MUSTARD CRUSTED RACK OF LAMB

Number Of Ingredients 20

1 rack of lamb, trimmed (about 1 1/2 pounds)
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoons vegetable oil
2 tablespoons Dijon mustard
2 teaspoons minced garlic
1/4 cup seasoned bread crumbs
1 tablespoon grated Parmesan
Fig Chutney, recipe follows, optional
2 1/2 cups red wine vinegar
1/2 pound light brown sugar
1 onion, chopped
1/4 cup chopped fresh ginger
1 1/2 teaspoons yellow mustard seeds
1/4 lemon, zested
1/2 cinnamon stick
1 3/4 teaspoons salt
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1 1/4 pounds firm, slightly underripe fresh figs, rinsed, stems removed and halved

Steps:

  • Season rack of lamb well on all sides with salt and pepper. Heat a medium skillet over high heat and, when hot, add the oil. When the oil is almost smoking, add the rack of lamb and brown well on all sides, about 6 minutes. Transfer the lamb to a plate and set aside to cool slightly before proceeding.
  • Preheat the oven to 450 degrees F.
  • Using the back of a spoon, spread the mustard evenly over all sides of the lamb. Spread the minced garlic over the lamb in the same manner.
  • In a small mixing bowl combine the breadcrumbs and grated cheese and toss to thoroughly combine. Using your hands or a spoon, spread the breadcrumb mixture evenly all over the lamb, pressing so that the crumbs adhere to the meat.
  • Place the rack of lamb on a baking sheet and bake for 12 to 15 minutes for medium-rare. Allow lamb to sit for 5 to 10 minutes before carving into chops to serve.
  • Serve with some of the Fig Chutney, if desired.
  • In a large saucepan combine the vinegar, sugar, onion, ginger, mustard seeds, lemon zest, cinnamon stick, salt, allspice, and cloves and bring to a boil. Reduce the heat to a simmer and cook until mixture is thickened and reduced by 2/3, forming a thick syrup. Add the figs and cook gently until the figs are very soft and beginning to fall apart and most of the liquid they've given off has evaporated, about 30 minutes.
  • Transfer the chutney to a non-reactive container and allow to come to room temperature before serving. The chutney may be made up to 3 weeks in advance and stored in the refrigerator in an airtight container. (Alternately, hot chutney may be ladled into hot sterilized canning jars and processed in a hot-water bath according to manufacturer's directions.)

1 pound lamb stew meat, cut into 1 1/2-inch cubes
Coarse salt and freshly ground pepper
1 medium onion, finely chopped
2 celery stalks, cut into 1/4-inch dice
4 ounces white button mushrooms, cut into 1/4-inch pieces
1 piece (1 inch) peeled fresh ginger minced (about 1 tablespoon)
1 tablespoon fresh thyme, coarsely chopped
Pinch of ground cloves
1 cup homemade or low-sodium store-bought lamb or beef stock
1/2 cup dry red wine
4 ounces pitted prunes, halved
Short Pastry Crust
All-purpose flour, for work surface
1 tablespoon heavy cream
1 large egg yolk

Steps:

  • Heat 2 tablespoons oil in a medium-heavy pot over medium-high heat. Season lamb with salt and pepper. Cook lamb until browned on all sides, about 8 minutes. Transfer to a medium bowl. Add remaining tablespoon oil to the pot. Add onion, celery, and mushrooms; cook, stirring occasionally, until vegetables are softened, about 6 minutes. Stir in ginger, thyme, cloves, lamb, stock, wine, and 1/2 cup water. Bring to a simmer; cover, and reduce heat to medium-low. Gently simmer until lamb is tender, about 2 hours. Stir in prunes. Season with salt and pepper. Let cool completely.
  • Divide dough in half. Wrap half in plastic; refrigerate until ready to use. Roll out other dough half on a lightly floured surface to a 1/4-inch thickness. Cut out four 6-inch rounds. Transfer 1 round to each of four 5-inch pie plates. Divide stew among pies. Roll out remaining dough a 1/4-inch thickness. Cut out four 7-inch rounds. Randomly punch out circles from rounds with a 1/2 inch round pastry tip (such as Ateco #806). Cover each pie with a round. Tuck edges under; press gently to seal. Refrigerate until cold, about 30 minutes.
  • Preheat oven to 400 degrees. Whisk cream and egg yolk in a small bowl. Brush crusts with egg wash. Bake pies on a rimmed baking sheet until crusts are golden brown and juices are bubbling, about 30 minutes. Transfer to a wire rack to cool slightly, about 15 minutes.

