QUICK CURRY PASTA WITH GROUND BEEF AND PINEAPPLE

Quick Curry Pasta with Ground Beef and Pineapple image

This is a super quick pasta dish that the whole family loves. I often make a double portion of the sauce for the next day. Then I serve the sauce on top of the pasta instead of mixing it all together at once.

Provided by barbara

Categories     Main Dish Recipes     Pasta

Time 25m

Yield 4

Number Of Ingredients 11

1 pound penne or other pasta of your choice
2 tablespoons olive oil
1 pound ground beef
1 (15 ounce) can pineapple chunks, drained, liquid reserved
1 medium leek, cleaned and thinly sliced
3 tablespoons mild curry powder
1 tablespoon instant vegetable bouillon granules
salt and freshly ground black pepper to taste
½ cup ketchup
4 tablespoons tomato paste
1 cup heavy cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  • Meanwhile, heat oil in a large skillet. Add ground beef and cook, stirring, until browned, about 5 minutes. Add drained pineapple chunks and leek and cook over medium-high heat for about 5 minutes. Pour in about 1/2 of the pineapple juice. Season with curry powder, bouillon, salt, and pepper.
  • Stir in ketchup and tomato paste until well combined. Cover and simmer over low heat, 5 to 8 minutes. If sauce seems dry, add more pineapple juice.
  • Pour in cream and mix to combine. Cook for 2 more minutes.

Beef and Curry Pie image

Categories     Potato     Vegetable     Bake     Dinner     Ground Beef     Curry     Pea     Fall     Winter     Phyllo/Puff Pastry Dough     Gourmet     Sugar Conscious     Peanut Free     Tree Nut Free

Yield Makes 8 servings

Number Of Ingredients 14

1/2 pound ground beef chuck (not lean)
1 tablespoon soy sauce
1/2 teaspoon sugar
1/4 teaspoon salt
1 teaspoon vegetable oil
1 medium onion, chopped (1 cup)
1 tablespoon curry powder (preferably Madras)
1 large russet (baking) potato, peeled and cut into 1/4-inch pieces (1 cup)
6 tablespoons water
1/4 cup frozen peas, thawed
2 (17 1/4-ounce) packages frozen puff pastry sheets, thawed
1 large egg, lightly beaten
Special Equipment
parchment paper; a 5-inch round cookie cutter

Steps:

  • Mix together beef, soy sauce, sugar, and salt with your hands until combined well.
  • Heat oil in a 10-inch nonstick skillet over moderately high heat, then add beef and cook, stirring occasionally and breaking up beef into small pieces, until just browned, about 4 minutes.
  • Drain beef in a colander set over a bowl (reserve skillet) and return beef drippings to uncleaned skillet.
  • Heat drippings over moderately high heat until hot but not smoking, then add onion and cook, stirring occasionally, until softened, 3 to 5 minutes. Add curry powder and potatoes and cook, stirring occasionally, until potatoes are translucent, 3 to 5 minutes more. Add water and cook, stirring and scraping up any brown bits from bottom of skillet, until liquid is absorbed and potatoes are tender, about 1 minute. Return beef to skillet and stir in peas, then cool filling, stirring occasionally, about 30 minutes.
  • Put oven racks in upper and lower thirds of oven and preheat oven to 400°F. Line 2 large baking sheets with parchment.
  • Roll out one sheet of dough into a 12-inch square on a lightly floured surface with a lightly floured rolling pin and cut out 4 (5-inch) rounds with cutter. Mound 1/3 cup filling onto each of 2 rounds, leaving a 3/4-inch border around edges, then brush edges lightly with egg and cover with another round, gently stretching to cover filling completely. Gently press edges with tines of a fork (about 3/4 inch from edge) to seal, then transfer pies to baking sheet. Repeat with remaining sheets of dough and filling to make a total of 8 pies on 2 baking sheets (you may have some filling left over). Brush tops of pastry lightly with egg and bake in upper and lower thirds of oven, switching position of sheets halfway through baking, until pies are deep golden brown and puffed, 25 to 30 minutes. Cool pies to warm, about 10 minutes, or room temperature.

CURRY BEEF PUFFS RECIPE BY TASTY

Curry Beef Puffs Recipe by Tasty image

Here's what you need: olive oil, large yellow onion, garlic, lean ground beef, McCormick® Curry Powder, Mccormick® ground cumin, sugar, McCormick® black pepper, kosher salt, beef broth, cornstarch, frozen puff pastry, large egg, water, fresh cilantro

Provided by Tracy Raetz

Categories     Lunch

Yield 12 puffs

Number Of Ingredients 15

3 tablespoons olive oil
1 large yellow onion, finely diced
2 large cloves garlic, minced
1 lb lean ground beef
2 tablespoons McCormick® Curry Powder
½ teaspoon Mccormick® ground cumin
¼ teaspoon sugar
¼ teaspoon McCormick® black pepper
1 teaspoon kosher salt, plus more to taste
⅔ cup beef broth
1 tablespoon cornstarch
2 sheets frozen puff pastry
1 large egg
1 tablespoon water
12 sprigs fresh cilantro

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic, and cook for 3-4 minutes, until the onion is translucent and starting to caramelize.
  • Add the ground beef and cook, breaking up with a spatula, until the beef is cooked through and browned, about 4-6 minutes. Drain off any excess grease.
  • Add the McCormick® Curry Powder, cumin, sugar, pepper, and salt. Stir until well combined, about 2 minutes more.
  • Pour the beef broth into a liquid measuring cup and stir in the cornstarch until dissolved, then pour into the skillet with the beef. Stir to combine, then bring to a simmer. Cook until the liquid has thickened and no longer pools, 3-5 minutes. Transfer the beef mixture to a bowl and let cool completely.
  • While the meat is cooling, remove the puff pastry from the freezer and let sit at room temperature for 25-35 minutes, until thawed but still firm. Unfold the puff pastry sheets and cut each into 6 roughly 5-inch squares.
  • Line 2 baking sheets with parchment paper.
  • Spoon 2½-3 tablespoons of the beef filling onto the center of each pastry square. Fold diagonally to form triangles, pressing the edges together and being careful to keep the filling from touching the edges of the pastry. Crimp the edges with a fork to seal. Transfer to the prepared baking sheets.
  • Chill the curry puffs on the baking sheets in the refrigerator for 20 minutes to firm up the pastry.
  • Arrange a rack in the center of the oven. Preheat the oven to 400°F (200°C).
  • In a small bowl, whisk together the egg and water.
  • Remove one tray of puffs from the refrigerator and use a pastry brush to brush the egg wash over the puffs. Bake for 18-20 minutes, until puffed and golden brown. Remove from the oven and repeat with the remaining puffs.
  • Let the puffs rest for 10 minutes, then top each with a sprig of cilantro before serving.
  • Enjoy!
