AMAZING GLAZED HAM

Steps:
- Let the ham sit at room temperature for 1 hour before baking. This will allow it to cook evenly.
- Preheat the oven to 325 degrees F.
- Make the glaze: In a medium pot over medium-high heat, combine the brown sugar, mustard, vinegar, cinnamon, paprika, chili powder, orange zest and juice, garlic and some salt and pepper. Bring to a gentle boil and cook for 10 minutes, stirring occasionally.
- Place a rack in a roasting pan. Put the ham on the rack large open-face down (so the spiral cuts are stacked on top of one another). Brush half of the glaze over the surface of the ham, getting it between the slices as much as you can.
- Pour about an inch of water in the base of the roasting pan; the water should not touch the ham. Tent the pan loosely with aluminum foil and bake for about 10 minutes per pound (1 hour 10 minutes to 1 hour 25 minutes).
- Take the ham out of the oven and remove the foil. Raise the oven temperature to 375 degrees F. Brush half of the remaining glaze on the ham. When the oven is up to temperature, return the ham, uncovered, and bake for 15 minutes. Brush the remaining glaze over the ham and cook for another 15 minutes.
- Carefully transfer the ham to a platter. Serve right away, or cover with foil and take it to your gathering!

- Before baking ham, place pineapple slices on ham with toothpicks and place cherries in center of pineapple.
- In a medium microwave safe bowl combine brown sugar and reserved pineapple juice. Mix together and microwave for about 5 minutes, until mixture is thick. Pour some of this glaze over the ham about every 15 minutes in the last hour of baking, until all is used.

- Preheat the oven to 325 degrees F (165 degrees C). Trim excess fat off the ham and score in a diamond pattern with a sharp knife, making shallow cuts about 1 inch apart. Place in a roasting pan.
- Roast for 30 minutes in the preheated oven. In a small bowl, mix together the maple syrup, red wine vinegar, Dijon mustard and mustard powder.
- When the 30 minutes are up, brush 1/3 of the glaze over the ham. Bake 20 minutes, and repeat twice with remaining glaze. Let the ham stand for 10 to 15 minutes before carving.

- Preheat oven to 325°F. Place ham in large roasting pan. Pour apple juice over ham. Cover ham completely with parchment paper, then cover ham and roasting pan completely with heavy-duty foil, sealing tightly at edges of pan. Bake ham until instant-read thermometer inserted into center of ham registers 145°F, about 3 hours 45 minutes. Remove ham from oven. Increase oven temperature to 375°F.
- Remove foil and parchment from ham. Drain and discard liquids from roasting pan. Cut off rind and all but 1/4-inch-thick layer of fat from ham and discard. Using long sharp knife, score fat in 1-inch-wide, 1/4-inch-deep diamond pattern. Spread mustard evenly over fat layer on ham. Pat brown sugar over mustard coating, pressing firmly to adhere. Drizzle honey evenly over. Bake until ham is well glazed, spooning any mustard and sugar glaze that slides into roasting pan back over ham, about 30 minutes. Transfer ham to serving platter; let cool at least 45 minutes. Slice ham and serve slightly warm or at room temperature.
BROWN SUGAR AND SPICE DRY HAM RUB
I created this recipe when frustrated by the packets of glaze that came with spiral hams bought at the grocery store. It is sweet, with the perfect amount of spice, and makes a nice crust on the outside of the ham, similar to the famous ham store's. This recipe makes enough to cover a 3 to 5 pound ham. Store in an airtight tin if not using immediately.

HRUTKA (EGG CHEESE)
Otherwise known in English as "egg cheese". This is from my MIL who has Czech heritage. She makes this every Easter. She slices it and serves it at room temp with ham. *I* like it when it's chilled and I slice it and put it on a sandwich w/ cold leftover ham slices. It's a soft, solid custard. Servings are a guess. Prep time is the chilling time.

- Beat all ingredients well.
- Pour into a large saucepan and cook very slowly over low heat (stirring often) until it looks kind of like cottage cheese and liquid/curds start to separate.
- Pour the mixture into a round colander or a strainer lined with cheese cloth and form into a ball.
- Hang up over a sink and let drip. Drain for about 3 hours.
- Chill at least 8-10 hours or overnight.

- Preheat oven the 425*F (220*C).
- Place the port, honey,brown sugar, lemon juice, and cinnamon in a small saucepan. Bring to boiling over medium heat, stirring to dissolve the sugar. Boil the glaze for 3 minutes, stirring from time to time.

RIB EYE STEAKS IN A PORT WINE GLAZE.
Perfectly cooked steaks, nicely seasoned with a rich sweet and slightly spicy glaze. The rib eyes should be room temperature so bring meat out of the refrigerator 1 hour before searing. Use tongs so not to puncture the meat. This serves 12 normal adults. 1/4 pound per adult. BUT if like my Husband he'll eat the whole steak himself. I just don't know how he does it! Leftovers are nice over a bed of greens and a blue cheese dressing.

- Preheat oven to 400 degrees.
- Heat cast iron pan to medium high/ high heat.
- Mix flour and seasoning together. Dry meat with a paper towel. Coat meat with the flour seasoning mix.
- Add onions and garlic to the remaining flour and toss to barely coat.
- Pour oil in a cast iron pan just to cover bottom.
- Pan sear meat on one side for 3 minutes, flip to other side for 3 minutes.
- Then place on end in pan, they are thick enough to stand on their own.
- Add onion and garlic to pan around the meat.
- Place thermometer in to meat and place into oven.
- Roast till desired doneness.
- Rare - 130 to 140 degrees F; medium-rare - 140 to 150 degrees F; medium - 150 to 160 degrees F; medium-well - 160 to 170 degrees F,.
- Remove, tent lightly with foil and rest for 10 minutes.
- Meanwhile add port to the onions in the pan over medium high heat to deglaze scraping all the goodness from pan. Reducing by halve. Stir in the butter to thicken and serve over the steaks.
- Slice across the grain.
- Serve as individual steaks or slice just before serving on warmed plates.
