- Core tomatoes and slice in half. Top the cut side of each tomato half with ¼ teaspoon garlic powder, ¼ teaspoon oregano and ¼ teaspoon dried minced onion. Salt to taste. Sprinkle ½ ounce of grated cheese on top of the herbs Broil on low (or high as needed) until cheese is melted and tomato is slightly softened and warm. Best served warm but good cold as well.

- Preheat broiler to medium high.
- Cut plum tomatoes in 1/2 lengthwise. Squeeze or scoop out most of the pulp and seeds. Place the tomatoes flesh side up in a heat safe dish and season them with salt and pepper. In a bowl combine the bread crumbs, Parmigiano, thyme, garlic and olive oil. Season mixture with pepper and sprinkle over the tomatoes. Place tomatoes under the broiler for 5 minutes or until golden brown

Steps:
- Cut the tomatoes in half horizontally.
- Place them on a baking sheet, skin side up, and broil them for 2 minutes, then turn.
- You may prefer to line the baking sheet with parchment paper, because the tomatoes will drip some juice.
- Mix together the garlic, olive oil and parsley and drizzle over the tomatoes.
- Season with salt and pepper.
- Place the tomatoes back under the broiler and cook for 6 minutes or until cooked.
- Serve hot or warm.
ITALIAN STYLE TOMATO BREAD

- Heat about 1/4 cup extra-virgin olive oil in a small skillet over medium heat. Add the chile and garlic and saute for 2 to 3 minutes. Turn off the heat and cool a couple of minutes.
- Halve the bread across horizontally and toast or char.
- Halve the tomato across horizontally and rub the flesh vigorously into the toasted surface of the bread and season with salt, to taste. If you are garnishing with anchovies skip the salt. Dress the tomato bread with chile oil and garnish with capers, olives and anchovies, if using. Cut into serving portions and serve.

I made this recipe into a family favorite. We have a big garden each year, so most of the ingredients come right from the garden.

Steps:
- Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
- Remove the cores of the tomatoes then cut them in half (horizontally).
- Place cut side up: then rub Olive oil over cut side (use fingertip).
- Sprinkle bread crumbs on next.
- Sprinkle Herb seasonings on and salt/pepper.
- Then place 1/4 teaspoon of unsalted butter on each half.
- Broil until tomato is hot completely.
- ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.

- X the bottom of tomatoes and place 8 in boiling bath of water for about 15 to 30 seconds or until the skin starts to lift up. Then place in ice filled water bath immediately after you take them out.
- Peel and quarter tomatoes. Place in a large mixing bowl.
- Sauté garlic in olive oil for 2 minutes.
- Add onions, peppers, and celery stir till oil gets on all veggies.
- Add Vinegar.
- Add spices and sugar, simmer for 5 minutes.
- Add tomatoes and simmer for 45 minutes.
- Wash canning jars and lids.
- Place lids in warm but not boiling water to soften the rubber.
- Boil water in large pot to place jars into seal.
- Boil in bath for 20 minutes then remove tighten lids and flip on their tops.
- After 15 minutes flip back and they should be sealed. If not sealed repeat bath.
- Store in cool place.
