STEAK FRITES WITH LEMON AND PEPPER SEASONING AND EASY HOLLANDAISE

- For the potatoes: Preheat the oven to 450 degrees F.
- Slice the potatoes into thin wedges and put in a medium bowl. Add the oil, melted butter and seasoning salt and toss to coat. Arrange the wedges in a single layer on a baking sheet. Cook, turning once halfway through, until golden brown, about 25 minutes.
- For the easy hollandaise: In a small saucepan, melt the butter until sizzling.
- Put the egg yolks in a blender and turn to low to allow the yolks to combine. Begin pouring in the very hot butter in a thin stream; the blender should remain on the whole time, and the butter should be poured in very slowly. Keep adding the butter until it's all gone, then immediately begin adding the lemon juice. Check the blender to make sure the sauce is still liquidy and moving easily through the blades. If not, add a little more juice and give it a stir, then blend again. Add the cayenne pepper and a pinch of salt. Taste and adjust the seasoning. Transfer to a serving pitcher and cover with foil until serving.
- For the lemon and pepper seasoning: In a ziptop bag, crack the peppercorns using a rolling pin. Add to a small bowl with the lemon zest, kosher salt, garlic powder, mustard powder, onion powder and sugar and mix well to combine.
- For the steak: Heat a grill pan or large heavy-bottomed skillet over medium-high heat.
- Brush the steaks with melted butter on both sides and season with the lemon and pepper seasoning. Cook, basting the steaks occasionally with more melted butter, until cooked to desired doneness, 2 to 4 minutes a side. Rest for a minute or so.
- To serve, arrange the potato wedges on a platter, add the steaks and drizzle with the hollandaise. Serve with iceberg wedges and ranch dressing.
FRENCH FRIES 3 WAYS RECIPE BY TASTY

- Make the fries: Fill a large bowl with cold water and 1 tablespoon of lemon juice. Peel the potatoes and slice into ¼-inch (6 mm) thick strips about 3 inches (7 cm) long. Transfer the slices to the cold water as you go.
- Rinse the fries by running more cold water into the bowl until the water turns clear, rinsing off any excess starch. Fill the bowl with water and add the remaining tablespoon of lemon juice, then chill in the refrigerator for 30 minutes.
- In a large heavy-bottomed pan, heat 2-3 inches (5-7 cm) of oil over medium-low heat until it reaches 325°F (165°C). Line 2 baking sheet with thick paper, such as brown paper grocery bags.
- Drain the fries, then dry completely using a kitchen towel.
- Cook the potatoes in the hot oil for 6-8 minutes, or until soft and slightly golden in color. Remove the fries from the oil using a wire mesh skimmer and transfer to the prepared baking sheets to drain. Let stand at room temperature for 15-20 minutes.
- Increase the oil temperature to 375°F (190°C). Return the fries to the oil and cook for another 2-3 minutes, or until the golden brown and crispy. Drain on clean paper bags. Season with the salt.
- Serve the fries in cones of parchment paper topped with your sauce of choice.
- For the curry ketchup: Heat the olive oil a medium saucepan over medium-high heat. When the oil is shimmering, add the onion and cook until soft and translucent, about 2 minutes. Season with the salt. Add the garlic and cook for another minute, until fragrant. Add the curry powder, paprika, chili powder, and cinnamon and cook for 30 seconds, until the spices are fragrant and toasted.
- Add the ketchup, Worcestershire sauce, apple cider vinegar, and honey and bring to a simmer. Reduce the heat to medium, cover, and simmer for 15 minutes, stirring occasionally. Remove the pot from the heat and let the curry ketchup cool slightly.
- Transfer the ketchup to a tall, narrow container. Using an immersion blender, purée the mixture until smooth, about 3 minutes. Let the mixture cool completely, then thin with water, 1 tablespoon at a time, until you your desired consistency is reached. The curry ketchup can be made up to 1 day before serving. To serve, top the fries with the curry ketchup, mayonnaise, and chopped onion.
- For the garlic chipotle mayo: Cook the garlic cloves in a small, dry skillet over medium-high heat until the cloves are golden with some black spots, about 9 minutes.
- Transfer the garlic to a food processor, along with mayonnaise, lemon juice, chipotle peppers, and salt. Process until combined. Chill in the refrigerator for at least 1 hour. The roasted garlic chipotle mayo can be made up to 1 day before serving. To serve, top the fries with the garlic chipotle mayo.
- Make the pesto mayo: In a medium bowl, whisk together the mayonnaise, pesto, and lemon juice until well combined. Cover and chill in the refrigerator for at least 30 minutes. The pesto mayo can be made up to 1 day before serving. To serve, top the fries with the pesto mayo.

LEMON-PEPPER FRIES

- Peel and rinse the potatoes. Slice them lengthwise into thin slices, and then into thin sticks. Place the potato sticks in a bowl and cover them with cold water. Swish them around, then pour off the water and replace it with fresh water. Swish them around again and pour off the water, then cover with fresh water and let soak for 2 to 3 hours.
- Make the seasoning: Mix the pepper, lemon zest, salt, garlic powder, mustard powder and onion powder in a large bowl and set aside.
- When you're ready to make the fries, heat about 3 inches of oil in a heavy pot until a deep-fry thermometer registers 300 degrees F.
- Drain the potatoes and lay them out on baking sheets lined with paper towels. Blot them with more paper towels to dry. Carefully drop half of the fries into the oil and cook until they start to soften, 2 to 5 minutes. Remove with a slotted spoon and drain on fresh paper towels. Repeat with the remaining fries.
- Increase the oil temperature to 400 degrees F. Fry the potatoes in two batches again until golden brown and crisp, 2 to 5 minutes, returning the oil to 400 degrees F between batches. Remove the fries from the oil, add to the bowl with the seasoning and toss to coat. When all the fries are cooked, toss with the parsley.

- 1. Cut the potatoes lengthwise into thin strips, about 1/3-inch in width. *Soak the potatoes in ice-cold water for 1 hour, drain, and pat completely dry.
- 2. Heat the oil in a deep fryer or deep skillet to 325*F. and fry the potatoes, in batches, for 2 minutes. Drain the fries on fresh kitchen towels and heat the oil to 375*F. Fry the potatoes for a second time, in batches, for 1 1/2 minutes. Drain the fries on baking sheets lined with fresh kitchen towels. Gently toss the fries with the lemon zest, juice, salt, and pepper. Serve the lemon fries hot.
- Total Time to is like:1 hour, 20 minutes over all.
- My Note: This lemon fries recipe makes 4 large or 6 small servings for the kids.
- **Cook's note: Keep a splatter-guard handy for this recipe. If you do get hot oil on your skin, hold it under cold running water for several minutes and seek medical attention if in doubt. Never use ice to chill a burn; it can cause skin damage.

- Preheat oven to 425 degrees F.
- Wash but don't peel potatoes.
- Quarter potatoes lengthwise, then cut quarters in half (also lengthwise)- or cut in 1/4-inch slices.
- Toss potatoes with oil, lemon juice, salt, pepper, lemon zest, garlic and oregano.
- Spread potato wedges on a shallow, lightly oiled baking sheet and bake for about 35 minutes, or until tender but crisp and browned around the edges.
- Correct seasoning.
- To serve, I like to squeeze more lemon juice on the potatoes just before serving!
