1 pound (2 1/2 cups) dry white beans, like cannellini or Great Northern
2 quarts of water
2-3 pounds smoked ham shanks or ham hocks
2 teaspoons Herbes de Provence, or Italian seasoning
1 tablespoons extra virgin olive oil
1 cup diced onions (about 1 small onion)
1 cup chopped celery (about 2-3 ribs)
2/3 cup chopped carrots (about 1 medium carrot)
2-3 cloves garlic, minced
Tabasco sauce
Salt and pepper
Fresh parsley

Steps:

  • Soak the dry beans: Fill a pot large enough to hold the beans with water and bring to a boil. Turn off the heat, add the beans and soak for about 2 hours. Drain the water.
  • Simmer the ham: While the beans are soaking in step 1, put the ham shanks or ham hocks in a separate large pot and cover them with 2 quarts of water. Add the herbes de Provence or Italian seasoning. Warm on high heat until the water comes to a simmer, then lower the heat, partially cover and maintain the simmer for about an hour.
  • Sauté the onions: Heat olive oil in a small sauté pan on medium high heat. Add the chopped onions and cook until translucent, about 5 to 6 minutes. Add the minced garlic and cook a minute more.
  • Add vegetables and beans to the ham broth: Once the ham hocks or shanks have been simmering for an hour, add the drained soaked beans from step 1, the cooked onions and garlic, and the chopped celery and carrots.
  • Simmer the soup: Cook for another 40 minutes or so, uncovered, until the vegetables are soft and the ham meat easily pulls away from the bone. Remove the ham bones from the soup and pull off any meat and return it to the soup. Discard the bones.
  • Season to taste: Add several drops of Tabasco to taste. Add salt and pepper to taste. Serve with a pinch of chopped fresh parsley.

Frizzled shallots:
3 medium shallots, thinly sliced into rings
1/2 cup vegetable oil
Kosher salt
Honey-Mustard Cream:
1/2 cup sour cream
3 Tbsp. Dijon mustard
1 1/2 tsp. honey
Freshly ground black pepper
Stew and assembly:
3 Tbsp. extra-virgin olive oil
2 medium onions, halved through root ends
2 heads of garlic, halved crosswise
2 small carrots, trimmed, scrubbed
1/2 cup dry white wine
2 1/2 lb. smoked ham hocks (about 4 medium)
1 bunch of thyme, stems tied together with kitchen twine
2 cups corona or gigante beans, soaked overnight, drained
Kosher salt, freshly ground pepper
Chopped cornichons and/or dill sprigs (for serving; optional)

Steps:

  • Frizzled Shallots:
  • Heat shallots and oil in a small saucepan over medium, swirling often, until shallots are deep golden brown, 6-8 minutes. Pour into a fine-mesh sieve set over a heatproof measuring glass. Give sieve a good shake, then spread out shallots on a paper towel to drain. Season with salt; let cool.
  • Honey-Mustard Cream:
  • Stir sour cream, mustard, and honey in a small bowl until smooth; season with pepper. Cover and chill.
  • Stew and assembly:
  • Heat oil in a large Dutch oven or other heavy pot over medium-high. Cook onions and garlic, cut side down, and carrots, turning carrots occasionally, until cut sides of onions and garlic are golden, about 4 minutes. Add wine, stirring to release any bits stuck on bottom of pot, and cook until reduced by two-thirds, about 2 minutes. Add ham hocks, thyme, beans, and 9 cups water. Season with several pinches of salt and lots of pepper and bring to a simmer. Cover with a lid, leaving slightly askew so steam can escape, and cook, adjusting heat to maintain a very gentle simmer and skimming foam from surface as needed, until beans are tender and creamy and broth is very flavorful, 2-2 1/2 hours.
  • Remove pot from heat and transfer ham hocks to a cutting board. Let sit until cool enough to handle, then pull meat from bones and tear into bite-size pieces; discard fat, skin, and cartilage. Add meat and knuckle bones back to pot as you go. Let stew cool uncovered until no longer steaming. Cover pot and chill stew at least 12 hours (you can skip this step, but it will dramatically improve the flavor).
  • Gently reheat stew, covered, until barely simmering. Pluck out and discard bones, thyme, and garlic heads (don't worry about any cloves that may have escaped into stew). Season with more salt and pepper if needed. Ladle into bowls and serve with Frizzled Shallots, Honey-Mustard Cream, cornichons, and/or dill as desired.

