PINEAPPLE JACK-O'-LANTERN



Pineapple Jack-O'-Lantern image

This technique uses one of my newest kitchen gadgets: a pineapple corer-slicer! While you can certainly remove the insides of the pineapple using a knife and spoon, this tool makes the job so incredibly easy! Serve the perfectly sliced pineapple after a delicious meal, and use the juice and bottom scraps in a smoothie!

1 large pineapple
1 tea light candle

Steps:

  • Lay the pineapple down horizontally on a cutting board. Using a serrated knife, cut off the top 1 1/2 inches, leaving the leafy crown intact. Set top aside.
  • Place the pineapple upright, with the flesh exposed on the top. Center the pineapple corer-slicer directly over the center core and push down slightly. Hold the pineapple with your left hand while twisting the handle of the corer-slicer clockwise with your right hand, with a slight downward pressure. Continue until you reach the bottom, making sure that you do not cut through the skin at the bottom of the pineapple.
  • Pull up on the handle of the corer-slicer while pulling down with your left hand to remove it from the pineapple. Remove the handle from the corer-slicer and remove the sliced pineapple to a serving plate. Pour any juice that has collected in the bottom of the pineapple into a glass or container for another use.
  • Using a paper towel to get a firm grip, reach into the pineapple and wrap the paper towel around the core that remains inside. Place a firm grip on the core, and twist slightly to detach the core from the bottom of the pineapple. Discard core.
  • Using a large spoon, scrape any remaining pineapple from the bottom of the pineapple to create a level surface for the candle.
  • Using a small flexible paring knife, carve out eyes, nose and a scary grin. Replace the top of the pineapple and refrigerate until ready to display. When ready to display, place a tea light candle inside and illuminate.

1/4 cup butter, softened
1 tsp. vanilla
4 drops yellow food coloring
1 drop red food coloring
1 pkg. (16 oz.) powdered sugar, sifted (about 4-1/4 cups)
1 Tbsp. green colored sugar
5 thin vanilla creme-filled chocolate sandwich cookies, divided
2 JET-PUFFED Miniature Marshmallows, cut in half

Steps:

  • Prepare cake batter and bake as directed on package for 24 cupcakes, blending dry pudding mix into batter before spooning into prepared cups. Cool completely.
  • Beat cream cheese, butter, vanilla and food colorings in medium bowl with mixer until blended. Gradually beat in powdered sugar until blended.
  • Arrange cupcakes on large platter to resemble a stemmed pumpkin as shown in diagram; frost with cream cheese mixture. Use colored sugar to fill in the stem. Add 2 cookies for the jack-o'-lantern's eyes. Crush remaining cookies; sprinkle over cake for the mouth. Arrange marshmallow halves in mouth for the teeth.

4 large oranges
2 cups apple juice, chilled
1/4 cup red cinnamon candies
1 (3-oz.) pkg. Jell-O™ orange or lemon-flavored gelatin
1/2 cup whipped topping

Steps:

  • Cut "lid" from stem end of each orange; discard lids. With spoon or fingers, scoop and scrape out flesh from each orange to within 1/4 inch of peel, being careful not to puncture peel. Reserve orange flesh for another use. Place orange shells on cookie sheet or tray.
  • In small saucepan, combine 1 cup of the apple juice and cinnamon candies. Cook over medium-high heat until mixture comes to a boil and candies melt, stirring constantly. Remove from heat. Add gelatin; stir at least 2 minutes or until completely dissolved. Stir in remaining 1 cup cold apple juice. Pour evenly into orange shells. Refrigerate 4 hours.
  • With small sharp knife, cut out jack-o'-lantern features into side of each orange. Carefully remove peel to reveal gelatin under features. (If gelatin does not release well, rinse paper towel in hot water and wring out; press hot towel on features to soften gelatin slightly, then remove peel.)
  • To serve, top each dessert with dollop of whipped topping. If desired, sprinkle with cinnamon.

3-3/4 cups confectioners' sugar
3 tablespoons butter, softened
2/3 to 3/4 cup whole milk

12 gumdrops
12 black jujubes

Steps:

  • Prepare and bake cake according to package directions for cupcakes. Fill 24 greased muffin cups two-thirds full. Bake at 350° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completely. , For frosting, in a small bowl, combine confectioners' sugar, butter and enough milk to achieve spreading consistency. Stir in food coloring. Cut a thin slice off the top of each cupcake. Spread frosting on 12 cupcakes. Invert remaining cupcakes and place on top; frost top and sides. , For stems, place one gumdrop on each pumpkin. Cut jujubes into thin slices; use a bottom slice for each mouth. , From remaining slices, cut one large triangle and two smaller ones. Position two small triangles and a large triangle on each cupcake for eyes and nose.

5 Kellogg's® Eggo® Minis Homestyle waffles
5 lollipop sticks
Canned white frosting
Canned chocolate frosting
Food coloring
Orange sprinkles
Green sprinkles
Miniature semi-sweet chocolate morsels
Miniature marshmallows, halved horizontally
Pretzel sticks, broken into ½-inch pieces

Steps:

  • 1. Fill 3½ - to 4-cup container with Keebler® Fudge Stripes™ Dark Chocolate cookie crumbs to form base, if desired. Set aside.
  • 2. Prepare Kellogg's® Eggo® Mini Homestyle waffles according to package directions. Cool for 5 minutes. Press one lollipop stick into each waffle. Cool completely.
  • 3. Use white frosting, chocolate frosting, food coloring, orange sprinkles, green sprinkles, chocolate morsels and marshmallow pieces to decorate waffles as jack-o-lanterns. Press pretzel pieces into each as pumpkin stem. Push lollipops sticks into cookie crumbs to stand upright.

