EVERYTHING-SPICED SHRIMP, BROCCOLI AND POTATOES

Steps:
- Put the potatoes in a large pot, cover with water by 2 inches and season generously with salt. Bring to a boil, then reduce the heat and simmer until the potatoes are tender when pierced with a knife, 12 to 15 minutes. Add the broccoli and cook until bright green and crisp-tender, about 1 more minute. Reserve 3 tablespoons cooking water, then drain the potatoes and broccoli.
- Stir the cream cheese and reserved cooking water in a large bowl until smooth. Add the potatoes and broccoli and toss until evenly coated. Season with salt and pepper.
- Toss the shrimp with the olive oil and everything seasoning in a medium bowl. Heat a large nonstick skillet over medium-high heat until very hot. Add the butter and let melt. Add the shrimp in a single layer and cook, turning halfway through, until browned, 3 to 4 minutes.
- Stir the chives into the potato mixture. Divide the potato mixture and shrimp among plates. Sprinkle with more everything seasoning.
LIGHT POTATO, BROCCOLI, AND SHRIMP SOUP
This is a fun little take off of another healthy recipe that I tried at a restaurant. I love to find new ways to use broccoli!

Steps:
- Bring a medium sized pot to medium-high heat and coat with non-stick cooking spray. Add minced shallot and cook for 1 minute. Add potato and broccoli cooking for about 2-3 minutes to caramelize.
- Add chicken broth and thyme to the pot. Season with some salt and pepper. Bring to a boil. Cover pot, reduce heat to medium and cook for about 15 minutes or until potatoes and broccoli are tender. Remove from heat and use a hand-held immersion blender to puree soup base.
- Place the pot back on medium low heat and add cream cheese, sour cream, and half & half. Stir regularly until ingredients are well incorporated and soup is creamy.
- Add shrimp and cook for another 3-4 minutes, or until shrimp are cooked through. Be very careful not to over cook -- they are done when they turn pink. If you over cook, they will be rubbery.
- Check for seasoning, add salt and pepper to your taste if needed.
- Remove from heat and serve with some fresh parsley as garnish.

BROCCOLI AND LEFTOVER MASHED POTATO SOUP
This is a super easy and flavorful soup I came up with to use my leftover mashed potatoes in a healthy way. Between Thanksgiving and Christmas there is a great opportunity to have leftover mashed potatoes. Here is a soup I came up with that will use up those potatoes and fill your stomach with what my husband calls 'dangerously good soup!'

- Heat bacon drippings in a large, deep saucepan or soup pot over medium-high heat. Add onion and celery; saute until softened, 3 to 5 minutes. Add sausage, sage, paprika, salt, and pepper; continue to saute, mashing up the sausage into small pieces until browned and no longer pink, 5 to 7 minutes.
- While sausage is cooking, poke several holes in a zip-top bag and add broccoli (this allows steam to escape). Microwave for 3 minutes.
- Pour broth into sausage mixture, then add mashed potatoes. Mix well, then add the broccoli, corn, and green chilies. Stir to combine all well and then add the sour cream. Taste and add more salt and pepper as needed. Let simmer for about 10 more minutes for flavors to meld.

- Melt 2 tablespoons butter in a stockpot over medium heat; cook and stir onion and garlic in the melted butter until tender, 8 to 10 minutes. BROCCOLI AND SHRIMP-STUFFED POTATOES

- Preheat oven to 400°F.
- Wash the potatoes, prick them and bake in preheated oven for about an hour or until tender.
- Set aside.
- In a 10-inch skillet, heat oil over medium heat.
- Add the onion and cook for 5-7 minutes until golden.
- Add the garlic and broccoli and cook, stirring, for 1 minute.
- Add 1/4 cup water, cover and let steam for 2-3 minutes or until broccoli is crisp tender (if water not evaporated at this point, pour off any water left).
- When cool enough to handle, halve the potatoes lengthwise.
- Scoop out the flesh into a bowl, leaving a thin shell.
- Mash the potato.
- Add the broccoli mixture, shrimp, sour cream and salt and pepper to taste.
- Stir gently until mixture is combined.
- Spoon the filling into the potato skin shell and transfer to a well-buttered shallow baking dish.
- Spoon any leftover filling around the potato shells.
- Sprinkle the top fo the potatoes with Parmesan cheese and dot with butter.
- Bake in oven for 15-20 minutes, until heated through.

- Place broccoli on pan with water and 2 bouillon cubes. Cook for 5 minutes, cover and remove from heat.
- Saute in olive oil the shallots and shrimp until translucent and pink. Add 2 bouillon cubes.
- In another pan melt butter and add flour. Cook for about 1 minute add shallots and shrimp and dissolved bouillon.
- Add cream and milk. Add cheese and cook until melted.
- Drain broccoli reserving the liquid. Add broccoli to soup base. Use reserved liquid to thin down if it is too thick. Add potatoes now if you desire. (I had left over baked potatoes so I skinned and chopped them and threw them in). Simmer on low for about 30 minutes and serve.

- Combine leeks and 3 tablespoons olive oil in a stockpot over medium-low heat. Saute until soft, about 15 minutes, adding more oil if needed. Sprinkle flour over leeks and mash in with a wooden spoon. Reduce heat to low and cook for 2 minutes.
