These make great appetizers for a party or a first course for dinner, or a yummy snack. You could put these in the lunch box too! Adapted from Rachael Ray's Big Orange Book.

12 large hard-boiled eggs, peeled
1 small garlic clove
1/4 small onion
2 tablespoons capers, drained and chopped (if using salt packed capers, soak in a little milk and drain)
1 lemon, juice and zest of
hot sauce
3 -4 tablespoons mayonnaise (just enough to bind)
1 teaspoon coarse black pepper
3 tablespoons fresh flat leaf parsley, finely chopped

Steps:

  • Cut the rounded ends off the eggs, scoop out the yolks into a bowl, and stand the hard bouled egg whits upright in the egg carton. If you wish to serve the eggs on a platter, trim a small piece of the egg off the pointed ends so they will stand upright.
  • Break the egg yolks up a little bit using a fork. Grate the garlic into the egg yolks, then grate about 2 tbls. of onion juice into the bowl. add the capers, 1 tsp of lemon zest, the juice of the lemon, a few dashes of hot sauce, the mayonnaise, pepper, and half of the parsley. Mash until smooth and check seasonings, adjusting if necessary.
  • Fill the egg whites, overstuffing them a little. Garnish with the remaining parsley. Enjoy!

I love deviled eggs. Love. I always say, "It's not a party at my house without deviled eggs." It's hard to beat the classic rendition, but every now and then I'll mix things up. I came up with this recipe for a dinner I cooked at the South Beach Wine and Food Festival, where I topped them with fried oysters. They're obviously delicious that way (anything fried, am I right?), but I like them just as well without the garnish. I've made them with lemon and capers so many times now, I have almost forgotten what they taste like plain!

12 large eggs
1 cup mayonnaise
1 tablespoon yellow mustard
2 teaspoons capers, rinsed and drained
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 small clove garlic, grated
Zest of 1 lemon
Paprika, for garnish
Chopped parsley, for garnish

Steps:

  • Fill a large saucepan with water and bring to a boil over high heat. With a ladle, slowly lower the eggs into the water, one by one. Reduce the heat to a low boil and cook for 10 minutes. Drain. When they are cool enough to handle, peel the eggs.
  • Slice each egg in half lengthwise. Remove the yolks and place them in a food processor. Arrange the whites, cut-side up, on a serving platter. Blitz the egg yolks by themselves for about 10 seconds. To the yolks, add the mayo, mustard, capers, salt, pepper, garlic and lemon zest. Process until well blended and smooth, scraping down the sides as necessary.
  • Transfer the mixture to a resealable plastic bag. Seal the bag, then use scissors to snip off the tip of one of the bottom corners to form a small hole. Pipe the egg yolk mixture into the egg whites or store the egg whites and yolk mixture separately in the fridge until ready to fill and serve, one to two days. Garnish the filled eggs with paprika and parsley and serve immediately.

The amount of capers is only approximate;you will use more or less depending on the size of the capers and your personal taste.The recipe for these tasty hors d'oeuvres is from one of my favorite cookbooks,Passionate Vegetarian by Crescent Dragonwagon.

10 eggs
1/4 cup mayonnaise
1 large lemon
salt, to taste
1/2 teaspoon fresh ground white pepper (or to taste)
30 small capers (you may use larger capers,cut into smaller pieces )
20 leaves flat leaf parsley, washed and dried (Italian parsley)

Steps:

  • Place eggs in a medium -large pot,one with room enough so that the eggs do not touch.Cover with cold water(the eggs should be completely covered).
  • Bring the eggs to a rolling boil over medium heat.
  • Once the water is boiling,cover the pot and remove from the heat source.Let the eggs sit,covered for 15 minutes.
  • Remove the eggs,rinse under cold water,and peel.Cut each egg in half,lengthwise,and scoop out the yolk.
  • Mash the yolk with a fork,add mayo.
  • Was the lemon well,dry,and zest the entire lemon with a microplane or the finest holes on a grater.Add the zest to the yolk mixture.Juice the lemon and add about 1 teaspoon of the juice to the yolks as well,reserving the remaining juice for some other use.Season with salt and white pepper.
  • Restuff the eggs with the yolk mixture.
  • Garnish each egg with a few of the capers.I sometimes prefer to mix the capers into the yolks to get an even distribution of flavor,the choice is yours.
  • Finally,garnish each egg half with a leaf of parsley .
  • Chill the eggs if you are not serving them right away.
  • You may sprinkle these with a bit of paprika or cayenne if you want to add the classic deviled egg touch.

The stuffed eggplant is a classic from the Puglia region and throughout the south of Italy. When summer comes and I find small seedless eggplants, I prepare them very often. I add olives and capers to the filling; they blend very well with the flavor of eggplant. These taste even better if prepared in advance, even the day before.

