4 cups generous cups red potatoes, (quartered)
2 cans cut green beans, (drained)
1-1 1/2 lb chicken breasts, (4 chicken breasts)
1 stick butter, (cut into pieces)
1 1/2 Italian dressing seasoning/mix packets

Steps:

  • Pre-heat oven to 350 degrees.
  • Line one side of the pan with green beans. Cut potatoes up. Line opposite side of pan with the potatoes. Line the chicken breasts down the middle of the baking dish. Cut butter up and layer over the green beans, potatoes and chicken. Sprinkle Italian dressing over the entire pan.
  • Cover with foil. Bake 1 hour.

1 lb. chicken breasts
1 lb. green beans
1 12 oz. package cherry tomatoes
3 Tbsp. olive oil
2 tsp. Italian seasoning
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. red chili flakes
1/2 tsp. kosher salt
1/2 tsp. pepper
1/2 cup Parmesan cheese
fresh basil or herb of choice (optional)

Steps:

  • Heat oven to 400 degrees.
  • Wash and trim the ends from 1 lb. of fresh green beans.
  • Cut 1 lb. worth of chicken breasts in half. This will ensure that everything cooks evenly.
  • Place the green beans on a baking sheet. Nestle the chicken breasts in between the green beans. Drizzle 3 Tbsp. of olive oil over the chicken and green beans making sure to coat everything evenly.
  • Sprinkle 2 tsp. Italian seasoning, 1 tsp. each of garlic and onion powder, 1/2 tsp. red chili flakes, and 1/2 tsp. each of salt and pepper over the green beans and chicken. Make sure both sides of chicken are spiced.
  • Pour 1 12 oz. container of cherry tomatoes over the sheet pan arranging them in between the green beans.
  • Place the baking sheet in the oven and cook for 30 minutes. (Cooking times may vary slightly. Feel free to check at the 25 minute mark and continue baking until the chicken is cooked through).
  • Remove the baking sheet from the oven and sprinkle 1/2 cup of shredded or shaved Parmesan cheese over the top allowing it to melt slightly.
  • To Serve: Garnish with fresh basil or herb (fresh or dried) of choice.

Braised Italian Chicken with Green Beans, Tomatoes & Olives image

What could be simpler for a weeknight supper than a one-pot meal? This one comes together with chicken thighs and a few other ingredients you likely already have in your pantry or growing in your garden.

2 lb. boneless, skinless chicken thighs, trimmed of excess fat and each cut into 3 uniform pieces
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
2 to 3 Tbs. extra-virgin olive oil
3/4 lb. green beans, trimmed and cut in half
3 cloves garlic, smashed and peeled
1/3 cup dry red wine
1 14-1/2-oz. can diced tomatoes
1 tsp. chopped fresh rosemary
1/2 tsp. crushed red pepper flakes
1/3 cup pitted, quartered Kalamata olives

Steps:

  • Season the chicken with 1 tsp. salt and 1/2 tsp. black pepper. Spread the flour on a plate, and lightly dredge the chicken in the flour. Heat 2 Tbs. of the oil in a large Dutch oven or casserole over medium-high heat until the oil is shimmering hot. Cook the chicken in two to three batches (to avoid crowding the pot) until well browned on both sides, 2 to 3 minutes per side. Transfer each batch to a plate as it finishes, and if the pot looks dry between batches, add the remaining 1 Tbs. oil.
  • Return the chicken to the pot, add the green beans, garlic, 1/2 tsp. salt, and 1/2 tsp. black pepper, and cook, stirring, for 2 minutes. Add the red wine and cook until it almost completely evaporates, 1 to 2 minutes. Add the tomatoes and their juices, rosemary, and red pepper flakes. Bring to a boil, then lower the heat to a steady simmer. Cover, leaving the lid slightly ajar, and cook, stirring occasionally for 15 minutes. Add the olives, and continue simmering with the lid ajar until the chicken and green beans are very tender, about 5 minutes more. Season with salt and pepper to taste. Serve immediately.

This may look like just plain chicken and green beans, but by dropping the oven temperature to 325 degrees and slow roasting for 1½ hours, these simple ingredients become so much more: The green beans, which are tossed with olive oil, sage and garlic, will no longer be snappy and bright green, but will slouch and sweeten. The chicken will be tender enough to pull apart with your fingers. (Its skin will be crisp but pale, so for browner skin, broil for a few minutes after roasting.) And the flavorful chicken drippings will mingle with the aromatics on the sheet pan, creating a spectacular, no-effort pan sauce.

1 1/2 pounds green beans, trimmed
Cloves from 1 head garlic (about 10 cloves), smashed and peeled
15 fresh sage leaves
6 tablespoons extra-virgin olive oil
Kosher salt (Diamond Crystal) and black pepper
2 1/2 to 3 pounds chicken leg quarters or bone-in, skin-on chicken thighs, patted dry
1 teaspoon sherry vinegar, apple cider vinegar or white wine vinegar

Steps:

  • Heat the oven to 325 degrees. Toss the green beans, garlic cloves and sage leaves with ¼ cup of the olive oil. Season with salt and pepper, and arrange in an even layer on a sheet pan. Rub the chicken with the remaining 2 tablespoons oil and 1 tablespoon salt. Arrange among the green beans and season with black pepper; scoot any green beans out from under the chicken. (It's okay if the green beans are clumped together.) Roast, tossing the green beans occasionally, until the chicken is cooked through, and the green beans are dark green and wrinkled, about 1 hour 30 minutes.
  • Transfer the chicken to a platter. Stir the vinegar into the green beans and season with salt and pepper to taste. Transfer the green beans and garlic to the platter, scraping all the pan drippings and browned bits from the pan.
  • Eat the chicken with the green beans, cloves of roasted garlic and a spoonful of the pan drippings. Optionally, if you'd like the chicken's skin to be more browned, return the chicken to the sheet pan and broil until golden.