3 drops red food color

5 cups Cheerios™ cereal
12 to 15 whole cashews
Assorted gumdrops, raisins, candy-coated chocolate pieces, licorice
1 tube (4.25 oz) Betty Crocker™ white decorating icing

Steps:

  • Place sheet of waxed paper on work surface. In 2-quart saucepan, heat butter and marshmallows over low heat, stirring constantly, until mixture is smooth. Remove from heat. Stir in both food colors until mixture is orange. Stir in cereal until evenly coated.
  • Lightly spray hands with cooking spray. For each pumpkin, shape about 1/3 cup cereal mixture into a ball. Press 1 cashew into top center of ball for stem. Place balls on waxed paper. Cool completely, about 15 minutes.
  • Attach raisins and candies with decorating icing to make faces on pumpkins. Store in loosely covered container.

2 tablespoons shortening
2 tablespoons flour
1 recipe Chocolate Cake Batter
1 recipe Creamy White Frosting
Green gel or paste food color
Orange gel or paste food color
1 small waffle ice cream cone
4 ounces (1/2 cup) black fondant
Black decorating sugar, for sprinkling
Equipment:
Two 6-inch half-sphere cake pans (such as Wilton Sports Ball set) or two 1 1/2-quart
ovenproof bowls
Waxed or parchment paper
Toothpicks
Wire cooling racks
Glass measuring cup
Small offset spatula
Cake plate or 4-inch round cardboard base (optional)
Plastic straw
2 decorating bags, #70 leaf tip, and #5 round tip
Rolling pin
Small, sharp knife
Small plate
Compote or shallow bowl, for serving

Steps:

  • 1. Preheat the oven to 350°F. Lightly grease the bottom of each cake pan, then line it with waxed paper or parchment paper and lightly grease and flour the bottom and sides. Divide the batter between the pans and bake the cakes until a toothpick inserted in the center comes out clean, 30 minutes. Cool the cakes completely in the pans on cooling racks and then turn them out onto the racks.
  • 2. While the cakes are cooling, transfer 1 cup of the frosting to a glass measuring cup. Tint it green (see Decorating Tips). Tint the remaining frosting orange.
  • 3. Using an offset spatula, spread a thin layer of the orange frosting over the flat surface of 1 cake. Invert the second cake on top of the first, joining the flat surfaces of both domes together. Transfer the assembled cake to the cardboard base, if using, or a cake plate. Cover the cake completely with the rest of the orange frosting.
  • 4. To make rib indentations as shown in the photo, hold a plastic straw against the cake, curving it from bottom to top. Lift it off, reposition it, and press again. Repeat all around the cake. (Gently incise the ribs with a skewer if you don't have a straw.)
  • 5. For the stem, invert the ice cream cone and, using a clean spatula, cover it with the green frosting; add more frosting at the top to give the stem a curved tip. Place the stem on the top of the cake.
  • 6. Fit a decorating bag with a coupler and the leaf tip; add 1 cup of the green frosting to the bag. Referring to the photo, pipe several leaves around the base of the stem. Hold the bag at an angle next to the stem. Squeeze out some frosting, allowing it to fan into a wide base, then decrease the pressure and slowly pull the tip away, lifting slightly, to form a point.
  • 7. Remove the leaf tip and replace with the round tip. Pipe tendrils around the stem and leaves. Place the tip where you want the tendril to begin. Using even pressure, squeeze out some frosting and move the tip to draw the tendril. Release the pressure and lift the tip when the tendril is the desired length.
  • 8. Using a rolling pin, roll the fondant to 1/8 inch thick. Referring to the photo and using a small, sharp knife, cut out the features. For the eyes, cut 2 triangles about 1 1/2 inches wide at the base and 1 1/2 inches tall at the center. For the nose, cut another triangle a little smaller than the eyes. Cut the smile to be about 4 inches from tip to tip. You can draw a paper pattern first if you like.
  • 9. Spread the black sugar on a small plate (large enough to hold the smile) using the back of the spoon. Press each cutout into the sugar and then invert the coated cutout onto the pumpkin to form the face, pressing it into the frosting. Transfer the cake to the serving dish if you have not already done so.

½ cup white sugar
½ teaspoon ground cinnamon

2 cups all-purpose flour
1 teaspoon salt
½ teaspoon baking soda
½ cup brown sugar
¾ cup shortening, softened
1 egg
¼ cup molasses
1 cup rolled oats

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Mix pumpkin, sugar, cinnamon, ginger, and nutmeg in a bowl until thoroughly combined. Set aside.
  • Sift flour, salt, and baking soda together in a large bowl. Stir in brown sugar, shortening, egg, and molasses, mixing until smooth. Fold in rolled oats.
  • Roll cookie dough out to 1/8 inch thick on a lightly floured surface. Cut out 48 circles using a 2 1/2 inch cookie cutter. Arrange 24 of the circles on a baking sheet and place a teaspoon of pumpkin filling on each. Cut Jack-O-Lantern faces on the remaining 24 circles, then lay the faces over the pumpkin filling, sealing the edges.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
