You can quickly and easily stir together a pan of bakery-style Honey Cornbread that's moist, fluffy, buttery, and way better than a box of Jiffy mix!

1 cup all-purpose flour
1 cup yellow cornmeal
¼ cup granulated sugar
1 tablespoon baking powder
½ teaspoon salt
2 large eggs, at room temperature
1 cup buttermilk
¼ cup honey
2 tablespoons salted butter, melted
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 400° F. Grease an 8-inch or 9-inch square baking pan. Set aside.
  • In a large bowl, whisk together flour, cornmeal, granulated sugar, baking powder and salt.
  • In a separate bowl, whisk together eggs, buttermilk, honey, melted butter and oil. Add the wet ingredients to the dry ingredients, stirring just until combined. Do not over-mix.
  • Pour batter into prepared baking pan. Bake for 20-22 minutes, or until a toothpick inserted in the center comes out clean. Slice into squares and serve warm.

1 cup all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, room temperature
1 cup heavy whipping cream
1/4 cup canola oil
1/4 cup honey

Steps:

  • In a bowl, combine flour, cornmeal, sugar, baking powder and salt. In a small bowl, beat the eggs. Add cream, oil and honey; beat well. Stir into the dry ingredients just until moistened. Pour into a greased 9-in. square baking pan. , Bake at 400° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Serve warm.

Steps:

  • Preheat oven to 400 degrees F.
  • Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed.

1 cup all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
Coarse salt
1/8 to 1/4 teaspoon cayenne pepper
1 large egg
1 cup goat's milk
4 tablespoons melted unsalted butter, plus 1 tablespoon room temperature
Finely grated zest of 1 lemon (about 1 teaspoon)
2 tablespoons honey

Steps:

  • Preheat oven to 400 degrees. Whisk together cornmeal, flour, sugar, baking powder, 1 teaspoon salt, and the cayenne pepper to taste. Whisk together egg and milk. Gently stir milk mixture into cornmeal mixture. Stir in melted butter and zest.
  • Meanwhile, place remaining tablespoon butter in an 8-inch ovenproof skillet (preferably cast iron) or an 8-inch round cake pan or pie dish. Heat in oven until melted and foaming, about 2 minutes. Remove from oven, and pour batter into skillet. Bake until top is golden and a toothpick inserted into the center comes out clean, about 25 minutes. Brush top with honey; let cool.

3 cups milk (scalded)
2 teaspoons salt
2/3 cup cornmeal
2/3 cup honey
3 tablespoons butter
1 (1/4 ounce) package dry yeast
1/4 cup warm water
6 1/2-7 cups flour

Steps:

  • Mix the yeast and the warm water together to proof.
  • In a separate bowl put the milk, salt, cornmeal, honey, and butter (make sure the butter melts in the hot milk); mix well.
  • Add 3 cups of the flour and mix well.
  • Add the proofed yeast and mix well.
  • Add the rest of the flour gradually, mixing to make a good dough.
  • Knead for about 10 minutes or 100 times.
  • Put in oiled bowl and let rise till double.
  • Punch down and rise again till double.
  • Divide in half and place in two greased bread pans and rise again.
  • Bake at 375 degrees for 40-45 minutes.
  • If the tops get browner than you like during the last part of baking, put foil around them.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
3/4 cup 2% milk
1/3 cup sugar
1/3 cup butter, melted
1 egg
3/4 cup cornmeal
1 teaspoon salt
3-1/2 to 4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, butter, egg, cornmeal, salt and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 45 minutes. , Punch dough down. Divide in half and shape into two loaves. Place in greased 8x4-in. loaf pans. 1 package dry yeast
1/4 cup warm water
2/3 cup cornmeal
2 teaspoons salt
3 cups milk
2/3 cup honey
3 tablespoons butter
6 1/2-7 cups flour

Steps:

  • Dissolve yeast in warm water and let sit to proof some.
  • In a large bowl combine the cornmeal and salt.
  • Heat the milk (about 115 degrees), butter, and honey in a saucepan and add slowly to the cornmeal, stirring all the time.
  • Add 3 cups of the flour and mix well.
  • Add yeast mixture stirring well.
  • Add the rest of the flour gradually to make a stiff dough.
  • Knead 100 times and place in a greased bowl to rise till double--about 1 hour.
  • Punch down and rise again till double for about 1/2-3/4 hour.
  • Turn onto floured counter and divide into two pieces.
  • Form into 2 loaves and put in greased pans.
  • Rise again till double.
  • Bake 375 degrees for about 40-45 minute.
  • If they start getting too brown, cover with aluminum foil.
