Roasted Broccoli with Garlic and Lemon image

Roasted broccoli with garlic and lemon is one of the easiest, most flavorful side dishes you can throw together with dinner.

1 1/2 pounds broccoli, (cut into 1 1/2-inch florets)
2 - 4 cloves garlic, (peeled and sliced (depends how much you like))
3 tablespoons extra-virgin olive oil
1/2 teaspoon kosher salt, (or more as needed)
1/4 teaspoon freshly ground black pepper, (or more as needed)
1 medium lemon, (halved)
Optional: Freshly grated Parmigiano-Reggiano to taste
Optional: 3-4 tablespoons toasted slivered almonds or pine nuts

Steps:

  • Place an oven rack on the center shelf and preheat the oven to 425 degrees. Line a baking sheet with foil or parchment.
  • Combine the broccoli florets and garlic on the baking sheet. Drizzle with the olive oil and toss to coat, then season with salt and pepper. Spread the broccoli and garlic evenly, leaving space in between for even roasting. Roast for 20 to 25 minutes, using a spatula to turn the pieces over midway through. The broccoli is ready when browned and crispy on the edges and fork tender.
  • Squeeze the lemon juice over the broccoli, being mindful to avoid seeds. If using, top with the cheese and/or nuts. Serve hot.

I was looking for a unique way to prepare broccoli and decided to give this a try! Florets are roasted after being tossed in olive oil and sprinkled with sea salt, freshly ground black pepper, and minced garlic. A squeeze of lemon juice before serving seals the deal.

2 teaspoons extra-virgin olive oil
1 teaspoon sea salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a large bowl, toss broccoli florets with the extra virgin olive oil, sea salt, pepper and garlic. Spread the broccoli out in an even layer on a baking sheet.
  • Bake in the preheated oven until florets are tender enough to pierce the stems with a fork, 15 to 20 minutes. Remove and transfer to a serving platter. Squeeze lemon juice liberally over the broccoli before serving for a refreshing, tangy finish.

1 pound broccoli, separated into florets
2 teaspoons fresh lemon juice
2 tablespoons water
3 tablespoons butter
2 cloves garlic, minced
1 pinch salt
2 teaspoons lemon juice
1 teaspoon ground black pepper

Steps:

  • Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.
  • While broccoli is steaming, melt butter in a small saucepan over medium-low heat and stir in garlic and salt; turn heat to low and let the garlic gently fry until golden brown, about 8 minutes. Drain water from cooked broccoli and return to skillet; sprinkle with 2 more teaspoons lemon juice and the butter and garlic mixture. Sprinkle broccoli with black pepper, toss to combine, and season with a bit more pepper if desired.
