HAWAIIAN MEATBALLS
Hawaiian-style meatballs in a sweet, somewhat tangy sauce.

Steps:
- Mix together ground beef, ginger, garlic powder, and pepper until well combined. Form into 1 1/2-inch meatballs.
- Saute meatballs in a large frying pan over medium-high heat until browned, about 10 minutes. Remove meatballs to a plate, reserving the pan drippings.
- While the meatballs are cooking, pour juice from the canned pineapple into a liquid measuring cup and add enough water to make 1 cup. Mix brown sugar and cornstarch in a small bowl.
- Add pineapple juice and brown sugar mixtures to the warm pan drippings. Add vinegar and soy sauce and bring to a boil. Cook until sauce thickens, 2 to 3 minutes. Add meatballs, pineapple chunks, and green pepper. Simmer until meatballs are no longer pink inside, about 10 minutes.

GRILLED HOISIN BEEF
The (underrated) hoisin sauce is a thickened, fermented soy-sauce-like substance, flavored with chilies, garlic, vinegar, sugar, and, of course, exotic spices. It makes a great marinade. And unless you horribly overcook it, this skirt steak is juicy and tender.

- Whisk hoisin sauce, vinegar, soy sauce, hot sauce, sesame oil, grated ginger, garlic, brown sugar, salt, and pepper together in a large mixing bowl.
- Cut skirt steak crosswise into about 4 or 5 smaller pieces. Transfer steak into marinade and toss until all pieces are evenly coated. Cover with plastic wrap. Refrigerate; marinate at least 2 hours and up to 12 hours.
- Line a baking pan with paper towels. Transfer pieces of steak to the paper towels and mop off some of the marinade.
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Transfer steak pieces to grill. Cook to medium rare or medium, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read between 130 and 135 degrees F (about 54 degrees C). Thinner pieces might finish earlier. Transfer steak to a warm plate. Let rest for a few minutes.
- Transfer steak to a warm serving platter and pour any accumulated juices over skirt steak. Sprinkle with sesame seeds and sliced green onions.

HAWAIIAN MARINATED STEAK RECIPE - (4.4/5)

- Whisk to combine 1/2 bottle of the marinade, pineapple juice, ginger, and rosemary. Add the steak, & marinade to a large freezer zip loc bag and marinate in the fridge for at least 24 hours. Remove the steak from the refrigerator about 30 minutes prior to cooking. Heat your grill to high. Remove the steak from the marinade and pat dry with paper towels. Season with salt and pepper and set aside. For the glaze, pour the remaining marinade into a small saucepan. Bring to a boil and then simmer until slightly thickened and reduced by half. Grill the steak for about 6 to 8 minutes on each side (medium-rare), brushing them with the glaze in between each turn. Let rest for at least 10 minutes so that all of the juices can evenly distribute. Thinly slice on an angle.
ALL PURPOSE HAWAIIAN MARINADE
I originally concocted this recipe for a party I hostessed. I used it on chicken thighs and legs, but since then, I've tried it beef and pork, as well. I also think it would be awesome on tuna steaks or shrimp! I've also used Pineapple Coconut Juice and it's EXCELLENT. Enough for 3 lbs meat of choice.

- In a large bowl, mix all ingredients together. Allow meat to marinate in zip top baggies for 12 to 48 hours.
- Remove meat from bags and pour marinade into sauce pan. Bring to boil over medium high heat and for 10 minutes.
- Baste meat with marinade in between flips on the grill.
HAWAIIAN HOISIN MARINADE AND SAUCE FOR MEATS

SPICY HOISIN MARINADE

- Whisk together ingredients in a nonreactive bowl. Arrange meat in a shallow nonreactive dish or resealable plastic bag. Add marinade; rub gently into meat. Cover; refrigerate for length of time specified below, turning meat occasionally.

HAWAIIAN KOREAN KAL BI MARINADE
Original recipe given to me by Hawaiians. Best for grilling pork or beef ribs and even chicken, just stick to 4-5 pounds. Can be halved for smaller amounts of meat or doubled for feeding a crowd. Better than the old red barbecue sauce!

- Blend all ingredients in a large bowl until sugar is completely dissolved.
- Dump over meat placed in a long dish covered tightly with plastic wrap or place into ziplock bag(s).
- Marinate overnight (or for two days).
- Turn meat 3-4 times each day.
- Remove from marinade when ready to cook.
- Discard marinade.
- Grill over low to medium coals or bake in the oven at 325F until cooked through.
- Cooking times will vary based on grill/oven heat and type of meat.
SPICY HOISIN MARINADE FOR CHICKEN
Plan ahead the chicken needs to marinate for a minimum or 6 hours. There is enough marinade for about 8-10 pieces of chicken or less, but it can be doubled. This is a wonderful marinade for chicken!

- Make marinade:
- Finely chop scallion and in a bowl whisk together with remaining marinade ingredients.
- In a large heavy-duty sealable plastic bag combine marinade and steaks, turning steaks to coat with marinade, and seal bag, pressing out excess air. Marinate steaks at room temperature 1 hour.
- Make salsa while steaks are marinating:
- Finely chop nectarine and bell pepper. Seed and finely chop tomatoes. Thinly slice white and pale-green parts of scallions and mince garlic. Wearing protective gloves, discard seeds and ribs from chile and finely chop chile. In a bowl stir together all salsa ingredients and season with salt and pepper.
- Prepare grill.
- Remove steaks from marinade, discarding it, and grill steaks on an oiled rack set 5 to 6 inches over glowing coals, 3 to 4 minutes on each side for medium-rare. (Alternatively, grill steaks in a hot lightly oiled well-seasoned ridged grill pan over moderately high heat.) Transfer steaks with tongs to a platter and let stand 5 minutes.
- Serve steaks with salsa.
