2 large ripe avocados, peeled, divided
1 cup fat-free sour cream
1/4 cup chopped onion
3 jalapeno peppers, seeded and chopped
6 tablespoons minced fresh cilantro
4 teaspoons lemon juice
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/8 teaspoon pepper
1 large tomato, seeded and chopped
Tortilla chips or fresh vegetables

Steps:

  • In a food processor, combine one avocado, sour cream, onion, jalapenos, cilantro, lemon juice, salt, cumin and pepper; cover and process until smooth. , In a small bowl, mash the remaining avocado with a fork. Stir in the pureed avocado mixture. Gently fold in tomato. Serve with tortilla chips or vegetables.

Guacamole made lighter by adding a surprise ingredient! It really works! Adapted from America's Test Kitchen Family Cookbook.

Number Of Ingredients 12

1 medium tomatoes, cored, seeded, and chopped fine
1 cup frozen lima beans
1 Hass avocado, pitted
3 tablespoons fresh lime juice
2 tablespoons mayonnaise
salt
1/4 cup minced cilantro
1 medium jalapeno chile, stemmed, seeded, and minced
1 tablespoon minced red onion (or shallot)
1 garlic clove, minced
1/3 teaspoon cumin
pepper

Steps:

  • Let the chopped tomato drain in a colander while preparing the rest of the guacamole.
  • Bring 4 cups water to a boil in a small saucepan. Add the frozen lima beans and cook until tender and creamy, about 5 minutes. Drain the beans and rinse under cold water until cool. Pat the beans dry with a paper towels then remove the skins by pinching the beans so the skins slide off. If using baby limas, you can skip this step.
  • Scoop out a quarter of the avocado flesh, then process it with the lima beans, lime juice, mayonnaise, and 1/2 teaspoons salt in a food processor until very smooth, 1-1 1/2 minutes, stopping to scrape down the bowl as needed.
  • Cube the remaining 3/4 of the avocado into 1/2" pieces.
  • Gently stir the cubed avocado, pureed lima mixture, drained tomato, cilantro, jalapeno, onion, garlic, and cumin together. Season with salt and pepper to taste. Enjoy!
  • The guacamole can be refrigerated, wrapped tightly in plastic wrap, for up to 48 hours.(the lima beans help keep it very green). Make sure the plastic wrap is touching the surface of the guacamole. Bring to room temperature and season with additional fresh lime juice, salt, and pepper before serving.

I love guacamole, but I cant help but think how fattening it is every time I eat it. This recipe cuts down on the fat, without sacrificing any flavor, I actually think it has more! You can change up the ingredients sizes depending on taste, this is just a starter. If you like cilantro add about 5 tablespoons, I dont care for it myself.

8 ounces nonfat sour cream
1/4 cup green onion, chopped
2 jalapeno peppers, seeded and chopped

Steps:

  • In a food processor, combine one avocado with everything but the tomato. Process until smooth.

  • *When my mom makes this, she uses about a full cup of tomato, but I really dont care for it myself.
  • *Add an extra jalapeno and some hot sauce if you'd like a kick.

2 large ripe avocados, halved and pits removed
8 ounces silken tofu, drained well
Kosher salt
1/4 small red onion, finely diced (about 1/4 cup)
1 small jalapeno, finely chopped (remove seeds for less heat)
1 Roma tomato, finely diced (about 1/2 cup)
3 tablespoons fresh lime juice
2 tablespoons roughly chopped fresh cilantro, plus whole leaves for serving
Serving suggestions: baked blue or yellow corn tortilla chips and sliced bell peppers

Steps:

  • Scoop out the flesh from one avocado and add it to a food processor along with the tofu and 3/4 teaspoon salt. Process until completely smooth, scraping down the sides of the bowl as needed.
  • Scoop out the flesh from the remaining avocado and place it in a medium bowl. Roughly mash with a fork. Add the avocado and tofu mixture, the onion, jalapeno, tomato, lime juice, chopped cilantro and 3/4 teaspoon salt. Stir gently to combine.
  • Transfer the dip to a small serving bowl and garnish with whole cilantro leaves. Serve with tortilla chips and bell peppers.

1 jalapeno
1 medium clove garlic
2 tablespoons lime juice
1 ripe medium avocado
1/2 cup light sour cream
2 to 3 green onions to yield 1/4 cup
Few sprigs cilantro to yield 2 tablespoons chopped
Sprinkle salt
Freshly ground black pepper

Steps:

  • Steam peas for a couple of minutes over boiling water.
  • Wash, trim and seed jalapeno. With food processor running, process as much of the jalapeno as you like, and mince the garlic.
  • Add drained peas, lime juice, avocado and sour cream, and process until smooth.
  • Chop the green onion and cilantro, and stir into the mixture. Season with salt and pepper.

1 1/2 cups plain nonfat yogurt
1 large ripe avocado, peeled, pitted,
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro
1 teaspoon fresh lemon juice
1/4 teaspoon ground cumin
3 carrots, peeled, sliced diagonally
1 small jicama, peeled, cut into 1/4-inch-thick triangles
1 bunch radishes, trimmed sliced
Fresh cilantro sprigs

Steps:

  • Line strainer with double later of cheesecloth. Set strainer over bowl. Add yogurt to strainer. Let drain in refrigerator until yogurt is very thick, at least 2 hours or overnight. Discard liquid.
  • Place yogurt in processor. Add avocado and next 4 ingredients to processor. Puree until smooth. Season with salt and pepper. Transfer to bowl.(Can be prepared 6 hours ahead. Cover and refrigerate.)
  • Place guacamole in center of platter. Surround with carrots, jicama and radishes. Garnish with cilantro sprigs.
