4 tablespoons softened unsalted butter
3 tablespoons sugar
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
2/3 cup rolled oats

Steps:

  • Preheat oven to 350 degrees; line two baking sheets with parchment paper. In a medium bowl, mix butter, sugar, flour, vanilla extract, and salt until smooth; mix in rolled oats.
  • Drop firmly packed teaspoons of dough, 2 inches apart, onto baking sheets. Bake until golden,rotating sheets halfway through, 12 to 15 minutes. Cool on sheet 1 minute; with a very thin metal spatula, transfer to paper towels to cool completely.

Grandma's Oatmeal Coconut Lace Cookies are perfectly buttery and crisp. A simple recipe that comes together quickly, which is good, because these are addictive and will disappear in a flash.

2 cups oatmeal (I used rolled oats)
1 cup coconut (I use sweetened)
1 cup brown sugar, packed
1 cup flour
1 tsp salt
1 cup butter
1 tsp baking soda dissolved in 1/4 cup of boiling water

Steps:

  • Preheat oven to 350 degrees F. Fill a pot with water and set on stovetop to boil for later use.
  • Mix first five ingredients together. Work in the butter until the mixture is crumbly.
  • Using the boiling water, dissolve 1 tsp of baking soda. Pour the soda water over the cookie dough and mix together until a ball starts to form.
  • Take small scoops of dough about the size of a walnut and roll into a ball. Space the cookies about 2" apart on a cookie sheet. Bake no more than a dozen or less on a pan at one time.
  • Bake for 8-10 minutes until cookies are golden brown.

1 egg, beaten
1 cup quick cooking oats (such as Quaker™)
3 tablespoons all-purpose flour
1 teaspoon vanilla extract
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Melt butter in a microwave-safe bowl in a microwave. Add sugar and stir to combine. Add beaten egg and mix well. Stir in oats, flour, vanilla extract, salt, and baking powder.
  • Drop teaspoonfuls of dough onto the prepared baking sheet.
  • Bake in the preheated oven until edges are golden brown, about 8 minutes. Let cool completely before removing cookies from foil.

1 stick unsalted butter
1 cup rolled oats (not instant)
1/4 cup all-purpose flour
1 teaspoon vanilla extract
1/2 teaspoon salt
1 tablespoon beaten egg white
2 ounces bittersweet chocolate, finely chopped

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Melt the butter with the sugar in a saucepan over low heat, stirring, until the mixture thickens and the sugar is almost dissolved, about 5 minutes. Transfer to a large bowl and stir in the oats, flour, vanilla and salt. Let cool 10 minutes, then stir in the egg white.
  • Drop 6 rounded tablespoonfuls of batter onto each prepared baking sheet, about 3 1/2 inches apart. Spread each mound into a 3-inch circle. Bake, switching the position of the pans halfway through, until golden brown, 12 to 15 minutes. Let cool on the baking sheets until firm, about 3 minutes, then carefully remove using a thin metal spatula and transfer to a rack to cool completely.
  • Put the chocolate in a small microwave-safe bowl and microwave in 30-second intervals, stirring, until melted. Drizzle on the cookies and let set, about 30 minutes.

  • Preheat oven to 325 degrees F (165 degrees C). Cover baking sheets with foil, then coat the foil with a non-stick cooking spray.
  • In a medium bowl, combine oats, flour, salt, and baking powder. In a large bowl, cream sugar and butter until fluffy. Beat in egg and vanilla. Mix in the flour and oat mixture until just combined. Drop dough by teaspoonfuls onto the prepared baking sheets, 2 1/2 inches apart.

For cookies:
1 stick unsalted butter
1/2 cup packed light brown sugar
1/4 teaspoon salt
3/4 cup sweetened flaked coconut
3/4 cup rolled oats
1/4 cup all-purpose flour
For decorating:
3 ounces fine-quality bittersweet chocolate, finely chopped and melted
3 ounces fine-quality white chocolate, finely chopped and melted
Equipment: 2 (17-by 11-inch) nonstick bakeware liners such as Silpats; 2 heavy-duty sealable bags

Steps:

  • Make cookies
  • Preheat oven to 350°F with rack in middle. Line 2 large baking sheets with nonstick liners.
  • Melt butter with brown sugar and salt in a metal bowl set over a pot of simmering water, stirring occasionally. Stir in coconut, oats, and flour until just combined. Remove pot from heat but keep batter warm over pot (so batter is easier to spread).
  • Drop rounded teaspoons of batter at least 3 1/2 inches apart on 1 baking sheet and spread each to about 2 inches with an offset spatula or back of a spoon. Bake until cookies are bubbling and golden brown, 8 to 12 minutes. Cool on baking sheet on a rack until firm, 3 to 4 minutes, then transfer cookies to rack to cool completely. Form and bake more cookies on second baking sheet (wipe liners clean and cool between batches).
  • Decorate with chocolate
  • Cool melted chocolates slightly. Transfer each to a sealable bag and snip a 1/16-inch opening at a corner of each bag. Put some of cooled cookies on a parchment-lined tray that will fit in freezer, then pipe chocolates decoratively over cookies. Freeze 2 to 3 minutes to set chocolate, then carefully remove cookies from parchment.

1/2 pound (2 sticks) plus 5 tablespoons unsalted butter, room temperature
2 1/4 cups confectioners' sugar
1/4 cup corn syrup
1 1/4 cups bread flour
1 1/4 cups chopped nuts, such as almonds, blanched hazelnuts, or pecans

Steps:

  • Heat oven to 350 degrees. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until fluffy. With the mixer running, add the corn syrup. Reduce speed to low; add bread flour, and mix to combine. Add the nuts, and mix to combine.
  • Place a 12-by-16-inch piece of parchment on a clean work surface. Spoon the dough across the middle of the parchment. Fold parchment over dough, and, using a ruler, press dough into a neat log, and roll until even. Chill log in refrigerator for at least 30 minutes.
  • Line two baking sheets with parchment. Remove the parchment from the log, and slice into 1/2-inch-thick rounds. Place rounds on baking sheets, spaced 3 inches apart. Bake until golden brown and lacy, 15 to 20 minutes, rotating halfway through. Transfer cookies to a wire rack to cool. Bake or freeze remaining dough.

Steps:

  • Preheat oven to 375°F.
  • Line cookie sheet with buttered foil.
  • Mix flour and oats together in a medium bowl.
  • In a large bowl, mix together butter, sugar and corn syrup.
  • Add milk to the butter mixture and mix well.
  • Stir in the flour mixture and mix well.
  • Drop batter by level teaspoonfuls 3 inches apart onto prepared cookie sheet.
  • Press each cookie slightly with the back of a fork or spoon.
  • Bake for 8 to 10 minutes or until cookies have spread and are browned around the edges.
  • Immediately transfer the foil and cookies to a wire rack.
  • Peel cookies off foil after they've cooled.
  • Now spread a thin layer of semi-sweet chocolate on the bottom of 1/4 of the cookies and white chocolate on 1/4 of the cookies.
  • Top each with the bottom side of the remaining cookies.
