Grilled Vegetable Salad image

Choose your favorites or fresh in-season produce to create this delicious grilled vegetable salad for a healthy and hearty meal.

2 small zucchini sliced into wedges
2 small yellow squash sliced into wedges
1/2 large onion cut into rings
2 ears of corn on the cob
1 orange pepper cut into wedges
2 plum tomatoes cut in half
2 tablespoons of oil oil
salt and pepper to taste
1/2 t red pepper flakes (optional)
2 ounces of goat cheese
2 heads of romaine lettuce

Steps:

  • Toss vegetables with olive oil and salt and pepper.
  • Place on a large tray to take out to the grill.
  • Set all the vegetables on a hot grill.
  • Cook for about 5 minutes per side or until the vegetable feels soft and has good grill marks.
  • Remove vegetables from the grill.
  • Cut kernels off the corn cobs.
  • Chop all other vegetables into bite sized pieces.
  • Mix all grilled vegetables gently into a bowl. Add in red pepper flakes if desired.
  • Slice romaine heads in half making four bases.
  • Spoon vegetables over the romaine wedges.
  • Add crumbled goat cheese on top.
  • Serve with your favorite dressing on the side such as a good balsamic vinaigrette. However, you might just like it without dressing.

1/2 bunch asparagus, trimmed and cut into bite-size pieces
1 pint cherry tomatoes
1 medium red onion, cut into 1/2-inch rings
1 yellow bell pepper, quartered, seeds and ribs removed
1 red bell pepper, quartered, seeds and ribs removed
1/4 cup extra-virgin olive oil, for brushing
Salt and freshly ground black pepper
1/4 cup fresh basil leaves
1/4 pound feta cheese
1 medium clove garlic, chopped
1 tablespoon balsamic vinegar
3 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Preheat grill to medium.
  • In a large bowl, toss the vegetables with olive oil and season with salt and pepper. Grill the vegetables, turning occasionally, until charred and tender, about 5 to 7 minutes. Remove to a platter. Sprinkle with basil and feta.
  • In a small bowl, mix garlic, balsamic vinegar, and olive oil. Season with salt and pepper and drizzle over vegetables.

8 ounces small cremini mushrooms, stems trimmed, halved
1 medium zucchini, cut into 1/2-inch-thick half-moons
1 medium squash, cut into 1/2-inch-thick half-moons
1 orange bell pepper cut into 1/2-inch chunks
1 green bell pepper, cut into 1-inch chunks
1 small red onion, halved, then cut into sixths
1 tablespoon Italian seasoning
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 to 1 teaspoon crushed red pepper flakes, or to taste
1/4 cup plus 3 tablespoons olive oil
2 lemons, zested and juiced
6 ounces crumbled feta
1/4 cup fresh oregano
1/4 cup fresh mint
1/4 cup fresh parsley

Steps:

  • Thread the mushrooms, zucchini, squash, orange bell pepper, green bell pepper and onions onto separate skewers.
  • Mix the Italian seasoning, salt, black pepper, red pepper flakes and 1/4 cup of the olive oil in a small bowl. Brush the kebabs all over with the oil mix.
  • Preheat a grill pan over medium-high heat. When it is hot, grill the kebabs, turning as needed, until grill marks form and the veggies have softened, 8 to 10 minutes total.
  • Using a fork, push the hot vegetables off the skewers onto a serving platter. Drizzle over the lemon juice and remaining 3 tablespoons olive oil. Toss to combine. Sprinkle over the crumbled feta and lemon zest. Top with the oregano, mint and parsley. The salad can be served warm or chilled.

1 shallot, minced
3 tablespoons red wine vinegar
1 tablespoon white balsamic vinegar
1 clove garlic, minced
1 tablespoon fresh lemon juice
1 tablespoon Dijon mustard

1 tablespoon chopped fresh chives
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh dill
½ cup extra-virgin olive oil, or more to taste
10 fresh asparagus spears, trimmed to 5 inches
2 ears corn, husked
2 zucchini, halved lengthwise
2 yellow squash, halved lengthwise
1 bunch green onions, tops trimmed a few inches

