LORI'S SALSA RANCHERA
Steps:
- In a skillet, cook the bacon until done but soft, not crisp. Add the tomatoes, peppers, onions, garlic, cumin, salt and pepper. Bring the mixture to a boil. Reduce the heat to simmer, cover and cook for 10 minutes.
- Remove from the heat and serve hot over your morning eggs (huevos rancheros), tamales, beans (frijoles) or potatoes (papas). Serve cold with tortilla chips.
LORI'S SPECIAL SPINACH
Steps:
- Heat olive oil in medium stock pot, when hot add spinach and chopped garlic. Cook until fully wilted, then add chicken broth and reduce. Season with salt and pepper.
- Garnish with the Parmesan and serve immediately.
AUNT LORI'S SALSA
This is my aunt-in-law's recipe. It was my first attempt at salsa. I have made 4 batches to date. Each one hotter than the last. Have even sold a jar to my boss.

Steps:
- Chop vegetables to desired size, some like chunky salsa. Sprinkle with pickling salt and let sit covered over night. In morning drain off liquid, press to remove excess. Do not add tomatoes yet.
- In separate bowl: Mix spices, garlic and tomato paste together.
- Add sauce and tomatoes to vegetables and stir well. Cook in roaster for 1 hour at 350°. Stirring occasionally.
- Pour in sterilized jars and process in canner. Makes about 7 pints.
- I have added more tomatoes without a problem. Less or more peppers too. Chop veggies depending on size you want. Peeling zucchini is better as skin tends to be tough.

FRESH RESTAURANT-STYLE SALSA
This addictive salsa is restaurant quality, or maybe even better! It's fresh and flavorful, not too spicy, and easy to make in a food processor with a mix of ripe and canned Roma tomatoes. This makes a big batch which is good because it will go fast. Serve with lots of thin, crispy tortilla chips and a margarita, of course!

Steps:
- Combine canned and fresh tomatoes, onion, and garlic in a food processor; pulse 5 times to chop. Add cilantro, serrano and jalapeno peppers, lime juice, salt, and cumin and process for 10 seconds. Pulse further to desired consistency. Check and adjust seasoning as desired.

Steps:
- In a medium pot with boiling salted water cook macaroni pasta until al dente. Drain.
- In a large skillet cook hamburger and onion until brown. Drain grease. Add mayonnaise and spaghetti sauce; mix well. Add drained and cooked macaroni, cook on medium heat stirring occasionally until heated through. Mix thoroughly.
- To serve, pour mixture into a large serving bowl and top with shredded Cheddar cheese. Serve warm.
