1 recipe pie dough
3 pounds of leeks
3 tablespoons butter
1 teaspoon chopped thyme
2 eggs
1/3 cup heavy cream
1 cup grated Gruyere cheese

Steps:

  • Preheat oven to 425 degrees.
  • Line a 9-inch pie pan with dough. Clean and trim leeks, and julienne. Melt the butter, add leeks and season and cook covered over medium to low heat for 20 minutes until softened. Mix the eggs and cream and all but 1/4 cup of the cheese and add the cooled leeks. Pour into pie shell, top with cheese and bake for 40 minutes.
  • BRAISED LEEKS
  • In an 8-inch skilled saute leeks in butter. Add chicken broth to almost cover. Cover pan, and to cook for about 20 minutes, until tender. Remove leeks to a platter. Reduce cooking liquid, pour over platter of leeks and garnish with fresh thyme.
  • FRIZZLED LEEKS
  • Heat oil to hot, but not smoking. Toss julienned leeks with some flour in a bowl. Add to hot oil and fry. Can be used as a garnish.

1 1/3 cups unbleached flour
8 tablespoons unsalted butter, cubed and chilled
1/2 teaspoon salt
4 to 5 tablespoons ice water
12 small leeks (about 3 pounds)
4 tablespoons unsalted butter
1 teaspoon salt
Freshly ground black pepper
2 large eggs
1/4 cup creme fraiche or heavy cream
4 slices unsmoked ham, such as prosciutto, coarsely chopped
3/4 cup grated Gruyere-style cheese, such as Comte

Steps:

  • In a food processor, process the flour, butter and salt until the mixture resembles coarse crumbs, about 10 seconds. Add three tablespoons of water and process for three seconds. Pinch the dough, and if it does not hold together, add additional water and process for several more seconds. Be careful not to overmix. The dough should not form a ball. Turn the dough out onto a lightly floured work surface and knead, just until it forms a ball. Wrap the pastry in plastic wrap and flatten into a disk. Refrigerate for about 30 minutes.
  • Roll out the dough to line a 10 1/2-inch tart pan. Carefully transfer the dough to the pan. Chill for another 30 minutes, or until firm.
  • Preheat the oven to 425 degrees.
  • Trim the leeks at the root. Cut off and discard the fibrous, dark green portion. Split the leeks lengthwise for easier cleaning and rinse in cold water until no grit appears. Coarsely chop the leeks.
  • Melt the butter in a medium saucepan over low heat, add the leeks, salt and pepper and cook, covered, until the leeks are very soft, about 20 minutes. They should not brown.
  • If the leeks have given up an excessive amount of liquid, drain them in a colander. Combine the eggs and creme fraiche in a medium-size bowl, mixing until thoroughly blended. Add the leeks and mix again. Reserve a quarter cup each of the cheese and the ham to sprinkle on top of the tart. Mix the rest into the leek mixture.
  • Pour the leek mixture into the prepared tart tin. Sprinkle with the ham, then the cheese. Season generously with freshly ground black pepper.
  • Bake until nicely browned, 40 to 45 minutes. Serve warm or at room temperature.

DOUGH:
1 teaspoon active dry yeast
1 cup warm water (110 degrees)
2 tablespoons extra-virgin olive oil
1 large egg
1/2 teaspoon fine sea salt
3 3/4 cups unbleached all-purpose flour - (to 4)
FILLING:
4 tablespoons extra-virgin olive oil
2 pounds leeks dark green stem
tops and roots removed
1/2 cup dry white wine (such as Pinot Grigio)
2 large eggs
1/2 teaspoon salt
Grinding of white pepper
1/4 pound prosciutto, mortadella, or cooked ham diced

Steps:

