MOJITOS BY THE PITCHER



Mojitos by the Pitcher image

I have served this to people who have sworn that they dislike mojitos and they love it. I believe it is the fresh ingredients and the use of sugar, instead of simple syrup, muddled together that makes this cocktail refreshing and delicious. It takes a little bit of work but the results are well worth it. Serve over ice.

½ cup white sugar
36 leaves fresh mint, or to taste
3 limes, quartered
1 cup rum (such as Bacardi®)
1 liter club soda

Steps:

  • Muddle sugar and mint leaves together in pitcher until leaves are well broken down. Add limes and muddle until limes are juiced. Stir rum into sugar mixture; add club soda and stir until sugar is dissolved.

fresh mint sprig, plus more for garnish
1/4 cup seedless watermelon, cubes (1/2 inch)
1/4 cup pineapple chunk (1/2 inch)
1 lime, quartered into wedges, plus more wedges for garnish
ice cube, as needed
3 ounces or 3 shots white rum
1/2 cup pineapple juice
1 dash sugar cane syrup or simple syrup

Steps:

  • Using a mortar and pestle, crush or muddle some fresh mint.
  • Spoon in the watermelon and pineapple cubes, and crush them bit by bit. Toss in the lime quarters, and continue mashing.
  • Then, in a cocktail shaker, add 1/2 cup ice cubes, all of the fruit and mint mojito mixture, then add the rum, pineapple juice, and finally, a dash of sugar cane syrup. Shake well to combine.
  • Divide between 2 hefty glasses garnished with lime wedges and mint sprigs.

When you are ready to serve, just squeeze a lime wedge over ice in a stylish rocks glass, drop the wedge in the glass along with a few fresh mint leaves, and then fill the glass two-thirds of the way with the mojito. Top it off with club soda. Let the party begin!!!! :)

15 ounces light rum (I'm partial to Bacardi...2 cups minus 2 tablespoons)
10 ounces freshly-squeezed lime juice (1 1/4 cups, juice from about 7 limes)
10 ounces simple syrup with mint (recipes follows)
2 cups sugar
2 cups water
25 fresh mint leaves
lime wedge
mint leaf
club soda
ice

Steps:

  • TO MAKE THE PITCHER OF MOJITOS: In a large pitcher, stir together the rum, lime juice, and syrup. Serve at once or refrigerate until needed. Do NOT add ice to the pitcher.
  • TO MAKE THE SIMPLE SYRUP WITH MINT: In a saucepan, mix together the sugar and water and heat over medium-high heat. Let the syrup cook for a couple of minutes or until the sugar dissolves and the syrup looks clear. This will be about the time it takes for the syrup to begin to bubble. Remove from the heat and add the mint leaves. Cover and set aside for about 10 minutes, so the mint can infuse the syrup. Strain the syrup and use immediately or store in a lidded container for up to 1 week.
  • TO SERVE: When ready to serve, squeeze a lime wedge over the ice in a rocks glass. Drop the lime wedge into the glass along with a few fresh mint leaves. Fill the glass two-thirds full of the mojito mixture and top off with club soda.