2 racks of lamb, 8 ribs per rack, trimmed and fat removed (about 1 1/2 pounds total)
1/2 cup Dijon mustard
2 tablespoons soy sauce
1 teaspoon dried rosemary
2 large garlic cloves, minced
2 tablespoons olive oil

Steps:

  • Pat the lamb dry with paper towels. Combine all the remaining ingredients in a zip-top plastic bag; add the lamb, seal the bag, and knead it around the lamb to work in the marinade and coat the meat thoroughly. Let it sit at room temperature for an hour or refrigerate overnight. If refrigerating overnight, bring to room temperature before roasting; this takes about 2 hours.
  • Position the oven racks so that the top rack is 6 inches below the top of the oven. Preheat the oven to convection roast at 500°F. Coat the meat roasting rack that comes with your oven with nonstick spray for easier cleanup. Set the rack over its pan.
  • Remove the meat from the marinade, leaving a coating on the meat. Discard the bag and the rest of the marinade. Place the lamb on the roasting rack, fat side up, place on the top oven rack, and roast for 5 minutes for rare or 8 minutes for medium-rare. Turn the lamb over and continue roasting for 5 more minutes for rare and 8 minutes for medium-rare. Remove the lamb from the oven, cover it with foil, and let it rest for 10 minutes before carving.
  • Cut between the bones of the rack and serve the lamb in 1-rib pieces.

When it comes to a meat pie there is nothing that speaks more family nostalgia. We all remember that moment our mother has her hands cloaked in oven mitts nursing a Dutch oven or casserole steaming dish to the table. The smell has been traveling through the house for the better half the day and now its time to get out that deep spoon and scoop out all that is inside. This is one my favorite meals to make. Very happy to share it with you :)

3 tablespoons olive oil
2 lbs lamb shoulder meat, diced
1 pinch salt and pepper
1 onion, finely chopped
2 celery ribs, finely chopped
2 carrots, finely chopped
3 garlic cloves, finely chopped
1 cup red wine
34 ounces beef stock
2 bay leaves
3 sprigs thyme
2 rosemary, stalks
1 cup ricotta cheese
2 large sweet potatoes, peeled and chopped
1 tablespoon butter

Steps:

  • Preheat oven to 300 degrees F.
  • Season lamb meat with a pinch of salt & pepper, before adding 2 Tbsp of oil to a dutch oven on medium-high heat. Brown Meat until golden brown all over, you may do this in batches.
  • Remove meat from pan add remaining olive oil along with the onion, garlic, celery and carrots. Cook for 5-7 minutes or until browned.
  • Add meat back to the pan along with red wine, cook for 1-2 minutes until wine reduces to bubbles, pour in stock and add the bay leaves, thyme rosemary and a pinch of salt & pepper.
  • Bring to a boil cover with a lid and place in the oven to cook for 4-6 hours or meat falls apart. Remove from the oven and cook on stove top with lid off until sauce reduces by a third.
  • Meanwhile, bring another pot of water to a boil add a pinch of salt and cook potatoes for 8-10 minutes or until easily pierced with a knife. Drain and mix in a bowl with 1 tbsp of butter and season with salt and pepper.
  • Turn your broiler or grill on, spoon ricotta on top of lamb mix, followed by potato mix, and cook for 5-7 minutes or until slight little bits of golden color appear on the surface. Take straight to the table :).

