Steps:
- Preheat oven to 400 degrees F (200 degrees C). Prepare 12 muffin cups with cooking spray.
- Mix flour, baking powder, stevia, cinnamon, sea salt, and nutmeg together in a large bowl. Beat skim milk, egg, and margarine together in a separate bowl; add to flour mixture and stir just until the dry mixture is moistened. Gently fold minced apple through the batter. Spoon batter into the prepared muffin cups.
- Bake in preheated oven until lightly browned on the tops, about 25 minutes.

Steps:
- Preheat oven to 400°F Lightly coat 6 muffin tin cups with cooking spray.
- In a small bowl, mix together the milk, egg white, honey, butter or margarine and applesauce.
- In a medium bowl, combine crumbled cereal, flours, baking powder, cinnamon and nutmeg.
- Add the liquid ingredients, stirring just until moistened. Add the raisins & stir gently.
- Spoon into muffin cups, 3/4 full or more.
- Bake for 15-20 minutes or until they test done. Don't overbake.

- In a large bowl, combine flours, baking powder and salt. In another bowl, beat egg, honey, milk, oil and lemon zest; stir into the dry ingredients just until moistened. , Fill greased muffin cups three-fourths full. Bake at 375° for 18-20 minutes or until muffins test done. Cool in pan for 10 minutes before removing to a wire rack.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin.
- Place dried cranberries in a bowl with hot water to cover. Let stand to rehydrate, 3 to 5 minutes.
- Meanwhile, mix flour, 1/2 cup sugar, cinnamon, ginger, baking powder, baking soda, salt, nutmeg, allspice, and cloves together in a large bowl.
- Whisk egg whites together in a separate bowl. Gently fold in pumpkin puree, applesauce, honey, molasses, and vanilla extract.
- Create a well in the flour mixture and fold in pumpkin mixture. Mix until just combined. Drain water from cranberries and fold into the batter.
- Spoon batter into the prepared muffin cups, filling each almost full. Top each muffin with additional cranberries, a sprinkle of sugar, and a dash of pumpkin spice.
- Bake muffins in the preheated oven until tops are no longer sticky and a toothpick inserted into the center of a muffin comes out mostly clean, 18 to 20 minutes. Let cool in the pan for 5 minutes before transferring muffins to a wire rack to cool completely.
