Grilled Pound Cake with Pineapple

Yield Makes 4 servings

Number Of Ingredients 8

3/4 cup heavy (whipping) cream
3 tablespoons confectioners' sugar
1/4 teaspoon ground cinnamon
1 tablespoon tequila (preferably gold)
8 slices pound cake (each 1/2 inch thick)
2 to 3 tablespoons unsalted butter, melted
Pineapple "Salsa"
4 fresh mint sprigs, for garnish

Steps:

  • 1. Place the cream in a chilled mixer bowl or in a large metal bowl. Beat with a mixer until soft peaks form, starting on the slow speed and gradually increasing the speed to high. The total beating time will be 6 to 8 minutes. When soft peaks have formed, add the confectioners' sugar, cinnamon, and tequila. Continue beating the cream until stiff peaks form, about 2 minutes longer. Don't overbeat the cream or it will start to turn to butter. The tequila whipped cream can be made several hours ahead. Refrigerate it, covered, until ready to serve.
  • 2. Lightly brush each slice of pound cake with butter on both sides. Cook the pound cake, following the instructions below for any of the grills, until lightly toasted. If desired, rotate each slice a quarter turn after 1 minute to create a handsome crosshatch of grill marks. You may need to cook the pound cake slices in more than one batch.
  • 3. Place the pound cake slices on plates. Top each serving with a spoonful of Pineapple "Salsa" and a dollop of tequila whipped cream, garnish with a sprig of mint, and serve at once.
  • CONTACT GRILL:
  • Preheat the grill; if your contact grill has a temperature control, preheat the grill to high. Place the drip pan under the front of the grill. When ready to cook, lightly oil the grill surface. Place the slices of pound cake on the hot grill, then close the lid. The pound cake will be done after cooking 2 to 4 minutes.
  • GRILL PAN:
  • Place the grill pan on the stove and preheat it to medium-high over medium heat. When the grill pan is hot a drop of water will skitter in the pan. When ready to cook, lightly oil the ridges of the grill pan. Place the slices of pound cake in the hot grill pan. They will be done after cooking 2 to 4 minutes per side.
  • BUILT-IN GRILL:
  • Preheat the grill to high, then, if it does not have a nonstick surface, brush and oil the grill grate. Place the pound cake slices on the hot grate. They will be done after cooking 2 to 4 minutes per side.
  • FREESTANDING GRILL:
  • Preheat the grill to high; there's no need to oil the grate. Place the pound cake slices on the hot grill. They will be done after cooking 3 to 5 minutes per side.
  • FIREPLACE GRILL:
  • Rake red hot embers under the gridiron and preheat it for 3 to 5 minutes; you want a hot, 2 to 3 Mississippi fire. When ready to cook, brush and oil the gridiron. Place the pound cake slices on the hot grate. They will be done after cooking 2 to 4 minutes per side.

Time 1h5m

Yield 8 servings

Number Of Ingredients 8

Cooking spray
1 (8-ounce) can pineapple slices- drained, juice reserved
1 (16-ounce) box pound cake mix
2 eggs
1 (6-ounce) can pineapple juice
1/4 cup water
1/2 cup brown sugar
2 tablespoons butter

Steps:

  • Preheat oven to 350 degrees F. Spray a 9 by 5-inch loaf pan with cooking spray and set aside.
  • Remove 3 pineapple slices from the can and reserve the juice and set aside. Chop remaining pineapple slices into small pieces and set aside.
  • In a large bowl combine the cake mix, eggs, and 1 can of pineapple juice. Blend with an electric mixer on low speed for 30 seconds. Scrape down the sides of the bowl and beat for 3 minutes on medium speed. Stir in the chopped pineapple and combine well. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick, inserted into the center of the cake, comes out clean, about 45 to 50 minutes. Remove and cool completely.
  • In a small pot over medium heat combine the reserved pineapple juice and 1/4 cup of water. Add the brown sugar and butter and bring to a simmer. Add the remaining 3 pineapple rings and saute for 4 minutes or until the sauce thickens slightly. Remove from the heat. Reserve.
  • To serve, remove the pound cake from the pan and transfer it to a serving plate. Arrange pineapple rings on top and secure with toothpicks, if necessary. Pour the sauce over the cake and serve.