  • Dissolve the yeast in 1/4 cup of the warm water and allow to get chalky looking, about 5 minutes. Transfer the yeast mixture to the bowl of a food processor or pour it into a large bowl if doing this by hand. Pour in the remaining water, the olive oil, and egg and combine well. Add the salt and 3 1/2 cups of the flour. Pulse to mix the ingredients or mix by hand. Stir in the remaining flour, a little at a time, until a smooth ball of dough moves away from the side of the processor or the bowl. The dough should feel soft and smooth and not stick to your hands. You may or may not need all the flour. If you used the food processor, transfer the dough to a bowl and cover the bowl tightly with plastic wrap. Otherwise use the same bowl you worked the dough in by hand. Allow the dough to double in size (about 2 hours) in a warm spot. Meanwhile make the filling. Wash the leeks well as they can be very sandy. Dry them with paper towels and cut them lengthwise and then widthwise in 1/4-inch thick slices. In a large saute pan heat the olive oil, add the leeks and cook them covered over low heat stirring frequently until they soften, about 5 minutes. Uncover the pan, raise the heat to high, pour in the wine and allow most of it to evaporate. Cover the pan, reduce the heat to low and cook until the leeks are very soft and creamy looking. Transfer the leeks to a bowl and when they are cool, stir in the eggs, salt, and a good grinding of the pepper. Cover and refrigerate the mixture until ready to fill the tart shell. This step can be done two days ahead of time. Lightly spray a 10 1/2-inch tart pan with a removable bottom and set aside. Preheat the oven to 375 degrees. Punch down the dough with your fists and divide it in half; roll one half into a 13-inch round, and fit it into the tart shell. Cut off the excess dough with a scissors. Scatter the prosciutto in the base of the shell, then spread the leek mixture over the top. Roll out the second half of the dough to fit the top of the tart pan, allowing for the dough to overhang the pan. Gently roll over the top of the tart shell with a rolling pin to cut off the excess dough. Reroll the scraps and use a cookie cutter to make designs for the top of the tart if you wish, or simply make a couple of small rolls to bake along with the tart. Bake the tart for 35 to 40 minutes or until the top is nicely browned. Allow the tart to cool before removing the side rim. Cut the tart into wedges and serve warm or at room temperature. Note: The Roman emperor Nero ate leeks every day to keep his throat clear, since he loved to sing and believed that leeks kept his vocal chords in condition. This recipe yields 6 to 8 servings.

1/4 teaspoon salt
1/4 teaspoon sugar
1/2 cup cold butter
9 to 11 tablespoons cold water
FILLING:
1 pound thick-sliced bacon, diced
3-1/2 pounds leeks (white portion only), sliced
2 tablespoons all-purpose flour
4 large eggs
1 cup half-and-half cream
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg

Steps:

  • In a bowl, combine the flour, salt and sugar; cut in butter until crumbly. Gradually add water, tossing with a fork until a ball forms. Cover and refrigerate for 30 minutes., In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 2 tablespoons drippings. Saute leeks in drippings until tender; stir in the bacon. Stir in flour until blended; set aside., On a floured surface, roll dough to 1/8-in. thickness. Transfer to an ungreased 10-in. springform pan. Spoon leek mixture into crust. Trim pastry to 1/4 in. above filling; press pastry against sides of pan. Bake at 400° for 10 minutes., Meanwhile, in a bowl, beat the eggs, cream, salt, pepper and nutmeg. Pour over leek mixture. Bake until a knife inserted in the center comes out clean, 20-25 minutes longer. Serve warm.

Number Of Ingredients 13

300g plain flour , plus extra for dusting
140g unsalted butter , cut into small pieces, plus extra for greasing
1 medium egg
4 tbsp iced water
85g unsalted butter
800g leek , sliced lengthways then into 2.5cm/1in pieces
½ tbsp plain flour
300ml milk
200ml double cream
2 medium eggs
4 medium egg yolks , beaten together with the other eggs
100g gruyère , grated
1 tsp English mustard

Steps:

