½ pound thin skirt steak, trimmed of excess fat
1 tablespoon Montreal steak seasoning
½ pound thin asparagus spears, trimmed
1 teaspoon olive oil
salt and ground black pepper to taste
⅓ cup grated Parmesan cheese
½ jarred roasted red pepper, cut into six 1/2-inch strips
6 toothpicks
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Butterfly or pound steak with a meat mallet to 1/4-inch thickness. Cut into 6 strips, approximately 2 inches wide by 5 inches long. Season both sides with Montreal steak seasoning and place in the refrigerator.
  • Preheat Panasonic Countertop Induction Oven to Medium-High on the "Grill" setting.
  • Place asparagus in a shallow dish; drizzle olive oil on top. Season with salt and pepper.
  • Grill asparagus for 2 minutes, turning after 1 minute. Transfer to a plate.
  • Reheat oven to Medium-High on "Grill" setting.
  • Line up steak strips next to each other in an assembly line. Cover evenly with 1/3 cup Parmesan cheese. Place 3 to 4 asparagus spears on top, perpendicular to each steak strip. Top asparagus with 1 red pepper strip.
  • Roll steak tightly around asparagus, angling it diagonally to avoid overlapping the steak. Secure with a toothpick.
  • Grill steak bundles for 8 minutes, turning every 2 minutes. Remove to a plate and sprinkle with 1 tablespoon Parmesan cheese.

1 pound asparagus (cut into 2 inch pieces)
1/3 cup balsamic vinegar
1/3 cup soy sauce
1/4 cup olive oil
2 Tablespoons Worcestershire sauce
2 Tablespoons honey
1 Tablespoon Dijon mustard
4 cloves garlic (minced)
2 Tablespoons fresh rosemary (minced)
2 Tablespoons fresh thyme (minced)
1 teaspoon black pepper

Steps:

  • Combine all ingredients for the marinade and mix well. Place the steak pieces into a gallon zip top bag and cover with the marinade. Press out any excess air and seal. Marinate in the refrigerator for at least 1 hour or up to 8 hours.
  • Assemble your skewers by alternating 1 piece of steak and 3 pieces of asparagus. Keep in mind, the asparagus tips are fragile, so try to go through the thicker stem as much as possible instead of through the flowers.
  • Preheat your Weber Genesis II grill to high heat (400-450 degrees F)
  • Place the kabobs on the grill and cook for 4-5 minutes per side, rotating once, or until the internal temperature reaches your desired doneness. 125 degrees F for rare, 135 for medium-rare, 145 for medium, 155 for medium well, or 165 degrees F for well done.
  • Remove your kebabs from the grill and let rest for 3-5 minutes before serving. Enjoy!

4 (10-inch) metal or wooden skewers (soak wooden skewers in water 30 minutes)

Steps:

  • Prepare a charcoal grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas).
  • Stir together oyster sauce, vinegar, mustard, and red-pepper flakes in a large bowl.
  • Thread about half of asparagus crosswise onto 2 parallel skewers, leaving space between. Repeat with remaining asparagus and skewers. Brush asparagus with some of glaze, then brush steak all over with remaining glaze and sprinkle with 3/4 teaspoon salt and 1/2 teaspoon pepper.

Steps:

1/2 cup packed brown sugar

On metal or soaked wooden skewers, alternately thread the beef, shrimp, mushrooms, green peppers, onions and tomatoes; set aside.   • If using wooden skewers, be sure to soak them in water for at least a couple hours prior to assembling kebabs. I prefer to soak them overnight, if possible. These are my favorite wood skewers - they're somewhat heavy-duty and are flat, which means the food won't spin around on them!
  • First, blanche the asparagus. Prepare an ice bath in a medium size bowl by filling partway with ice and then adding cold water; set aside. Fill a large skillet half-way with water and bring to a boil on the stovetop. Add asparagus spears and turn heat down a bit so the water is at a low boil. Boil for 2 minutes, until asparagus is softened yet still firm. Remove asparagus immediately to the ice bath, to stop cooking the asparagus. Once asparagus is thoroughly chilled, remove to a colander.
  • Cut asparagus spears into 1-1/4" lengths. Add asparagus and onion pieces to a medium size bowl. Drizzle with one tablespoon of the olive oil. Sprinkle with kosher salt and black pepper, to taste.