9 small eggplants, halved lengthwise
2 eggs
1 cup grated Parmesan cheese
2 tablespoons capers
2 tablespoons pitted and sliced black olives
2 (16 ounce) cans tomato sauce, divided
1 bunch fresh parsley, chopped
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange eggplant halves cut-side up in a baking pan. Cover with aluminum foil.
  • Bake in the preheated oven until tender, about 20 minutes. Cool until easily handled, 5 to 10 minutes. Increase oven temperature to 400 degrees F (200 degrees C).
  • Scoop pulp out of the eggplants using a spoon, leaving skins intact. Chop pulp coarsely and transfer to a bowl. Mix in eggs, Parmesan cheese, capers, and olives. Add 2 tablespoons tomato sauce, parsley, salt, and pepper. Stuff eggplant skins with mixture.
  • Spread half of the remaining tomato sauce in the bottom of a baking dish. Arrange stuffed eggplants on top. Spoon remaining tomato sauce over each eggplant.
  • Bake in the preheated oven until topping is golden brown and tomato sauce is bubbly, 25 to 30 minutes.

1 (28-oz) can whole tomatoes in juice (preferably Italian)
3 tablespoons olive oil
4 garlic cloves, finely chopped
1 1/4 cups water
2 tablespoons tomato paste
1 teaspoon sugar
3/4 teaspoon salt
2 tablespoons chopped fresh basil
For eggplant and stuffing
4 small Italian eggplants (1 1/2 lb total; preferably with stem attached
1/2 cup long-grain white rice
3/4 cup water
3 slices firm white sandwich bread, torn into 1-inch pieces
1/4 cup whole milk
3 garlic cloves, minced
2 large eggs, lightly beaten
3 oz finely grated Pecorino Romano (1 1/4 cups)
1/3 cup chopped fresh flat-leaf parsley
1/3 cup chopped fresh basil
1 teaspoon salt
1 teaspoon black pepper
About 2 cups vegetable oil

Steps:

  • Make sauce:
  • Drain tomatoes, reserving juice, then finely chop. Heat oil in a 4- to 5-quart heavy pot over moderately high heat until hot but not smoking, then cook garlic, stirring, until golden, about 1 minute. Add tomatoes with reserved juice, water, tomato paste, sugar, and salt and bring to a boil. Reduce heat and simmer, uncovered, stirring occasionally, until thickened, about 30 minutes. Stir in basil.
  • Boil eggplants and make filling while sauce simmers:
  • Bring a 5- to 6-quart pot of salted water to a boil over moderately high heat.
  • Prick eggplants all over with a fork. Boil eggplants, uncovered, stirring occasionally, until tender when pierced with a knife, 20 to 25 minutes. Transfer with a slotted spoon to a colander to drain and discard cooking water. When eggplants are cool enough to handle (after about 15 minutes), halve eggplants lengthwise through stem (keep stem attached). With a small sharp knife, scoop out and reserve flesh, leaving 1/4-inch-thick shells. Very finely chop flesh and transfer to a large bowl.
  • Bring rice and water to a boil in a 1-quart heavy saucepan, uncovered, then reduce heat and simmer rice, covered, until water has been absorbed and rice is tender, about 15 minutes. Remove from heat and let stand 5 minutes. Fluff rice with a fork and add to chopped eggplant.
  • While rice cooks, combine bread and milk in a small bowl and let stand until bread has absorbed milk, then gently squeeze bread, discarding any milk.
  • Add bread to rice mixture along with garlic, eggs, cheese, parsley, basil, 1/2 teaspoon salt, and 1/2 teaspoon pepper and stir to combine well.
  • Sprinkle inside of eggplant shells with remaining 1/2 teaspoon salt and 1/2 teaspoon pepper. Firmly pack a scant 1/3-cup eggplant stuffing into each eggplant shell. (You may have some stuffing left over.)
  • Fry and bake eggplants:
  • Put oven rack in middle of oven and preheat oven to 375°F.
  • Heat 1 inch vegetable oil in a 10-inch cast-iron or other deep heavy skillet over moderate heat until thermometer reaches 320°F and add 2 eggplant halves, stuffing sides up. Fry, turning over once using 2 slotted spoons, until golden brown, 5 to 8 minutes total. Transfer, stuffing sides up, to paper towels to drain, then fry remaining eggplants, 2 halves at a time, in same manner, returning oil to 320°F between batches.
  • Spoon sauce into a 3-quart (about 13- by 9-inch) nonreactive baking dish. Add eggplants, stuffing sides up, and bake, covered with foil, until sauce is bubbling, about 25 minutes.
