- In a 6-qt. slow cooker, combine all ingredients. Cover and cook on low for 3-4 hours or until heated through. If desired, garnish with apple pieces and additional cinnamon sticks.

HOT BUTTERED CIDERS

- In the sleeve of a slow cooker, combine the cider, brown sugar, and orange halves. Cook on low for 2 hours.
- Stir together the butter and pumpkin pie spice in a small bowl. Cover and refrigerate until ready to use.
- Pour the hot cider into mugs and top with a spoonful of the flavored butter. For adults, pour 1 ounce of brandy into each mug.
HOT MAMA BUTTERSCOTCH

- In a heavy saucepan, melt the butter over medium heat. As soon as the butter is melted, add the brown sugar and cook until bubbly, stirring occasionally. Reduce the heat and whisk in the heavy cream. Once the cream is incorporated, bring back to medium heat and cook for 10 minutes, stirring occasionally. Remove from the heat and whisk in the vanilla, apple cider vinegar, cayenne pepper and salt. Mix well, making sure there are no lumps.

- Put the butter in a medium saucepan and add both sugars. Cook over medium heat until the butter is melted, whisking to combine, then cook, stirring constantly with a heatproof spatula or a wooden spoon, until the butterscotch begins to smoke, 5 to 10 minutes. Reduce the heat to medium-low and continue cooking and stirring until the butterscotch is very dark and registers 300°F (150°C)-or very slightly above-on an instant-read thermometer, about 10 minutes.
- Remove from the heat and very carefully whisk in the water to stop the cooking. Whisk in the cream, then whisk in the milk, rum, if using, and salt. Gently reheat over low heat, stirring (the acid in the sugars will cause the mixture to break if overheated). Drink right away, or pour into a Thermos for sipping later.
- Do Ahead: The butterscotch drink can be made ahead, cooled, transferred to a lidded container, and refrigerated for up to 5 days. Reheat as instructed in step 2 above.
HOT APPLE CIDER
Nothing beats a mug of hot cider on a cold winter day. This recipe is great as it calls for fresh apple cider and pure maple syrup. Start with only 6 strips each of the orange and lemon peel, and adjust to taste.

- Pour the apple cider and maple syrup into a large stainless steel saucepan.
- Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture.
- Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling.
- Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving if desired.

- Make the custards: Melt butter in a large saucepan over medium heat. Add brown sugar and cook, stirring, until dissolved. Remove from heat and stir in 1 cup cream and the vanilla.
- Add remaining 1 1/2 cups cream, the milk, and salt to the brown-sugar mixture. Bring to a simmer over medium-high heat. Pour about 1/3 of the cream mixture into the egg yolks, whisking constantly. Still whisking, add to the remaining cream mixture in pan. Pour through a fine sieve into a bowl. Place plastic wrap directly on surface to prevent a skin from forming. Refrigerate for at least 2 hours (or up to 2 days).
- Preheat oven to 325 degrees. Divide custard among six 6-ounce heatproof glasses or custard cups. Place in a roasting pan. Add enough hot water to pan to reach 2/3 of the way up sides of glasses. Cover pan with foil, and prick all over with a fork. Bake for 25 minutes. Carefully loosen a corner of the foil. Continue to bake until edges of custard are set but centers are still wobbly, 10 to 15 minutes more. Transfer glasses to a wire rack to cool. Cover, and refrigerate overnight.
- Make the caramel: Combine granulated sugar, water, and corn syrup in a small saucepan. Cook over medium-high heat, stirring, until sugar dissolves. Raise heat to high, and cook until mixture turns medium amber, about 3 minutes (swirl pan gently to distribute color). Carefully stir in apple cider (it will spatter). Let cool. Drizzle caramel over custards, or serve it on the side.

A 'spiked' version of the traditional hot cider - great for fall or holiday gatherings. This can be made in large quantities and kept warm in an electric coffee server.

- Pour water into a large saucepan and bring to a boil. Remove from heat and toss in the orange spice tea bags. Cover and let steep 5 minutes. Remove tea bags and stir in sugar, apple cider, rum, and 2 of the cinnamon sticks. Heat just to steaming -- do not boil.

HOT CARAMEL APPLE CIDER
One morning when it was really cold and raining out, I was doing my Crossing Guard job at the corner I "work" at. A few yards from the corner is a small Espresso/coffee hut. After I got done and was getting ready to leave the corner, one of the girls who works at the espresso hut came up to me and asked me if I wanted either a hot chocolate or a Hot Caramel Apple Cider. I opted for the Hot Caramel Apple Cider. I was so cold and wet that I drank it hot without letting it cool off at all!! It was so good and it immediately started to warm me up. I could taste the caramel in it. A couple of days later when I got one on my own I asked what was in it and the girl who gave me my first one, told me. I think I have the right amounts of ingredients. You can add more caramel sauce and/or vanilla to suit your taste. This recipe can easily be multiplied to serve more people. I am sure you could use apple juice if you don't have apple cider on hand.