Time 12h30m

Yield 6 to 8 servings

Number Of Ingredients 7

2 pints fresh local blackberries
2 tablespoons baker's sugar, plus 1/2 cup, plus more for cream
1 lemon, zested and juiced
1/8 teaspoon ground cinnamon, plus more for cream
1 loaf pound cake
1 pint whipping cream
3 to 4 sprigs mint, leaves chiffonade

Steps:

  • Preheat a grill to medium.
  • Cut the pound cake into 8 even rectangular slices. Cut a V-shape out of 1 side of each section and grill the slices over medium heat until grill marks appear.

  • Whip the cream in a small bowl with a hand mixer, and add some sugar and cinnamon, to taste. Arrange the pound cake on a serving platter. GRILLED PINEAPPLE WITH POUND CAKE AND RUM-CARAMEL SAUCE

Grilled Pineapple with Pound Cake and Rum-Caramel Sauce image

Provided by Bobby Flay

Categories     dessert

Time 35m

Yield 4 to 8 servings

Number Of Ingredients 9

2 tablespoons unsalted butter
3/4 cup dark brown sugar
2 tablespoons dark rum
1/2 cup heavy cream
1 small pineapple, peeled and cut in 1/2
1/4 cup canola oil
1 store-bought pound cake, cut into 1/2-inch thick slices
Vanilla ice cream, for serving
Maraschino cherries, optional

Steps:

  • Melt the butter in a small saucepan over high heat, add the brown sugar and rum and cook, whisking until the sugar has melted and the mixture is smooth. Whisk in the heavy cream and cook until heated through and slightly thickened. Transfer the mixture to a bowl, keep warm.
  • Heat the grill to high.
  • Brush the pineapple on both sides with the oil and place on the grill. Grill until golden brown and caramelized on both sides, about 6 minutes. Remove from the grill, stack the slices and cut into chunks. While the pineapple is grilling, place the pound cake on the grill until lightly golden brown on both sides, about 20 seconds on each side. Remove the pineapple from the grill and, when cool enough to handle, either slice or cut into chunks.
  • Top each piece of pound cake with some of the pineapple and drizzle with the caramel-rum sauce. Top with more pound cake, vanilla ice cream and a maraschino cherry, if desired.

GRILLED POUND CAKE WITH DRUNKEN BERRIES AND SYLLABUB

Grilled Pound Cake with Drunken Berries and Syllabub image

Provided by Dean McDermott

Categories     dessert

Time 1h45m

Yield about 8 servings

Number Of Ingredients 20

1 cup butter, plus more for the pan
2 cups granulated sugar
2 teaspoons vanilla extract
6 eggs
2 cups all-purpose flour, plus more for the pan
1 1/2 cups heavy cream
1/2 cup granulated sugar
1/4 cup sherry
1 tablespoon brandy
1 teaspoon vanilla extract
Zest from half a lemon
1 cup blueberries
1 cup raspberries
1 cup strawberries
1 1/2 cups red wine
1/4 cup granulated sugar
1/4 cup brown sugar
1/4 cup melted butter
Zest from half a lemon
Fresh mint leaves, finely chopped

Steps:

