BRUSCHETTA WITH GREENS
Steps:
- Preheat a grill or stove-top grill pan.
- Place Italian country loaf on a work surface and slice 8 thick slices. Place bread on a grill pan and grill until the slices are well browned on both sides.
- In a large pot of boiling water, blanch the greens and then drain on paper towels. Set aside.
- Remove the bread slices from the grill. Cut 1 garlic bulb in half and rub 1/2 over both sides of each bread slice.
- Once the blanched greens are dry, place on top of the bread slices. Generously drizzle each slice with olive oil and a dash of gray salt.
GREEN TOMATO BRUSCHETTA

- Wash the tomatoes, but don't dry them. Slice them thinly, collecting all the juice in a bowl as you slice. Arrange the sliced tomatoes in the bowl in layers, sprinkling each layer with coarse sea salt. Place a large plate or bowl directly on top of the tomatoes and put a weight on the plate. Leave the tomatoes to marinate for 5 hours. Drain thoroughly. Add white wine vinegar to cover the tomatoes and leave for another 4 hours, then drain again. Layer the tomatoes into a sterilized jar, sprinkling each layer with small amounts of garlic, fennel seeds and oregano and a few drops of balsamic vinegar. Distribute the chili peppers here and there throughout the jar. Pour extra virgin olive oil over the tomatoes, shaking the jar to remove any air pockets. Cover tightly and store in a cool place. These tomatoes can be eaten after 5 days but will last for 5 month.
TOMATO BRUSCHETTA
This recipe has been modified slightly over tim, but is always a winner, whether for an appetizer or main dish. It even works with winter store-bought tomatoes. The vinegar and basil bring out the flavors.

Steps:
- Combine tomatoes, bell pepper, onion, balsamic vinegar, 1/4 cup olive oil, basil, and garlic; let tomato mixture rest for 15 to 30 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Arrange French bread slices on a large baking sheet; drizzle with 1/4 cup olive oil.
- Toast bread in preheated oven until lightly browned, about 1 minute on each side. Top bread slices with tomato mixture using a slotted spoon, allowing excess liquid to drain. Return bread to baking sheet and sprinkle with mozzarella cheese.
- Broil in preheated oven until cheese melts, about 3 minutes. Serve immediately.

- Preheat the oven to 350 degrees F.
- Add the tomatoes, garlic, 3 tablespoons extra-virgin olive oil, red pepper flakes, basil and balsamic vinegar to a bowl. Season with salt and pepper. Let sit at room temperature while you toast the bread.
- Slice bread and add to a baking sheet in a single layer. Toast in the oven until golden brown about 5 minutes. Top the bread with tomatoes and drizzle with remaining extra-virgin olive oil right before serving.
HEIRLOOM TOMATO BRUSCHETTA
Inspired by the Julie and Julia motion picture, here is a little twist on one of the most the delicious-looking recipes to grace the movie screen! Unless you and your guests are prepared to eat the bruschetta immediately, I suggest keeping the heirloom tomato mixture separate from the bread because it will become soggy. Serve the tomato mixture in one bowl and the bread on another serving platter. Be prepared to get a little messy!

- Preheat grill or broiler to high. Combine tomatoes, oil, 1 tablespoon salt, and pepper to taste in a large bowl.
- Toast cut side of baguette halves on grill or under broiler 1 to 2 minutes. While still hot, lightly rub cut surface with garlic. - In a medium mixing bowl combine diced tomatoes, red onion, minced garlic, basil, olive oil, balsamic vinegar, and salt. Toss until all ingredients are combined. Cover and set aside until assembling the dish.
- In a medium nonstick pot, combine balsamic vinegar and brown sugar. Bring to a boil. Reduce to a simmer and cook stirring occasionally for 10-15 minutes until the mixture has reduced by half. The glaze should stick to the back of a spoon when it is done.
- Slice the green tomatoes into ¼" slices. Arrange the slices on a couple paper towel lined plates. Sprinkle with salt and allow to sit for at least 10 minutes to help reduce some of the moisture. Pat tomatoes dry with another paper towel.
- Arrange or two fried green tomato slices on a plate. Top each tomato with the reserved bruschetta. Drizzle each dish with a small amount of the sweet balsamic glaze.
