1/4 cup butter (melted)
1 1/4 cups graham crackers crumbs (the crumbs from approx. 1 sleeve of graham crackers)
1/4 cup sugar
3 - 8 ounce packages cream cheese (softened)
1 - 14 ounce can sweetened condensed milk
1/4 cup pure maple syrup
1 - 16 ounce can pumpkin
3 eggs
1 1/2 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup maple syrup
1 cup heavy whipping cream
1/2 cup chopped pecans

Steps:

  • Combine melted butter, graham cracker crumbs and sugar in a small bowl.
  • Press into the bottom of a 9" springform pan.
  • Set aside.
  • In a large mixing bowl, beat cream cheese until fluffy.
  • Gradually beat in sweetened condensed milk until smooth.
  • At lower speed, beat in maple syrup, canned pumpkin, eggs, cinnamon, nutmeg and salt until combined.
  • Pour cream cheese batter into prepared pan.
  • Place cheesecake pan in another baking pan (with sides) that is larger than the cheesecake pan.
  • Pour hot water into the outer pan around the cheesecake, until it's about halfway up the sides of the cheesecake pan.
  • Bake at 300° for one hour and 15 minutes or until center is set (but likely still soft.)
  • Cool completely, then refrigerate for 6-8 hours before serving.
  • In a small sauce pan, combine 3/4 cup maple syrup and 1 cup whipping cream.
  • Bring to a boil.
  • Boil rapidly 15-20 minutes, stirring occasionally.
  • Cool completely.
  • Add 1/2 cup chopped pecans.
  • Pour glaze over entire cheesecake and cascade down the sides, or pour from a pitcher onto each individual slice when serving.
  • This glaze is also delicious on ice cream and pound cake.

  • Preheat oven to 325°. Place a greased 9-in. springform pan on a double thickness of heavy-duty foil (about 18 in. square). Wrap foil securely around pan. , In a small bowl, combine the cracker crumbs and sugar; stir in butter. Press onto the bottom of prepared pan; set aside., In a large bowl, beat the cream cheese and milk until smooth. Beat in pumpkin. Add eggs; beat on low speed just until combined. Add syrup, cinnamon and nutmeg. Pour over crust. Place springform pan in a larger baking pan; add 1 in. of hot water to larger pan., Bake for 65-75 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of the pan to loosen. Cool 1 hour longer. Refrigerate overnight, covering when completely cooled., In a small bowl, combine the cornstarch and water until smooth. In a small saucepan, melt the butter; add syrup and cornstarch mixture. Bring to a boil over medium-high heat, stirring constantly. Cook and stir for 1-2 minutes or until thickened. Remove from the heat; stir in raisins and walnuts. Cool to lukewarm. , Remove rim from pan. Top cheesecake with raisin mixture to serve.

3/4 cup graham-cracker crumbs
1 cup plus 6 tablespoons sugar, divided
3 tablespoons unsalted butter, melted
2 1/2 pounds cream cheese
3 tablespoons flour
1/2 cup grade A medium amber maple syrup
4 eggs
2 egg yolks
1/4 cup heavy cream
1 teaspoon cornstarch
4 ounces walnut halves (about 1 cup)

Steps:

  • Preheat oven to 350 degrees. In a bowl, mix the graham-cracker crumbs with 2 tablespoons of the sugar and stir with a fork to combine. Grease the sides of a 9-inch springform pan and sprinkle it with the cracker mixture, shaking any excess back into the bowl. Add the melted butter to the bowl and toss with a fork until the butter has moistened the crumb mixture. Scatter the crumbs evenly over the pan bottom and press into it using the bottom of a straight-sided glass. Bake for 10 minutes and let cool. Raise the heat in the oven to 500 degrees.
  • With an electric mixer, beat the cream cheese until it is soft and fluffy, about 2 minutes. Mix the flour with the remaining sugar and add it and half the maple syrup to the cheese in thirds, mixing after each addition. Add the eggs and the yolks to the batter one by one, beating after each addition. Add the heavy cream and mix again. Pour the batter into the crust and bake for 15 minutes. Lower the oven to 200 degrees and bake for an hour more. Turn off the oven, leave the door halfway open and let the cheesecake cool in the oven for a half-hour. Chill in the refrigerator for 4 hours and not more than 24.
  • When ready to serve, heat the remaining maple syrup over low heat in a small saucepan until it bubbles and let simmer gently for 1 minute, until it has thickened slightly. Whisk in the cornstarch and turn off the flame. Add the walnuts and turn to coat. Spread them out on a piece of parchment paper to cool and harden into praline, then sprinkle over the cheesecake.

