GROUND PORK TACOS WITH APPLE SLAW
These easy ground pork tacos are a quick family-friendly meal that's perfect for busy weeknights! Ready in under half an hour.

- Pre-heat oven to 375F to warm tortillas. Cover tortillas in foil to warm them all at once.
- Add olive oil, ground pork, cumin, chili powder, garlic powder, onion powder, and smoked paprika to a skillet over medium-high heat. Cook for about 8-10 minutes (or until cooked through), stirring often, and breaking up the meat.
- While the pork is cooking, prepare the apple slaw and the rest of the garnish.
- Once the pork is cooked, serve tacos immediately and garnish as desired.

"PLASTERED" PORK TACOS WITH APPLE-JALAPENO SALSA
I was in the mood for some pork tacos, but I was looking for a bit of a change of pace from the normal carnitas-style I would usually make, which led to this wild and crazy experiment. The "plaster" coating traps all the moisture and flavor of the pork in while it bakes, creating the best pork taco I've had in a while.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C).
- Season pork all over with rosemary and freshly ground black pepper.
- Stir flour, salt, egg white, and water together in a large bowl until very smooth. Adjust with more flour it's too runny. Add pork shoulder and coat thoroughly.
- Spread a few spoons of excess "plaster" into a baking dish or pan. Add, fat-side up. Use a spoon to re-apply plaster to any spots that need it, as well as to the top.
- Roast in the center of the preheated oven until the surface is dry and hard and an instant-read thermometer inserted into the center reads 185 degrees F (85 degrees C), about 3 1/2 hours.
- Let cool for 15 minutes to 1 hour. Break pork up into big chunks and transfer to plate. Add some of the pan juices that accumulated at the bottom of the pan. Cover with plastic wrap. Chill in the refrigerator, 8 hours to overnight.
- Combine apple, onion, jalapeno, cilantro, salt, lime juice, and cayenne in a bowl for salsa.
- Slice chilled pork into strips and then cut into 1/2-inch cubes.
- Heat a dry, nonstick pan over medium-high heat. Brown pork in the pan, 3 to 5 minutes. Serve pork on warm tortillas with the salsa and lime wedges.

MOJO PORK TACOS WITH SWEET APPLE SLAW

- Marinate and cook the pork:
- Combine all of the marinade ingredients in a medium bowl, reserving 1 Tbsp. olive oil.
- Put the pork loin in a large ziplock bag with the marinade, seal and massage the marinade into the pork. Put the bag in the fridge and marinate for at least 5 hours or overnight.
- Preheat the oven to 425°F.
- Heat reserved 1 Tbsp. oil in a large ovenproof frying pan over medium heat. Remove the pork from the bag and allow the excess marinade to drip away. Cook the pork, turning frequently, for 5 minutes, or until golden brown on all sides.
- Put the pan in the oven and cook for 7 minutes, or until a thermometer inserted into the meat reads 143-149°F. Remove from the oven and rest for 10 minutes before slicing.
- Make the slaw:
- Put the apple, cabbage, garlic, chile, spring onion, and cilantro in a medium bowl. Pour over the vinegar, season with salt and pepper, and toss to combine.
- To assemble:
- Assembling a taco is a very personal thing so I'm not going to tell you how to make yours, but here's how I do mine:
- I preheat the oven to 350°F. I wrap my tortillas in foil with the dry herbs and stick them in the oven.
- I get my warm tortilla, put down a layer of avocado slices, then a layer of pork, and then spoon on the epic slaw. I wrap it up and there's no holding back. So get in there like a shot of tequila and make a mess!
