MAPLE BANANA FRITTER WITH FRUIT COCKTAIL
Light and delicious banana dessert topped with vanilla ice cream and maple syrup sauce. Easy to prepare and quick to cook! Great for your small gatherings. Best eaten right after it is served when the banana is still warm and the ice cream is still a bit frozen.

Steps:
- Warm 5 tablespoons butter in a saucepan over low heat. Stir in maple syrup. Then stir in rum, fruit cocktail juice, and lemon juice to taste. Remove from heat, and set aside.
- Warm 2 tablespoons butter in a skillet. Place halved bananas in skillet and fry on both sides until golden and a bit crisp on the edges.
- Place bananas cut-side up on dessert plates. Spoon 1 or 2 tablespoonfuls of fruit cocktail into the center of each banana. Lay a scoop of ice cream on top. Then drizzle with maple sauce.

CRISP BANANA AND PINEAPPLE FRITTERS
Steps:
- In a shallow bowl, whisk the eggs with the cinnamon using a fork. Place the panko bread crumbs on another plate. Toss the fruit in the egg, then into the crumbs. Repeat this 1 more time to make a second coating.
- In a 6 to 8-quart pan heat canola oil, filled just 3 inches from top of the pan, to 365 degrees F. Drop the fruit into the oil and cook until brown on all sides. Drain on paper towels.
- Serve immediately, drizzled with honey, if desired.
MAPLE BANANA FRITTERS
Steps:
- Preheat oven to 250 degrees F.
- In a saucepan bring maple syrup to a gentle boil, reduce heat and let simmer and cook for 10 minutes until thick and will coat the back of a spoon. Remove from heat and let cool enough to pour into a serving container.
- In a deep frying pan, add 2 to 2 1/2-inches of oil and heat to 350 to 375 degrees F or until a drop of batter immediately rises to the surface.
- While oil is heating, sift together in bowl the flour, baking powder, and salt. Beat eggs in a separate bowl and add to dry ingredients. Add milk and vanilla to batter and mix until all ingredients are incorporated and it has a pancake batter-like consistency. Add additional milk a little at a time if needed. Let batter rest for 10 minutes to let the baking powder to become active and bubble.
- Next, cut bananas into 1-inch size pieces on an angle and toss in a bowl with lemon juice. Using two forks, coat banana pieces with the batter and drop one at a time into the hot oil. Let cook until both sides are golden brown, about 3 to 4 minutes for each side. Turn bananas with forks as they brown. Remove and drain on paper towels, then place in oven on a lined baking pan to keep warm. Repeat steps if doing a larger batch. Pour syrup over bananas and serve as a dessert or side dish.
BANANA FRITTERS ON A STICK
Steps:
- Skewer the bananas with popsicle sticks. Whisk the egg and then whisk in the milk. Dip each banana in the egg then toss in the bread crumbs to coat. Repeat the process to create a second coating. Heat oil to 365 degrees and drop in the bananas, moving them around to brown evenly on all sides. Place on paper towels to drain.
- Dipping Sauce: Scald milk in a medium saucepan and transfer to a bowl containing chopped chocolate, gently stirring until chocolate is completely melted. Add vanilla and whisk in peanut butter until smooth.
- Dust the banana fritters with confectioners' sugar. Drizzle chocolate peanut butter sauce over bananas or use as a dipping sauce.

Drop spoonfuls (2 to 3 inches in diameter) of the batter into the hot oil. Reduce the heat to medium. When bubbles begin to appear, turn and cook the other side until golden brown. - Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- In a large bowl, mix flour, baking powder and salt.
- In a medium bowl, mix egg, milk and canola oil. Stir into the flour mixture. Mix in bananas and lemon juice. When thoroughly mixed, form mixture into about 10 balls.