1 pound dried navy beans
12 cups water, divided
2 ½ pounds smoked ham hocks
1 (32 ounce) carton low-sodium chicken broth (such as Swanson® Natural Goodness®)
1 cup chopped onion
¼ cup chopped fresh Italian parsley
1 teaspoon garlic powder
1 teaspoon dried basil
½ teaspoon ground black pepper
½ teaspoon dried oregano
¼ teaspoon ground nutmeg
3 bay leaves
2 ½ cups thinly sliced carrots
1 cup chopped celery
¾ cup mashed potato flakes

Steps:

  • Rinse and sort the navy beans. Place in a Dutch oven with 8 cups water. Bring to a boil for 2 minutes and remove from heat. Let stand, covered, until beans are softened, about 5 hours.
  • Drain the navy beans and discard the soaking liquid. Rinse beans and return to the Dutch oven. Add ham hocks, chicken broth, 4 cups water, onion, parsley, garlic powder, basil, black pepper, oregano, nutmeg, and bay leaves. Bring soup to a boil; reduce heat and simmer until beans are tender, about 1 1/2 hours.
  • Mix carrots, celery, and potato flakes into the soup until well combined. Cover and simmer until vegetables are tender, about 30 minutes more.
  • Take ham hocks from the pot and place on a cutting board until cool enough to handle. Remove meat from the bones and cut into bite-sized pieces. Return meat to the pot and warm through over medium heat, about 3 minutes.

Ham hocks are available at your butcher. Okay, you might not have one. Do yourself a favor, and get to know one. If that means that you actually have to talk to the guy at the meat counter at the supermarket, so be it. Ask if you can get some hocks in. You would be surprised at the cost of the hocks. They are pure gold, and priced like dirt.

2 small ham hocks (one could use a bone if you like, or just chopped ham.)
450 g white navy beans, washed and picked
2 liters water (This is to start, you will need more later.)
1 bay leaf
2 garlic cloves, minced
1 medium onion, diced
2 small russet potatoes
1 lemon, juice of
to taste kosher salt
to taste fresh ground pepper

Steps:

  • Pick through beans to make sure there are no stones. Nothing sucks like breaking your teeth on a stone when it should be a bean!
  • Place the beans in the crock pot; cover with water.
  • Set on high cooking and cook for an hour.
  • Now, some of you will argue that we should or should not season the beans because of the skins. Well, it is a moot point here as we are adding something salty to it anyway. Moving right along.
  • Ham hocks go inches If you cannot find ham hocks, don't worry. The recipe will be fine. Just throw in a ham bone. No ham bone? You're killing me here! You could just use a couple slices of ham.
  • Add your bay leaf to the crock pot. Don't worry - it will float. No panic. Really!
  • Hack up the onion, a small dice is fine, toss it into te crock pot.
  • Mince the garlic, again - you guesed it - into the crockpot. Are you with me so far?.
  • Hack the potatoes into a medium dice, toss them into the crock pot. You will be needing them to give your soup some body - that stick-to-your-ribs quality. Besides, they are in season.
  • Set all of that onto 10 hour on low cooking.
  • Just before serving, remove the meat and bay leaf from the soup. Once the meat is cold enough to handle, shred it up!
  • Puree up half of the soup with a hand blender. Do it right in the crockpot! Why waste or clean another vessel. If you have dishwashers, then don't worry about it. If you don't - you get the idea.
  • Put the meat back into the soup.
  • Now is the time to adjust for seasoning. We start off with the lemon juice, then we adjust the salt and pepper in stages.
  • Taste a spoon full, think about the saltiness or the pepperiness. *I am sure that should be a word!*.
  • Once the soup is where you would like it to be, ladle it up and serve it with that local artisan bread.
  • Props to you! You just cooked something easy for Winter.

  • When beans are soft, remove the bones from the ham pot and add pot contents to the beans, including the water and the seasonings in the pan.
  • Add the carrots and celery-cook on low till veggies are tender.
  • Season with salt and pepper to taste. Add hot sauce at serving.

1/4 cup bacon drippings (from 1/2lb bacon) or olive oil
2 cups chopped onion

1 lb tomatoes, peeled, seeded, and diced
4 fresh thyme sprigs
8 cups chicken broth
For corn bread croutons
3 tablespoons unsalted butter
1 garlic clove, minced
3 cups 3/4-inch cubes corn bread
1 lb arugula, coarse stems removed
Tabasco to taste

Steps:

  • Make soup:
  • Soak beans in cold water to cover overnight (8 hours). Drain and rinse well.
  • Simmer ham hocks in 6 cups water in a 3-quart saucepan, partially covered, skimming foam as necessary, 1 hour. Reserve 4 cups cooking liquid and drain ham hocks.
  • Heat bacon drippings in an 8-quart heavy pot over moderate heat until hot but not smoking, then cook onion and garlic, stirring, until softened. Add tomatoes and thyme and cook, stirring, 1 minute. Add soaked beans, broth, ham hocks, and reserved cooking liquid and simmer, covered, stirring occasionally, until beans are tender, about 1 hour.
  • Make croutons while soup simmers:
  • Preheat oven to 375°F.
  • Melt butter with garlic and toss together with corn bread cubes in a shallow baking pan. Toast in middle of oven until lightly browned and crisp on the outside, about 15 minutes.
  • Prepare soup for serving:
  • Remove ham hocks and shred meat. Return meat to soup and stir in arugula. Simmer, uncovered, stirring occasionally, until greens are tender, 3 to 5 minutes. Season with salt, pepper, and Tabasco.
