ONE EGG CAKE
This is the very first cake I ever baked! This was my Dad's favorite and I remember he always ate it with peaches over the top. It is a very easy, tasty little cake.

Steps:
- Sift together dry ingredients.
- Add shortening and 2/3 cup milk.
- Beat 2 minutes.
- Add 1/3 cup milk and the egg.
- Beat 2 more minutes.
- Pour into greased 9" square pan.
- Bake 30-35 minutes at 350.

ONE-EGG CAKE
This recipe was my grandmothers,my mother made this one-egg cake when we were little. This cake was made only when one of her (11)children had a birthday. It made us feel special, being just like all the other kids. I make this cake, because its easy and quick to make. Enjoy!

- 1. Add flour,baking powder, and salt mix together in bowl. In another bowl mix together butter,add sugar, gradually cream together until blended and light.Add egg and mix.
- 2. Now add flour small amounts at a time with milk into creamy mixture once blended add vanilla.
- 3. Bake in two greased 8-inch layer pans,in moderate oven (375`F.)25 minutes,or until done

- Preheat oven to 350 degrees F (175 degrees C) grease and flour an 8x4 inch loaf pan.
- In a large bowl, mix flour, baking powder, sugar and salt. Cut in butter. Break 1 egg into a measuring cup and then fill to the 1 cup line with milk. Add to dry ingredients and beat well. Add vanilla and lemon flavoring.
- Pour batter into an 8x4 inch loaf pan. Bake at 350 degrees F (175 degrees C) for 30 minutes or until a toothpick inserted into the center of cake comes out clean.