I came up with this one weekend when I was trying to use up some items from the freezer. They were so good that we have them often. I have fairly small pie tins, so yield will depend on the size of your tins. These freeze really well.

6 sheets puff pastry
1 tablespoon olive oil
500 g lamb, diced
2 cups pasta sauce
1 cup feta cheese, crumbled
milk, for brushing

Steps:

  • Heat oil in pan, and add lamb. Cook until lightly browned, then remove from heat.
  • In a bowl, combine lamb, sauce, and fetta.
  • From each pastry sheet, cut 2 tops and two bottoms, and line 12 lightly greased pie tins with the larger rounds of pastry, and brush the edges lightly with milk.
  • Divide the mixture evenly between each pie, and put top sheet of pastry on, pressing the edges to seal.
  • Brush pies with milk, and bake at 200C for 20 minutes, or until pastry is golden and flakey.

1 lb lean ground lamb (I have used beef or chicken mince too)
1 medium onion
1 garlic clove, crushed
1 (14 ounce) can tomatoes
2 tablespoons chopped of fresh mint
1 teaspoon ground nutmeg
12 ounces fresh spinach leaves
1 (10 ounce) packet phyllo pastry
1 teaspoon sesame seeds
salt and black pepper

Steps:

  • Preheat your oven to 400°F.
  • Lightly grease a 8 1/2 in springform pan.
  • Fry the mince and onion in a dry nonstick pan until golden.
  • Add the garlic, tomatoes, mint, nutmeg and seasoning.
  • Bring to the boil, and simmer, stirring occasionally until most of the liquid has evaporated.
  • Wash the spinach and remove any tough stalks, then cook the leaves in only the water clinging to them for about 2 minutes.
  • Drain the leaves well and then mix through the meat mixture.
  • I sometimes add 1/4 lb of crumbled feta at this stage.
  • Lightly brush each sheet of phyllo pastry with oil and lay in overlapping layers in the tin, leaving enough over hanging to wrap over the top.
  • Spoon the meat and spinach mix in then wrap the pastry over to enclose.
  • Scrunch up any remaining pastry into balls, and place over the top of the pie.
  • Sprinkle with the sesame seeds and then bake for about 25-30 minutes or until golden.
  • I like to let this cool a little, and serve it with a green salad.

A tender, delicious, and addictive recipe for a grilled rack of lamb. The mustard crust adds a savory flavor that is unbeatable. Pairs well with my recipe for roasted potatoes with feta and basil and a glass of red wine.

¼ cup olive oil
¼ cup grainy mustard
1 medium lemon, juiced
1 tablespoon dried oregano
3 cloves garlic, grated
salt and ground black pepper to taste
1 (8 bone) rack of lamb, exterior fat trimmed

Steps:

  • Mix olive oil, mustard, lemon juice, oregano, garlic, salt, and pepper together in a small bowl.
  • Place the whole rack of lamb into a large zip-top bag and pour mustard mixture all over it. Massage the sauce into the meat until fully coated. Place in the refrigerator for at least 3 hours, or up to 6 hours.
  • Clean an outdoor grill and preheat for high heat. Lightly oil the grate.
  • Remove lamb from the refrigerator and discard marinade. Wrap exposed bones in a layer of aluminum foil to prevent them from burning and flaking.
  • Place lamb on the preheated grill over direct heat. Sear the surface briefly, just until a dark brown crust starts to form, about 3 minutes; be careful it doesn't burn. Flip and sear the other side.
  • Move onto indirect heat and close the grill. Cook until an instant-read thermometer inserted into the center reads at least 120 degrees F (58 degrees C) for medium rare, 15 to 20 minutes.
  • Transfer lamb to a serving dish and cover with foil for 5 minutes. Remove all foil and cut into chops to serve.
