HAM, CHEDDAR, AND APPLE TEA SANDWICHES



Ham, Cheddar, and Apple Tea Sandwiches image

Yield: 6 tea sandwiches • Preparation: 25 minutes • Thaw: 15 minutes

6 slices pumpernickel-rye swirl bread, such as Pepperidge Farm, frozen
1 tart apple, such as Granny Smith
2 tablespoons mayonnaise
2 tablespoons spicy brown mustard
6 slices thin deli-style smoked ham
6 slices sharp white Cheddar cheese
⅓ cup baby arugula
Garnish: additional baby arugula

Steps:

  • Using a 2-inch square cutter, cut 12 shapes from frozen bread, discarding crusts. Cover with damp paper towels, and let bread thaw slightly (approximately 15 minutes). Core apple, but leave whole and unpeeled. Cut 6 (¼-inch) crossways slices from apple. Set aside. In a small bowl, combine mayonnaise and mustard, stirring well. Spread mayonnaise mixture in an even layer onto bread squares. Using 6 bread squares (mayonnaise side up) as a base, assemble 6 sandwiches, stacking ingredients in the following order: arugula, ham slice (folded into quarters), cheese slice, apple slice, and another bread square (mayonnaise side down). Garnish each tea sandwich with arugula, if desired.

6 tablespoons butter, softened, divided
8 slices sourdough bread
3 tablespoons mayonnaise
3 tablespoons finely shredded Manchego or Parmesan cheese
1/8 teaspoon onion powder
1/2 cup shredded sharp white cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded Gruyere cheese
4 ounces Brie cheese with rind removed, sliced
12 slices deli ham
1 tart apple, thinly sliced

Steps:

  • Spread 3 tablespoons butter on 1 side of bread slices. Toast bread, butter side down, in a large skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, mix together mayonnaise, Manchego cheese, onion powder and remaining 3 tablespoons butter. In another bowl, combine cheddar, Monterey Jack and Gruyere. , To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Layer ham and apple slices over Brie; top with remaining bread slices, toasted side facing inward. Spread mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until bread is golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.

2 tablespoons honey
4 slices sourdough bread
4 ounces thinly sliced deli ham
8 thin slices apple
1 cup shredded sharp cheddar cheese
4-1/2 teaspoons butter, softened

Steps:

  • Combine mustard and honey; spread 2 tablespoons mixture over two bread slices. Layer with ham, apple and cheese. Spread remaining bread with remaining mustard mixture; place on top. Butter outsides of sandwiches., In a small skillet over medium heat, toast sandwiches for 2-3 minutes on each side or until cheese is melted.

2 tablespoons grainy mustard
1 tablespoon thinly sliced fresh chives
1 teaspoon honey
1/2 to 1 crisp apple, such as Gala or Pink Lady
1 tablespoon lemon juice
12 Hawaiian sweet rolls, split
4 ounces sharp Cheddar, sliced
8 ounces thinly sliced Black Forest ham
1 1/2 cups baby arugula

Steps:

  • Stir the relish, mustard, chives and honey together in a small bowl.
  • Cut the apple off its core and thinly slice into half-moons. Toss the apples with the lemon juice to keep them from browning.
  • Spread the rolls on both sides with the relish mixture. Build sandwiches with the Cheddar, apples, ham and arugula.

Steps:

Steps:
