1 cup sugar
1 cup heavy cream
1 cup honey
3 sticks butter (or 3/4 lb), softened
1 tsp vanilla (this was a last minute addition...so it's not in the picture)

Steps:

  • In a sauce pan combine sugar, cream and honey. Heat on medium high heat and stir until it comes to a boil. Boil for 1 minute. Put the softened butter in a blender or food processor, and pour the hot mixture over the butter. Blend on medium speed until mixed well. Add vanilla, and blend again. Pour mixture into a container, cover and let cool in the refrigerator. Keep refrigerated. Serve on warm bread, toast, oatmeal, pancakes....my imagination is running wild! Or, like the original pinner said (bless her heart) "just warm it up and get a straw!"

1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine.   • Using a sharp knife, cut away peel and white pith from oranges and grapefruit. Remove orange and grapefruit segments from their membranes. Squeeze juice from membranes into a small bowl. Whisk honey into juice. Arrange layers of orange segments, grapefruit segments and starfruit slices in a clear glass serving dish. Top with grapes. Pour sweetened juice over fruit and garnish with zest. Chill at least 1 hour before serving.

1 banana, peeled and thinly sliced
1/2 cup sweetened shredded coconut
1 cup orange juice
3 tablespoons lemon juice
2 tablespoons honey (optional)
Splash of Cointreau (optional)

Steps:

  • In a glass serving bowl, form a single layer of orange slices and top with a few slices of banana. Sprinkle a thin layer of coconut over the top. Repeat layering until all of these ingredients are finished, reserving a tablespoon of the coconut. Stir together the juices and honey, if using, and pour over the fruit. Follow with the Cointreau, if desired, and a final sprinkling of coconut. Serve immediately or cover and refrigerate for several hours.