10 graham crackers, finely ground (1 1/3 cups crumbs)
1/4 cup sugar
5 tablespoons butter, melted
3 (8-ounce) packages cream cheese, at room temperature
3 large eggs, at room temperature for 30 minutes
1 (15-ounce) can pure pumpkin puree (not pumpkin pie filling)
1 (14-ounce) can sweetened condensed milk
3 tablespoons pure grade B maple syrup
2 teaspoons ground cinnamon

1/2 teaspoon fine sea salt
1 cup heavy cream
2/3 cup pure grade B maple syrup
3/4 cup pecan pieces

Steps:

  • Preheat the oven to 325 degrees F.
  • For the crust: Here's a super-easy no-fuss way to make this crust. Break the graham crackers into a food processor with the sugar. Pulse until the crumbs resemble fine meal. Pour the crumbs into a 9-inch springform pan. Pour the melted butter over the mixture, bring together with your fingers and press into the bottom of the pan.
  • Cook's Note: Feel free to experiment with other graham crackers or cookies. Swap cinnamon or chocolate graham crackers for the original graham crackers for a tasty twist.
  • For the cheesecake: In a stand mixer with the paddle attachment, beat the cream cheese on high speed until fluffy. Reduce the speed and, with the mixer running, add the eggs. Increase the speed to incorporate the eggs. Add in the pumpkin puree, sweetened condensed milk and maple syrup. Next, add in the cinnamon, nutmeg and salt. Beat the mixture for awhile; this will make the cheesecake light and fluffy. Pour the pumpkin mixture into the prepared crust. Tap the pan lightly on the work surface to remove any air pockets.
  • Bake until the center appears nearly set, but jiggles a little when shaken, 1 hour and 15 minutes. Cool for 1 hour. Cover and chill at least 4 hours, or overnight.
  • For the glaze: In a medium saucepan, combine the cream and maple syrup and bring to a boil. Boil until slightly thickened, 25 minutes, stirring occasionally. Stir in the pecan pieces. Cover and chill. Stir together before serving.
  • To serve: Spoon the maple pecan glaze over the cheesecake.

1 tsp vanilla extract
25 caramels
3 Tbsp milk
1/2 c chopped walnuts or favorite
1 - 9 inch graham cracker crust - store bought works
TOPPING
1/4 c chopped walnuts
10 caramels
1 1/2 Tbsp milk
whipped cream - optional

Steps:

  • 1. Preheat oven to 350 degree F. Have a prepared graham cracker crust ready or use a store bought ad I did. Next, add caramels and milk to a small saucepan and over low heat, stir until melted. ( can also do this in microwave, stirring every 30 seconds until melted.) - Home made caramel can be used as well. Spread caramel into bottom of crust. Sprinkle nuts over caramel. Set aside.
  • 2. In a large bowl, beat the cream cheese and sugar until well combined. Beat in eggs and vanilla until creamy and well blended.
  • 3. Spread cream cheese mixture evenly over caramel layer. Bake for 40 - 45 minutes or until set. Cool on rack for 15 minutes.
  • 4. In small pan melt the 10 caramels with milk over low heat or melt in microwave. Drizzle top of cheesecake with caramel and sprinkle with nuts. Add a dollop of whipped cream as serving if desired. Keep leftovers refrigerated.

2/3 cup chopped walnuts, toasted
3 tablespoons sugar

150 g digestive cookies
75 g butter, unsalted, melted and cooled
50 g candied ginger, finely cut
675 g Philadelphia cream cheese, at room temperature
1 jar of condensed milk, at room temperature
850 g pumpkin, no seeds or skin, cut in little cubes
3 eggs, bio
60 ml maple syrup
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp salt
240 ml double cream
180 ml maple syrup
60 g walnuts
2-3 tbsp pumpkin seeds

Steps:

  • Vapor cook the pumpkin, until soft. Let it cool to room temperature.Preheat the oven to 160 degrees Celsius. Prepare a ring tray, with removable bottom, brush it with some butter and then put baking paper in it. Transform the cookies in rough crumbles, mix it with the candied ginger and the melted butter, then press it strongly on the bottom of the tray. This way we prepare a good support for the cream cheese filling. Mix well the cheese, until creamy, then slowly add the condensed milk. When the composition is homogenous, add eggs, maple syrup (60 ml), the pumpkin, salt, cinnamon and nutmeg. Mix slowly, without trying to hard to puree the pumpkin. Pour it in the prepared tray, over the crumb crust. Bake the cake for almost 1 hour and 15 minutes, take it out of the oven and let it cool to room temperature, then refrigerate it for a couple of hours, or better, overnight. Just before serving, prepare the maple caramel: heat the double cream and maple, bring to a boil, then let it boil on a medium fire for around 20 minutes, mixing rarely. When the syrup is more consistent, add the walnuts and pumpkin seeds. Set aside. Let cool a little. Serve with the cheesecake. Just perfect :)
