small pack basil , very finely chopped, plus a few small leaves to serve
4 tbsp extra virgin olive oil
600g tomatoes (a selection of sizes and colours looks good)
1 small red onion , finely sliced
175g chargrilled artichokes in oil, from a jar

Steps:

  • Make the dressing by combining the chopped basil with the olive oil in a small bowl. Season well.
  • Slice the larger tomatoes, leaving smaller ones whole or halved. Lay them on a platter, then top with the onion slices and artichokes. Scatter over the basil leaves, drizzle over the dressing and add a good grinding of black pepper.

Steps:

  • Place the sliced mozzarella on a serving platter, sprinkle the slices with the olive oil and cracked pepper. Artfully arrange the salami, Peppadews, cucumber slices, artichoke hearts, tomatoes, olives and Bruschetta around the platter and decorate with stems of basil leaves.
  • Preheat the oven to 425 degrees. Slice the baguette at an angle 1/2-inch-thick. Brush both sides of the bread with olive oil and sprinkle one side with salt and pepper. Bake for 10 minutes, until lightly toasted.

1/2 cup fresh mozzarella, torn into small pieces
1/2 cup goat cheese crumbles
1 tablespoon Italian seasoning (recommended: McCormick)

Steps:

  • Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper; set aside.
  • Roll out each puff pastry sheet to a 12 by 14-inch rectangle. Place on the baking sheet and fold over the edges of each pastry to form a 1/2-inch border. Prick the bottom of pastry with a fork; set aside.

1 (28-ounce) can whole peeled tomatoes, preferably Italian San Marzano, drained
1 1/2 cups dry white wine
1/2 teaspoon crushed red pepper flakes
2 teaspoons kosher salt, plus more
1 cup olive oil, divided
12 salt-packed anchovy fillets, rinsed, patted dry
8 garlic cloves
1 cup (lightly packed) mint leaves
6 medium artichokes
2 lemons, halved

Steps:

  • Place tomatoes in a large Dutch oven or other heavy pot, crushing with your hands; add wine, red pepper flakes, 2 tsp. salt, 1/2 cup oil, and 2 cups water; set aside.
  • Pulse anchovies and garlic in a food processor until finely chopped. Add mint and pulse until coarsely chopped. With the motor running, stream in remaining 1/2 cup oil; process until a coarse paste forms. Set pesto aside.
  • Remove several layers of dark-green outer leaves from artichokes (keep going until you get to the tender light-green leaves). Using a serrated knife, cut off top 1" of artichokes and trim stem ends. Rub cut ends with lemon halves to prevent browning. Working with 1 artichoke at a time, use a paring knife or vegetable peeler to remove tough outer green layer from base and stem to reveal pale-green underneath; rub all over with lemon. Halve through stem and rub cut sides with more lemon. Use a spoon to scoop out choke, then pull out spiky inner leaves; rub insides with lemon. Rub reserved pesto all over artichoke halves and place artichokes in a single layer inside reserved pot, submerging in tomato mixture.
  • Bring to a simmer over medium-low and cook, turning artichokes occasionally, until hearts are fork-tender, 55-65 minutes. Transfer artichokes to a platter and tent with foil to keep warm.
  • Increase heat to medium, bring sauce to a boil, and cook until slightly thickened, 10-15 minutes. Taste and season with more salt if needed. Spoon over artichokes.

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion and garlic; cook and stir until softened, about 5 minutes. Add artichoke hearts, tomatoes, vegetable broth, roasted bell peppers, basil, herbes de Provence, salt, and pepper; reduce heat and simmer, covered, until flavors combine, about 20 minutes.
  • Transfer artichokes, tomatoes, and roasted bell peppers to a blender using a slotted spoon; puree until smooth.
  • Stir half-and-half into the broth mixture in the pot. Add pureed artichoke mixture; stir slowly until blended. Stir in Parmesan cheese before serving.

My daughter works at an Italian restaurant and brought home something similar to this. We experimented and here it is. I love the fact that this doesn't need to be cooked--it's so fresh! The better your tomatoes are, the better this will be. I like to use grape tomatoes or roma. Please feel free to adjust any ingredient amounts to your taste. I love the capers in this and will usually add more, and 1/4 C oil is plenty for me. Cook time is for your pasta. (You can add very thin slivers of sweet or red onion, though I haven't tried it).

1 1/2 cups fresh tomatoes, chopped small
1 (2 1/4 ounce) can black olives, chopped small
1 cup artichoke heart, chopped small
1/4 cup capers
1/4 cup chopped fresh basil (I like to snip it with kitchen shears right into the measuring cup)
1/4-1/2 cup olive oil
1 teaspoon italian seasoning, more to taste
3 -5 dashes Mrs. Dash seasoning mix
salt & pepper
crushed red pepper flakes, to taste (optional)

Steps:

  • Mix all ingredients, taste, and adjust seasonings to your liking.
  • Put aside to let flavors blend (not in frig!) while you cook up your pasta.
  • Angel hair works best for this.
  • I would use 8 oz, but then I like LOTS of flavor so for some 16 oz of pasta may be fine.
  • When pasta is done, drain, then immediately toss with tomato mixture.
  • Add more oil if needed.

1/2 cup red wine or 1/2 cup Italian vinaigrette dressing, divided
1/2 cup roma tomato, chopped
1/2 cup green bell pepper, chopped
1 garlic clove, chopped
1/2 teaspoon italian seasoning or 1/2 teaspoon dried basil
assorted lettuce (optional)
1/4 cup shredded parmesan cheese or 1/4 cup asiago cheese

Steps:

  • Wash artichokes; trim off stem and any small leaves.
  • Cut off one-quarter of the leaf tips.
  • Quarter artichokes; use a spoon to scrape out the fuzzy choke.
  • In a Dutch oven cook artichokes and 2 tablespoons of vinegar, covered, in boiling salted water for 10 minutes or tender and a leaf pulls off easily.
  • Drain; rinse in cold water and drain again.
  • Meanwhile, in a small bowl stir together remaining vinaigrette, tomato, bell pepper, garlic, and Italian seasoning.
  • Arrange artichoke quarters on a serving platter or individual plates lined with lettuce, if desired.
  • Spoon dressing mixture over artichokes.
  • Sprinkle with cheese.