  • For the pound cake: Preheat the oven to 325 degrees F. In a large bowl, cream the butter and granulated sugar. Blend until the grains of sugar are no longer visible. Beat in the vanilla. Then add the eggs and flour alternately. Grease and flour 2 loaf pans or a 9- by 9-inch cake pan. Pour the batter into the pan(s) and bake for 1 hour. Then remove and let cool on a wire rack.
  • For the syllabub: In a large bowl, combine the heavy cream and granulated sugar. Whip with a whisk or hand mixer until the cream is whipped and fluffy. Slowly fold in the sherry, brandy, vanilla extract and lemon zest. Place the bowl in the refrigerator to set up.
  • For the berries: In a large bowl, combine the berries and wine. Add the granulated sugar and mix. Cover and let sit to bring to room temperature. (You can put it in the refrigerator, I just happen to like the berries at room temp. Whatever floats your boat.)
  • To serve: Preheat a grill, grill pan or broiler. Cut the pound cake into 1/2-inch thick slices. Stir the brown sugar into the warm melted butter. Brush both sides of the pound cake slices with the melted butter and brown sugar.
  • Place the slices on the hot grill or under the broiler. If using a grill, get grill marks on both sides. If using a broiler, get some golden brown color on both sides.
  • Cut the pound cake slices on a diagonal or in strips, and arrange in a creative way in the center of a dessert plate. Try and get some height. With a slotted spoon, ladle a good scoop of berries over the pound cake. Add a good dollop of syllabub on top of the berries, and dust with lemon zest and mint.

GRILLED POUND CAKE SUNDAES

Grilled Pound Cake Sundaes image

Grilled pound cake with pineapple, fruit, and ice cream. A good no bake recipe for hot weather. If fresh pineapple is not available use canned pineapple slices, drained, 2 per serving. Substitute any fresh fruits in season. For a no-grill option, broil pound cake and pineapple separately on a rack set 6" from heat source until lightly browned, turning once, 1 or 2 minutes per side. Instead of cooking spray, use additional melted butter to coat pound cake slices. The original recipe from Woman's World magazine called for serving with caramel topping and dulce de leche ice cream. I skipped the caramel topping and served it with French vanilla ice cream.

PINEAPPLE-TEQUILA GOAT-CHEESE CAKE

Pineapple-Tequila Goat-Cheese Cake image

Here is a goat-cheese cake with a layer of pineapple confit that has been steeped in bracing tequila. It's a cake that does well when made in advance and chilled for 24 hours before serving. To sip alongside? An añejo tequila, of course.

Provided by Florence Fabricant

Categories     dessert

Time 2h

Yield 8 to 10 servings

Number Of Ingredients 9

1 large pineapple, peeled, cored and chopped
1 cup silver tequila
5 tablespoons unsalted butter, melted
1 1/2 cups ground almonds
5 tablespoons sugar
1 1/4 cups agave syrup
1 1/4 pounds soft plain goat cheese, like Montrachet
Juice of 1/2 lime
3 eggs, separated

Steps:

  • Finely chop pineapple in a food processor. You should come away with about 4 cups. Place in a saucepan, mix with tequila and set aside for 30 minutes.
  • Heat oven to 350 degrees. Use a little of the butter to brush the bottom of a 9-inch springform pan. Mix ground almonds with remaining butter and 2 tablespoons sugar, then press into bottom of pan. Bake 15 minutes, until lightly tanned. Set aside to cool.
  • Add 1/4 cup agave syrup to pineapple in saucepan, bring to a boil and simmer at a fast clip about 30 minutes, until fruit turns jamlike and most of the liquid is gone. Set aside.
  • Beat or process goat cheese and remaining 1 cup agave syrup until well blended. Add lime juice and egg yolks and beat or process until mixed. Whip egg whites until softly peaked, dust with remaining 3 tablespoons sugar and beat until firm. Fold into goat cheese mixture.
  • Spread pineapple over almond crust. Top with goat cheese mixture. Bake 35 to 40 minutes, until lightly browned and threatening to crack a bit around the edges. Allow to cool to room temperature before removing sides of pan and serving.

GRILLED PINEAPPLE WITH TEQUILA-BROWN SUGAR GLAZE

Grilled Pineapple With Tequila-Brown Sugar Glaze image

I have used dark rum instead of the Tequila with equally good results. I also microwave the pineapple for 2 minutes, then marinade it in the glaze. This is great with vanilla ice cream over the top! Prep time includes marinating. Adapted from Bon Appetit magazine, July 1997.
