20 large garlic cloves, unpeeled
1/4 cup dry white wine
2 cups orange juice
60 medium uncooked shrimp (about 1 3/4 pounds), peeled, deveined, shells reserved
12 6-inch-long wooden skewers, soaked in water, drained
3/4 cup chopped fresh Italian parsley
Nonstick vegetable oil spray
Risotto-Style Barley with Spring Greens

Steps:

  • Preheat oven to 325°F. Place garlic and wine in center of foil sheet. Sprinkle with salt and pepper. Enclose with foil; crimp edges to seal. Bake until garlic is very tender, about 50 minutes. Squeeze garlic between fingers to release cloves. Transfer garlic and any cooking liquid to blender.
  • Meanwhile, combine orange juice and reserved shrimp shells in heavy medium saucepan. Boil until liquid is reduced to 3/4 cup, about 10 minutes. Strain liquid into blender with garlic; discard shrimp shells. Puree until mixture is smooth. Cool marinade completely. Mix shrimp and marinade in bowl. Cover; chill 1 1/2 hours. Drain marinade.
  • Thread 5 shrimp onto each skewer. Place parsley in shallow dish. Coat 1 side of each shrimp skewer with parsley.
  • Spray large nonstick skillet with nonstick spray. Place skillet over medium-high heat. Add 6 shrimp skewers to skillet, parsley side down; cook until shrimp are pink and just cooked through, about 1 1/2 minutes per side. Wipe out skillet, then spray with more nonstick spray. Repeat with remaining 6 shrimp skewers.
  • Spoon barley with greens onto plates. Top with shrimp and serve.

4 navel oranges
1 pound uncooked peeled deveined large shrimp, thawed if frozen
1 small red onion, cut in half
1 package (10 ounces) fresh spinach
3/4 cup orange juice
1/3 cup light sesame or olive oil
1/2 teaspoon ground ginger
1 teaspoon garlic salt
1/4 teaspoon pepper
4 medium green onions, chopped (1/4 cup)

Steps:

  • Cut 2 of the oranges into 8 wedges each. Peel and section remaining 2 oranges; reserve sections. Mix all Orange Marinade and Dressing ingredients; reserve half for dressing. In shallow glass or plastic dish or heavy-duty resealable food-storage plastic bag, place shrimp and remaining marinade. Cover dish or seal bag and refrigerate 15 minutes.
  • Heat coals or gas grill for direct heat. Cut one onion half into wedges; separate into pieces. Thinly slice remaining onion half; separate into pieces and set aside. Remove shrimp from marinade; reserve marinade for basting. Thread shrimp, orange wedges and onion wedges alternately on each of eight 8-inch or four 15-inch metal skewers, leaving space between each piece.
  • Grill kabobs uncovered 4 to 6 inches from medium heat 6 to 8 minutes, turning frequently and brushing with reserved basting marinade, until shrimp are pink and firm. Discard any remaining basting marinade.
  • In large bowl, gently toss spinach, reserved orange sections, reserved thinly sliced onion and reserved dressing. Serve with kabobs.

wooden skewer
1 cup olive oil
4 -5 tablespoons chopped fresh parsley
1/4 cup fresh lemon juice (or the juice of 1 lemon)
2 tablespoons louisinana hot sauce
1 -2 tablespoon fresh minced garlic (or to taste)
1 tablespoon tomato paste
3 teaspoons dried oregano
1 1/2 teaspoons seasoning salt
1/2 teaspoon black pepper
1 pinch cayenne pepper

Steps:

  • In a bowl whisk together all marinade ingredients until well blended (remove 3-4 tablespoons to brush on the shrimp while cooking).
  • Pour the marinade into a large resealable plastic bag; add in the shrimp, seal bag and toss to coat the marinade with the shrimp.
  • Refrigerate for 2 hours.
  • Soak the wooden skewers in cold water 30 minutes before threading.
  • Set grill heat to medium-low.
  • Thread the shrimp onto the skewers piercing once near the tail and once near the head; discard the marinade.
  • Grease the grill grate.
  • Cook shrimp for about 5 minutes per side or until opaque, brushing frequently with the reserved marinade.

3/4 cup minced onion (from 1 small)
1 tablespoon minced garlic (from 3 cloves)
1 tablespoon minced fresh thyme leaves

1 tablespoon distilled white vinegar

Steps:

  • Heat oil in a small saucepan over medium-high. Add onion, garlic, and thyme; season with salt. Cook until onion is translucent, about 3 minutes. Add orange concentrate and brown sugar. Bring to a boil, then cook until syrupy and reduced to a scant 1 cup, 8 to 10 minutes. Add vinegar and jalapeños; cook 1 minute. Let cool 10 minutes. Set aside 1/4 cup glaze for serving.
  • If using wooden skewers, first soak in water 30 minutes, then drain (to prevent burning). Lay 6 shrimp side by side; slide a skewer through head ends to secure together. Thread a second skewer through tail ends. Spread shrimp slightly so there are small gaps between them. Repeat with remaining shrimp.
  • Preheat grill to high; brush grates with oil. Grill bread, flipping once, just until lightly charred and crisp in places, 1 to 2 minutes total. Transfer to a platter or board; brush with oil.
  • Brush shrimp with half of remaining glaze and grill, turning once, until opaque and almost cooked through, about 3 minutes. Brush with more glaze, turning a few times to caramelize, until just cooked through, about 1 minute more. Remove from grill and brush with some of reserved glaze. 1 cup shallots, sliced
3 cloves garlic, rough chopped
2 cans piquillo peppers, drained (roasted red peppers can be substituted)
2 cups orange juice
1 pound tenderized baby octopus, blanched and cleaned
1 pound medium sized shrimp, peeled and de-veined
1 cup extra-virgin olive oil
5 cloves garlic, finely chopped
4 sprigs fresh oregano leaves, chopped
Salt and freshly ground black pepper
1 red onion, thinly sliced
Juice of 2 lemons
2 pounds watercress, stemmed and well washed
2 cups cooked chick peas, fried until crispy

Steps:

  • Preheat a grill to 500 degrees F.
  • Place the olive oil in a medium heated shallow pot. Add the shallots and garlic and cook until golden brown. Add the piquillo peppers and orange juice and simmer for about 30 minutes. Remove form the heat and puree in a blender. Season, to taste.
  • Toss the octopus and shrimp with the extra-virgin olive oil, garlic, oregano and season with salt and pepper. Place on the grill and cook until charred on the outside. Place in a mixing bowl and toss with the sliced red onions, lemon juice, water cress and Piquillo Pepper Fondue. Season, to taste, and finish with the crispy chick peas.

1 tablespoon seeded and chopped pickled habanero chile peppers (or use 1 tablespoon habanero hot sauce)
2 cloves garlic, finely chopped
2 tablespoons chopped fresh cilantro
1 tablespoon dijon mustard
Kosher salt and freshly ground pepper
16 jumbo shrimp, peeled and deveined (about 1 pound)

Steps:

  • Soak eight 8-inch wooden skewers in cold water for at least 15 minutes and up to 1 hour. Meanwhile, make the mojo: Combine the orange juice, 1/4 cup olive oil, the pickled habaneros, half of the garlic, the cilantro, mustard, and salt and pepper to taste in a medium bowl; whisk well and set aside.
  • Combine the remaining garlic and 1/4 cup olive oil in a small bowl. Preheat a grill or grill pan over medium-high heat. Skewer the shrimp and brush with some of the oil-garlic mixture on both sides; season with salt and pepper.
