Blueberry Rhubarb Crisp with Pistachio Crust image

1/3 cup granulated sugar
2 tablespoons all-purpose flour
3/4 pound rhubarb
2 cups blueberries (about 11 ounces)
For topping
1/3 cup shelled natural pistachios
3/4 cup unbleached all-purpose flour
1/2 cup granulated sugar
1/4 cup packed brown sugar
6 tablespoons cold unsalted butter

Steps:

  • Preheat oven to 375°F. and butter a 2-quart shallow baking dish.
  • In a bowl stir together sugar and flour. Trim rhubarb and cut enough of stalks into 1/2-inch pieces to measure 2 cups. Add rhubarb and blueberries to sugar mixture, tossing well, and spread mixture in baking dish.
  • Make topping:
  • Finely chop pistachios. In a bowl whisk together flour and sugars. Cut butter into 1/2-inch cubes and with your fingers or a pastry blender blend into flour mixture until mixture resembles coarse meal. Add pistachios and toss well.
  • Squeeze a handful of topping together and coarsely crumble in chunks over filling. Squeeze and evenly crumble remaining topping over filling in same manner. Bake crisp in upper third of oven until filling is bubbling and topping is crisp and golden, about 50 minutes.
  • Serve crisp warm or at room temperature.

For the cake:
3/4 cup (1 1/2 sticks) unsalted butter, room temperature, plus more for pan
2 1/4 cups all-purpose flour, plus more for pan
2 1/4 cups granulated sugar
1/2 teaspoon finely grated lemon zest
5 large eggs, room temperature
2 teaspoons rose water
1 teaspoon vanilla extract
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup plain yogurt
3/4 cup plus 2 tablespoons raw pistachios, toasted and chopped
8 ounces rhubarb (2-3 stalks), trimmed
For the rose glaze:
2 1/2 cups powdered sugar
2 tablespoons milk
1 tablespoon rose water
1/2 teaspoon vanilla extract
1/8 teaspoon salt
For decorating the cake:
2 tablespoons dried rose petals
2 tablespoons raw pistachios, toasted and chopped
Special equipment:
12-cup Bundt pan

Steps:

  • Make the cake:
  • Preheat oven to 350°F. Butter and flour Bundt pan, tapping out excess flour.
  • Rub together granulated sugar and lemon zest with your fingers in a large bowl until fragrant. Using an electric mixer on medium speed, cream lemon sugar and 3/4 cup butter until light and fluffy, about 4 minutes. Add eggs 1 at a time, scraping down sides of bowl and beating well between each addition. Beat in rose water and vanilla extract on medium-low speed until just combined.
  • Whisk 2 1/4 cups flour, salt, baking powder, and baking soda in another large bowl. With mixer on low, add dry ingredients to lemon sugar mixture in 3 additions, alternating with yogurt in 2 additions, beginning and ending with dry ingredients, scraping down sides and bottom of bowl as needed. Fold in pistachios.
  • Cut rhubarb crosswise into 2 1/2" pieces. Using a mandoline set to 1/4" or a very sharp knife, slice rhubarb lengthwise, maintaining as much red skin on stalks as possible.
  • Pour one-third of the batter into prepared pan and smooth surface. Add half of the rhubarb, nestling pieces side by side to form a thick ring on top of batter. Pour another third of the batter on top of rhubarb layer; smooth surface. Repeat with remaining rhubarb and batter.
  • Bake cake until the surface is cracked and golden brown, springs back to the touch, and a tester inserted into the center comes out clean, 50-60 minutes. Let cake rest in pan 10 minutes, then turn out onto a cooling rack.
  • Make the rose glaze:
  • Whisk powdered sugar, milk, rose water, vanilla extract, and salt in a medium bowl until well combined. Glaze should be pourable but stiff enough to hold its shape-it can be thickened with more powdered sugar or thinned with more milk if needed.
  • Decorate the cake:
  • Using a spoon, drizzle rose glaze over cooled cake, holding the spoon a few inches above the cake. While glaze is still wet, sprinkle rose petals and pistachios on top.
  • Do Ahead
  • Cake can be baked, cooled, wrapped in plastic, and stored at room temperature up to 3 days. Glaze can be made and stored in an airtight container at room temperature up to 5 days.

This custard isn't meant to be eaten on its own. Food editor Melissa Roberts-Matar wanted the cake layers in the Pistachio Rhubarb Trifle Mushrooms to soak up the custard, so this one has a much looser consistency than most puddings.

3 cups whole milk
8 large egg yolks
2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
1 tablespoon unsalted butter, softened
1 teaspoon vanilla

an instant-read thermometer

Steps:

  • Heat milk in a 2 1/2- to 3-quart heavy saucepan over moderate heat until hot but not boiling.
  • While milk heats, whisk together yolks, sugar, cornstarch, and salt in a heatproof bowl until smooth.
  • Add 1 cup hot milk to yolk mixture in a stream, whisking, then add remaining milk, whisking constantly. Transfer mixture to saucepan and cook over moderately low heat, stirring constantly, until thickened and registers 170°F on thermometer, 6 to 10 minutes (do not boil).
  • Immediately force custard through a fine-mesh sieve into a clean bowl and stir in butter and vanilla. Chill custard, its surface covered with wax paper, until cold and thickened, at least 3 hours.

Lady fingers, stale Génoise or sponge cake
1 cupOloroso sherry
8 egg yolks
1 1/2 cups rich milk
1/2 cup sugar
Whipped cream, candied cherries, angelica peel, chopped pistachio nuts

Steps:

  • Line a decorative serving dish with the lady fingers or cake and pour over them the sherry. The cake should be moistened but not soaked. Add more sherry if necessary. Chill in the refrigerator.
  • Make a pastry cream by blending the egg yolks, milk, and sugar and cooking in the top of a double boiler over hot (not boiling) water, stirring constantly. As soon as the mixture begins to thicken and slightly coats the spoon, pour into a bowl to cool. Do not overcook or it will curdle. Pour the cooled pastry cream over the cake and refrigerate until firm. To serve, cover top with a layer of whipped cream and decorate with cherries, peel, and nuts. Serve well chilled.
  • If you prefer a less rich pastry cream, blend 3 egg yolks with 1/2 cup sugar, a pinch of salt, 2 tablespoons flour, and 2 teaspoons corn starch. Put in the top of a double boiler over hot water and add 1 cup light cream. Stir and cook until the pastry cream is thickened.

1 4.4-ounce package custard dessert mix (such as Jello- brand)
3/4 cup raspberry preserves
2 10-ounce packages frozen raspberries in syrup, thawed, drained, 1/4 cup syrup reserved
1 16-ounce frozen pound cake, thawed, crust trimmed, cut into 1/2-inch-thick slices
3/4 cup cream Sherry
1 1/4 cups chilled whipping cream

Steps:

  • Prepare custard mix according to package instructions. Place in freezer until cold, stirring often, about 15 minutes.
  • Mix preserves and 1/4 cup reserved raspberry syrup in small bowl. Line bottom of 8-inch-diameter glass bowl that is 4 to 5 inches deep (about 15-cup capacity) with layer of cake, trimming to fit. Brush 1/4 cup Sherry over. Spread 1/4 cup preserve mixture over. Reserve 12 raspberries. Sprinkle 1/3 cup raspberries over preserves, then pour 1 cup custard over. Repeat layering 2 more times. Cover; chill 2 hours. (Can be made 1 day ahead. Keep chilled.)
  • Beat cream in large bowl until stiff peaks form. Spoon cream onto trifle. Garnish with 12 raspberries.
