There is a running joke in my family, that when you are hung over, you need a big bowl of Hangover Soup! lol...And it's true! No matter how sick you feel, you always feel better after a bowl. or two! ;)

Number Of Ingredients 10

1 -1 1/2 lb lean ground beef (or any meat you prefer)
2 -2 1/2 cups elbow macaroni
2 (28 ounce) cans tomatoes
1 onion
1 dash garlic powder
1 1/2 tablespoons salt (to taste)
1 tablespoon pepper (to taste)
1 (6 ounce) can tomato paste
2 cups water
chili powder (optional) or hot sauce (optional)

Steps:

  • First, take the meat of your choice, brown it in a frying pan with one half of the onion.
  • Drain the meat and leave it in the pan until you are ready to put it in the pot.
  • Boil your macaroni, drain and set aside the noodles in the strainer.
  • Take your pot and add the 2 cans of tomatoes, dice the onion and throw it in the pot with the salt, pepper and garlic powder.
  • When it gets to a nice boil, add the tomato paste, hamburger and macaroni.
  • Let it boil down a bit, then add the 2 cups of water, stir.
  • Now the optional part: If you want to add anything else to the recipe(like parmasean, etc.) this is the time to add it. Give the soup a stir and get out the bowls and spoons, because your Hangover Soup is done! :D Enjoy!

I attended a potluck where this soup was the main dish, the host went on and on about how good this was, I liked the soup but thought with a few added touches i could personilize this into and amazing soup, so thats what i did. Warning this soup is very good and very hearty and will result in a full satisfied stomach. Very good on a cold winter day when running to the market is not an option.

1 lb lean ground beef
1 medium onion
1/4 teaspoon instant minced garlic
2 large carrots
2 cups cabbage leaves
14 ounces diced tomatoes
8 ounces tomato sauce
1 pinch parsley
2 tablespoons beef bouillon powder
1 cup elbow macaroni
1/4 cup frozen peas
1/4 cup frozen corn
3 cups water

Steps:

  • In a frying pan cook ground beef, onions and garlic together.
  • Then thinly slice carrots and cabbage and add to cooked beef mixture fry for an additional 5 minutes over medium heat.
  • Transfer ingredients to a large pot with lid, then add all additional ingredients cover, bring ingredients to a boil over medium heat then reduce to low heat and cook for an additional 2 hours or until all vegetables are fully cooked.

4 strips bacon, chopped
1 cup finely chopped pork loin
1 small onion, finely chopped
1 1/2 cups crushed tomatoes
1/2 cup finely chopped mushrooms
2 tablespoons shredded celery root
4 stalks celery, chopped
2 medium carrots, peeled and chopped
Salt and black pepper
3 cups cubed potatoes
1/2 cup chopped Polish sausage
2 tablespoons finely chopped leek
1 teaspoon allspice
1 teaspoon bay leaves
1 teaspoon Hungarian paprika
1 cup diced pickles
3 cloves garlic, finely chopped
1 tablespoon Eastern European seasoning, such as Vegeta, optional
3 tablespoons chopped fresh dill
1 cup heavy cream

Steps:

  • Fill a soup pot with 8 cups water and set on medium-high heat.
  • In a pan, fry the chopped bacon. When it is done, take out and put into the water in the soup pot.
  • In the drippings of the bacon, fry the pork loin and then the onions. When brown, put them into the soup pot and bring to a boil. Add the crushed tomatoes, mushrooms, celery root, celery, carrots and some salt and cook for 15 minutes.
  • Next, add the potatoes, sausage, leeks, allspice, bay leaves and Hungarian paprika and cook for another 15 minutes.
  • Add the pickles, garlic and seasoning if using, and let boil for 10 minutes. Add the dill and heavy cream and season with salt and pepper. Guten Appetit!

2 cups water
1/2 cup wild rice, uncooked, rinsed in cold water, drained
1/2 cup butter
1 1/2 cups onions, diced
8 ounces fresh button mushrooms, sliced
2 teaspoons fresh rosemary, stemmed, minced or 3/4 teaspoon dried rosemary, crumbled
3/4 cup flour
8 cups chicken broth
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 cup whipping cream
2 tablespoons sherry wine or 2 tablespoons dry white wine

Steps:

  • Place water in medium saucepan, add wild rice and bring to boil over medium heat.
  • Reduce heat to low, cover and simmer for about 45 minutes.
  • Do not drain; set aside.
  • Melt butter in 5 quart Dutch oven or kettle over medium heat.
  • Add onion and mushrooms and saute about 3 minutes, until vegetables soften.
  • Add rosemary.
  • Add flour gradually to mushroom mixture, cooking and stirring frequently over medium-high heat, until mixture boils.
  • Add chicken broth; bring to a boil, boil 1 minute.
  • Stir in reserved wild rice and any remaining liquid, salt and black pepper.
  • Stir in whipping cream and sherry; do not let boil.
  • Serve immediately.

This soup goes back for many generations in my home town. It's a delicious tomato macaroni soup with a good rich broth. I don't know how it got the name but it does seem to soothe a hangover.

1 beefy soup bone
cold water
1 (28 ounce) can tomatoes, pureed in blender
1 tablespoon tomato paste
1 onion, diced
2 beef bouillon cubes (71g)
1 teaspoon dried parsley
3/4-1 cup elbow macaroni or 3/4-1 cup corkscrew macaroni
salt and pepper

Steps:

  • Put soupbone in dutch oven and fill with cold water halfway to the top of pot.
  • Cook over medium heat for about an hour.
  • Add tomatoes,onion,beef cubes,tomato paste and parsley,continue cooking until beef falls from the bone (around 45 minutes or more.) Remove the meat and cut into small pieces, discarding the fat and bone and put back into soup.
  • Add macaroni and cook for around 15 minutes.
  • Salt and pepper to your liking.
