- Preheat a dry skillet over a medium-high heat. Add the walnuts, maple syrup and salt. Cook, stirring frequently, until syrup is caramelized and nuts are toasted, about 3 minutes. Let cool.
MAPLE WALNUT FUDGE
HI, I made this fudge the other day and I must give the recipe 4 stars! The recipe is from the back of Toll House Premier White Morsels by Nestle. Very easy to make and costs less than $3 to make about 50 pieces! I think this would do well at your next school or church bake sale! Maple Walnut Fudge--

Steps:
- Combine butter, evaporated milk,sugar and salt in medium, heavy duty saucepan.
- Bring to a full rolling boil, stirring constantly, over medium heat. Boil, stirring constantly for 4-1/2 to 5 minutes.
- Remove from heat. Stir in marshmallows, morsels, nuts and maple flavoring.
- Stir vigorously for 1 minute or until marshmallows are melted.
- Pour into buttered 13x9 inch baking pan.
- (I used a square casserole) Cool until firm.
- Cut into squares.
- Makes about 50 pieces Makes a nice, creamy fudge!
MAPLE FONDUE
I found this recipe in the December 12, 2000 issue of Woman's Day. It looks like it would be a wonderful dessert for a blustery fall evening or a wintery night!

Steps:
- Combine brown sugar, butter, and cinnamon in a saucepan.
- Bring to a boil over medium heat and boil 1 minute, stirring occasionally.
- Add maple syrup and 1 cup cream; whisk until smooth.
- Return to a boil.
- Whisk remaining 1/2 cup cream and cornstarch in a small bowl until smooth; whisk into saucepan.
- Return to a boil; reduce heat and simmer 3 minutes, stirring often.
- NOTE: The fondue may be made up to 2 days ahead.
- Refrigerate in covered container.
- Reheat in microwave or over low heat before serving.
- Dippers: fruit pieces,bought or homemade gingermen cookies, pound cake cubes or"fingers".
BOARDWALK QUALITY MAPLE WALNUT FUDGE
Throughout the summer we enjoy the fudge sold on the boardwalk at the shore. Hubby and I came up with this recipe so that we would be able to enjoy our favorite flavor year round.

- Grease an 8x8-inch glass baking dish, and line with an 8x12-inch sheet of parchment paper. The ends will hang over the side of the dish.
- Melt the white chocolate, sweetened condensed milk, and butter in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Stir in the maple flavored extract until just combined, then add the walnuts. Pour chocolate mixture into the prepared baking dish; refrigerate until set, about 1 hour. Remove fudge by lifting the parchment paper, then cut into squares.

MAPLE-WALNUT BLONDIES
An autumnal riff on classic blondies, these are a treat for the true maple fanatic. Adding maple syrup to the batter and toasting the walnuts in maple syrup gives the blondies double the maple flavor, while a splash of bourbon in the batter mellows the sweetness. Make sure to underbake these slightly: The key to moist, chewy blondies is to take them out just before they're fully baked. - Heat the oven to 350 degrees. Grease an 8-by-8-inch pan with butter and line with parchment paper, leaving overhang on two sides.
- Make the optional maple nuts: In a small sauté pan, heat the walnuts, 1 tablespoon maple syrup and a pinch of salt over medium heat. Cook, tossing often, until the nuts are lightly toasted and the bottom of the pan looks dry, about 3 to 4 minutes. Transfer the walnuts to a cutting board to cool, roughly chop, and set aside.
- In a large bowl, combine the 1/2 cup butter, brown sugar, 2 tablespoons maple syrup, egg, vanilla and bourbon, if using, and whisk until smooth. Add the flour, salt, baking powder and nutmeg, and stir with a wooden spoon until just combined.
- Transfer the batter to the prepared pan and smooth with a spatula. Sprinkle the walnuts, if using, evenly on top. Bake for 21 to 23 minutes, until the bars are just starting to brown at the edges. They should seem slightly underbaked and will firm up as they cool.
- Sprinkle the blondies lightly with salt, allow to cool to room temperature in the pan. When completely cool, remove from the pan using the parchment paper, then cut into squares and serve.

- Preheat oven to 375 degrees F (190 degrees C). Line muffin pan with paper baking cups.
- Sift the flour, baking powder, and salt together and set aside.
- Cream the butter and sugar together until light and fluffy. Stir in the maple syrup and the eggs and beat until well blended. Add the flour mixture alternately with the milk and beat until well blended. Stir in the walnuts. Spoon the batter into the muffin tins filling each about 3/4 full.
- Bake at 375 degrees F (190 degrees C) for 20 minutes or until toothpick inserted in center comes out clean. Remove to wire rack to cool completely.
