt and pepper.

I had to come up with this quick. Every Thanksgiving my mom serves Green Giant Niblets corn in butter sauce and I promised I would pick it up for her and bring it on Thanksgiving day. When I went to the store, they were sold out! I made this recipe and brought it already prepared to Thanksgiving dinner. Nobody was the wiser! I saved some money too, because I used store brand corn! This recipe makes a lot...you may want to half it.

2 (16 ounce) bags frozen corn (yellow "or" shoepeg white, any brand)
2 teaspoons salt
1/2 cup butter, cut up
1 teaspoon sugar
1 cup water
1 1/2 teaspoons cornstarch

Steps:

  • Add corn to large sauce pan along with all ingredients except water and cornstarch.
  • Stir corn mixture over medium heat until butter is melted.
  • Combine water and cornstarch and stir until cornstarch is disolved.
  • Slowly add water to corn in sauce pan, stirring constantly.
  • Reduce heat to simmer and stir until sauce thickens.
  • Let simmer, stirring occasionally, until corn is tender, about 10 minutes.

1 cup dried gigante, corona, or large lima beans, soaked overnight, drained, or two 15-ounce cans butter beans, drained
Kosher salt
2 teaspoons vegetable oil
4 slices bacon, cut into 1/4" pieces
1 medium onion, chopped
2 garlic cloves, thinly sliced
1 celery stalk, chopped
6 cups corn kernels (from about 6 ears)
1 cup heavy cream
Freshly ground black pepper
Fresh thyme leaves (for serving)

Steps:

  • If using dried beans, place in a large pot and add water to cover by 2". Bring to a boil, reduce heat, and simmer, stirring occasionally and adding more water as needed, until beans are tender, 1 1/2-2 hours; season with salt. Let cool; drain.
  • Heat oil in a large skillet over medium heat; add bacon and cook, stirring often, until brown and crisp, 8-10 minutes. Add onion, and garlic and cook, stirring often, until soft, 5-8 minutes. Add celery and corn and cook, stirring often, until soft, about 4 minutes.
  • Add cream and bring to a boil; reduce heat and simmer, stirring often, until reduced by half, about 3 minutes. Add beans and cook until warmed through, about 2 minutes; season with salt and pepper. Top with thyme.