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Whisk shallot, red wine vinegar, white balsamic vinegar, garlic, lemon juice, Dijon mustard, parsley, chives, cilantro, and dill together in a large bowl. Slowly stream olive oil into the mixture while whisking vigorously until the oil is incorporated into a smooth and creamy dressing.
  • Arrange asparagus, corn, zucchini, yellow squash, green onions, bell pepper, and red onion onto baking sheets. Brush olive oil onto all the vegetables to coat; season with salt and pepper.
  • Cook vegetables directly on preheated grill, turning frequently, until slightly charred and just tender, about 5 minutes for green onions, 8 minutes for asparagus, zucchini, yellow squash, bell pepper, and red onion, and 10 minutes for corn. Remove vegetables to the baking sheets used for preparation and cool.
  • Cut asparagus, green onions, zucchini, yellow squash, and red bell pepper crosswise into 1-inch pieces and put into a large bowl. Quarter red onion slices; add to bowl. Cut corn kernels from cobs; add to bowl. Let vegetables cool to room temperature.
  • Drizzle vinaigrette over the vegetable mixture and toss to coat.

Base this salad on your favorite produce available at a local market for ultimate freshness.

8 ounces arugula or other greens
Assorted vegetables, such as yellow squash, eggplant, zucchini, red and green bell peppers, corn on the cob, radicchio, and bunches of cherry tomatoes on the vine
Extra-virgin olive oil
Coarse salt and freshly ground pepper

Steps:

  • Heat a grill or grill pan. Wash greens, and let excess water drain off. Place in a plastic bag lined with paper towels until ready to use.
  • Cut vegetables into sizes that are manageable for the grill. For example, slice yellow squash and eggplant in half lengthwise, leaving small zucchini whole; cut bell peppers into quarters, and discard ribs and seeds; cut corn cobs in half crosswise; slice radicchio into wedges; and leave bunches of cherry tomatoes attached to the vine. Brush vegetables with olive oil, and grill until cooked through, turning as needed.
  • While vegetables are cooking, transfer greens to a large serving dish. Vegetables will cook at different times, so as they are done, remove them from the grill and cut into smaller pieces. Add them to the bowl of greens, tossing well. The heat of the grilled vegetables will wilt the greens slightly. Season with salt and pepper, and serve.

1/4 cup virgin coconut oil
1 lb fresh asparagus
2 zucchini, cut lengthwise into strips
1 medium eggplant, cut lengthwise
3 bell peppers, de-seeded with the tops and bottoms removed and opened into one long piece
2 sliced red onions
5 ounces organic mixed greens
1/2 cup goat cheese, crumbled
1/2 cup sunflower seeds
1/4 cup parmesan cheese, grated
1/4 cup extra virgin olive oil
5 garlic cloves, minced
2 -3 tablespoons balsamic vinegar
salt & fresh ground pepper

Steps:

  • Brush and coat your vegetables with Coconut oil.
  • Use an indoor grill, grill pan, or outdoor grill to grill your veggies.
  • Place veggies on grill, and watch their progress because peppers take the longest and asparagus the shortest amount of time.
  • Remove the veggies as they finish and set aside to cool a bit.
  • Remove the charred skin from your peppers.
  • Cut all veggies into thin bite sized pieces or strips.
  • Dressing:.
  • In a bowl off to the side, mix together your olive oil, vinegar, garlic, salt and pepper.
  • Salad:.
  • In a large bowl mix veggies, cheese, seeds, dressing, all of the ingredients, chop and mix thoroughly.
  • Serve and enjoy!

6 slices country-style-French bread
Additional olive oil
10 cups mixed baby greens
4 large tomatoes, sliced
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh chives or green onions
1 tablespoon chopped fresh majoram
3/4 cup chilled fresh mild goat cheese (such as Montrachet), crumbled (about 3 ounces)
1/2 cup freshly grated Pecorino Romano cheese (about 2 ounces)

Steps:

  • Prepare barbeque (medium-high heat). Whisk 3/4 cup oil and vinegar in medium bowl to blend. Place onion, beets, zucchini, eggplants, and red bell pepper on baking sheet. Brush both sides with some of vinaigrette. Sprinkle vegetables with salt and pepper. Grill vegetables until just cooked through, about 10 minutes per side for beets, 6 minutes per side for onion and 4 minutes per side for zucchini, eggplant, and peppers.
