HUNTERS CHICKEN | SLIMMING & WEIGHT WATCHERS FRIENDLY
Our twist on a popular family favourite, Hunters Chicken is perfect for people counting calories or following a diet plan like Weight Watchers!

Steps:
- Take each chicken breast, wrap a bacon medallion around the middle and secure it with a cocktail stick
- Set the chicken aside, then add all of the remaining ingredients into the slow cooker and stir well
- Place the chicken on top and replace the lid. Cook on high for 2.5 - 3 hours (or low if you're leaving it on all day)
- When the time is up check that the chicken is cooked. Remove it from the slow cooker and set aside
- Blitz the sauce with a stick blender until smooth
- Place the cooked chicken in an ovenproof dish and remove the cocktail sticks
- Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all for chicken breasts
- Place under a hot grill until the cheese is melted and a nice golden colour

- Place the chicken on top and replace the lid. Cook for 1 hour at 180°C
- When the time is up check that the chicken is cooked. Remove it from the dish and set aside

- Place the cooked chicken in an ovenproof dish and remove the cocktail sticks
- Pour the sauce over the chicken breasts and top with cheese. Divide the cheese equally between all for chicken breasts
- Place under a hot grill until the cheese is melted and a nice golden colour

- Carefully Slice the two chicken breast into 4 cutlets, by using a sharp knife to cut the chicken breasts in half crosswise. Place the cutlet in a ziplock bag one at a time and use a meat tenderiser or rolling plan to flatten. Set aside.
- Add in all other ingredients for the sauce, bring to a boil, reduce heat slightly, cover and and let the sauce bubble to reduce down and really thicken (approx 10 minutes, don't put the heat too low), ensure you let the sauce reduce down and thicken before proceeding to the next steps, or your sauce will be too runny.
