2 tablespoons butter, softened
1 to 2 tablespoons minced chives
1 to 2 tablespoons minced fresh parsley
1/2 teaspoon garlic powder
1/4 teaspoon dill weed
1/8 teaspoon dried thyme
Pepper to taste
5 flour tortillas (6 inches)

Steps:

  • In a small bowl, beat cream cheese and butter. Add seasonings; mix well. Spread evenly over tortillas. Roll up tightly and wrap in plastic. Refrigerate until firm. Unwrap; cut into 3/4-in. slices.

2 teaspoons grated Parmesan cheese
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley flakes
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon garlic powder
1/8 teaspoon kosher salt
Dash pepper
2 flour tortillas (6 inches)
2 teaspoons olive oil

Steps:

  • In a small bowl, combine the first seven ingredients. Brush tortillas with oil; cut each tortilla into six wedges. Arrange in a single layer on a baking sheet coated with cooking spray., Sprinkle wedges with seasoning mixture. Bake at 425° for 5-7 minutes or until golden brown. Cool for 5 minutes.

2 tablespoons thinly sliced fresh mint

1/4 teaspoon fresh lemon juice
1/8 teaspoon table salt
Pinch of cayenne, or to taste
1/2 medium seedless cucumber (usually plastic-wrapped)
3 medium radishes
Coarse sea salt for sprinkling
Special equipment: a Japanese Benriner* or other adjustable-blade slicer
Garnish: tiny fresh mint leaves and finely grated fresh lemon zest

Steps:

  • Stir together cream cheese, herbs, zest, lemon juice, table salt, and cayenne.
  • Slice 32 (1/8-inch-thick) rounds from cucumber with slicer. Trim bottoms from radishes, then slice into 32 (1/16-inch-thick) rounds with slicer. Top each cucumber slice with a radish slice and 1/2 teaspoon herbed cream cheese. Sprinkle with coarse sea salt and serve immediately.

4 ounces soft mild goat cheese
2 teaspoons fresh thyme leaves
2 teaspoons fresh rosemary leaves, chopped fine
1 teaspoon coarsely ground black pepper
1/2 teaspoon coarse salt
2 teaspoons extra-virgin olive oil
four 6-inch flour tortillas

Steps:

  • Preheat oven to 450° F.
  • In a bowl mash together all ingredients except tortillas. On oven rack toast tortillas in middle of oven, turning them once, until just golden and crisp, about 2 minutes on each side, and cool on a rack. Spread tortillas with goat cheese mixture and cut into serving pieces.

1 tablespoon mayonnaise or 1 tablespoon sour cream
20 small round tortilla chips
10 cherry tomatoes

Steps:

  • Peel, pit& mash the avocado- keep the pit to place in the mixture to help keep it from browning.
  • Add spice, lime juice& Tabasco to the avocado.
  • Mix well.
  • Cover& chill until ready to serve.
  • Spread the avocado mixture on the 20 tortilla chips.
  • Slice cherry tomatoes and place a slice on each chip.
  • Serve.