  • Pulse the flour and butter in a food processor until you have fine crumbs. Add the egg yolk and water, and bring together into a ball. Do not knead. Roll the pastry in cling film and chill for at least 1 hr.
  • Meanwhile, heat the butter in a pan, then add the leeks. Cook over a low heat for 20-25 mins until soft, stirring often. Season to taste. Stir in the flour, cook for 3-4 mins, stirring, then stir in the milk and cream. Once smooth, simmer for 15 mins to cook out the flour. Season well, then cool. If making ahead, cover the surface with cling film and chill for up to 2 days. Stir the eggs and egg yolks into the mix, along with the grated cheese and the mustard.
  • Heat oven to 190C/170C fan/gas 5. Roll out the pastry on a floured surface to about 5mm/¼in thick, and gently lay it over a 23cm loose-bottomed tart tin. Using a small ball of pastry to help, gently press the pastry into the sides of the tin. Trim, leaving a slight overhang. Line the pastry with baking paper, fill with baking beans, then bake for 15 mins. Remove the beans and paper, and bake for 10 mins more or until golden and biscuity. Cool on a wire rack. Turn oven down to 180C/160C fan/gas 4.
  • Spoon the leek mix into the case and smooth the top. Bake for 30 mins until set and golden. Rest the tart for 15-20 mins before you slice it, and serve warm. If making ahead, chill the tart. Once cooled, for up to 2 days, or freeze for a week. Defrost in fridge, then warm in the oven for 20 mins before serving.

1 sheet store-bought puff pastry (from a 17.3-ounce package), thawed
2 tablespoons butter
6 leeks (white and light-green parts), halved lengthwise and thinly sliced crosswise, rinsed well
Coarse salt and ground pepper

Steps:

  • Preheat oven to 375 degrees. On a lightly floured work surface, roll pastry to a 10-by-14-inch rectangle. Halve lengthwise into two 5-by-14-inch rectangles. Transfer to a baking sheet lined with parchment paper.
  • With a paring knife, lightly score each rectangle 1/2 inch from edges, creating a border; prick pastry inside border all over with a fork. Refrigerate for 15 minutes, then bake until golden brown, 18 to 20 minutes. (To store, keep crusts at room temperature, up to 1 day.)
  • In a large skillet, heat butter over medium. Add leeks; season with salt and pepper, and stir. Cover; cook until wilted, about 5 minutes. Uncover; cook until tender, 10 to 12 minutes. Spoon leeks onto crusts, cut tarts into wedges, and serve.

One recipe for your favorite savory pastry for a 12-inch pie dish or removable-bottom tart tin
1 tablespoon goose fat (or olive oil)
6 ounces slab bacon, rind removed, cut in 1 x 1/4 x 1/4-inch pieces
Just the green part from 2-1/2 pounds of leeks (about 1 pound, 12 ounces of tender green leaves), carefully cleaned and diced
Sea salt and freshly ground black pepper
6 large eggs
2/3 cup whole milk
1/3 cup crème fraîche

Steps:

  • 1. Line the pie dish of your choice with the pastry and chill in the freezer for 30 minutes.
  • 2. Preheat the oven to 400° F. Prick the pastry all over with the tines of a fork or a sharp knife, then line it with aluminum foil and fill it with dry beans or pastry weights to keep it from bubbling up. Bake it in the lower third of the oven until the edges of the pastry are golden, about 10 minutes. Remove from the oven and reserve.
  • 3. Melt the goose fat with the bacon in a large skillet over medium heat and cook until the bacon is slightly golden but not crisp, 2 to 3 minutes. Add the leeks, stir so they are coated with fat and cook, covered, until they are tender, about 15 minutes, stirring occasionally so they don't stick to the bottom of the pan. Season with salt and pepper and remove from the heat.
  • 4. In a medium-sized bowl whisk together the eggs until they are broken up, then whisk in the milk and the cream. Season with salt and pepper.
  • 5. Arrange the leeks and the bacon evenly over the pastry. Pour the custard mixture over it. Place the tart tin on a baking sheet and bake it in the bottom third of the oven until the top is golden and puffed and the custard is cooked through, 25 to 30 minutes. Remove from the oven, remove the edge of the tart tin if you've used a removable bottom tart tin, and serve immediately.

Steps:

  • Preheat the oven to 180°C (355°F). Place the ricotta, parmesan and eggs in a bowl and whisk until smooth. Roll out the pastry on a lightly floured surface until 3 mm (1/8 inch) thick.
