HEALTHY HAM AND BARLEY SOUP
This is a hearty ham and barley soup that is not only comforting and filling, but healthy too.

Steps:
- Dice all vegetables
- Saute vegetables in oil until tender, about 5-7 minutes.
- Add garlic, salt, and pepper and heat for one minute more.
- Pour in the chicken or ham broth and bring to it to a boil.
- Add the barley, stir, and reduce heat to medium-low.
- Let soup simmer for 8 to 10 minutes or until barley is tender.
- Add spinach and diced ham and stir until spinach is wilted, about 1 minute.
- Ladle ham and barley soup into bowls and top with parsley and bacon bits.
SMOKED HAM, BARLEY, AND VEGETABLE SOUP
Steps:
- Bring broth and ham hocks to boil in large pot. Cover, reduce heat to medium-low and simmer 15 minutes. Add diced potatoes, tomatoes with juices, onion, carrots, celery, barley, and oregano. Bring to boil. Reduce heat to medium-low; simmer uncovered until meat and barley are tender, about 1 hour.
- Using tongs, remove ham hocks from soup. Cut meat off bones and chop coarsely. Return meat to soup; discard bones. (Can be prepared 2 days ahead. Refrigerate uncovered until cold, then cover and refrigerate. Bring to simmer before continuing.) Add green beans; simmer until beans are tender, about 15 minutes. Season soup to taste with salt and pepper.

- Preheat oven to 350 degrees. Spray pan with cooking spray.
- Melt buttery spread in a skillet on medium high heat. Add barley, carrots, onions, celery and garlic. Cook 3 minutes. Remove from heat and stir in ham, basil, oregano and pepper. Then pour this mixture into the baking pan.
- Bring broth to a boil in a saucepan and then pour over the ham mix. Cover tightly with foil and bake 20 minutes. Remove from oven, stir in green beans. Recover and bake another 30 minutes or until barley is tender.

- Heat olive oil in large soup pot over medium heat.
- Add onions, then add pepper, salt, pepper sauce and stir twice.
- Saute over medium heat for 3 minutes.
- Add rinsed split peas,barley,chopped carrots, garlic, bay leaves and saute another 2 minutes, stirring several times.
- Add chicken broth and the chopped ham or smoked turkey sausage.
- Bring to boil, reduce heat and simmer for 1 hour, stirring occasionally.
- Remove from heat, remove bay leaves,add milk or half and half and stir.
- Enjoy with warm, crusty bread.

- Place the ham hock in a large, heavy-based saucepan, cover with cold water, then bring to the boil over a medium heat, skimming off any foam that collects on the surface. Reduce the heat and simmer for 1 hour or until the meat can be pulled easily away from the bone.
- Remove the pan from the heat and leave the ham to cool in the cooking liquid. Remove the meat from the pan when cool. With a sharp knife, remove the skin from the ham hock. Shred the meat from the bone and reserve. Reserve the liquid the ham was cooked in.
- Bring the basic vegetable soup to the boil over a medium heat and add the pearl barley and 2 ladlefuls of the reserved ham hock liquid. Simmer for 40-45 minutes until tender. Stir through the ham hock meat and serve in big bowls.
