One Egg Cake image

This is the very first cake I ever baked! This was my Dad's favorite and I remember he always ate it with peaches over the top. It is a very easy, tasty little cake.

2 cups flour
1 1/4 cups sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1/3 cup soft shortening
1 cup milk, divided
1 egg

Steps:

  • Sift together dry ingredients.
  • Add shortening and 2/3 cup milk.
  • Beat 2 minutes.
  • Add 1/3 cup milk and the egg.
  • Beat 2 more minutes.
  • Pour into greased 9" square pan.
  • Bake 30-35 minutes at 350.

This recipe was my grandmothers,my mother made this one-egg cake when we were little. This cake was made only when one of her (11)children had a birthday. It made us feel special, being just like all the other kids. I make this cake, because its easy and quick to make. Enjoy!

2 c cake flour
2 tsp baking powder
1/4 tsp salt
4 Tbsp butter or other shortening
1 c sugar
1 egg unbeaten
3/4 c milk
1 tsp vanilla
cake frosting, any flavor is great with this cake i like white frosting with coconut

Steps:

  • 1. Add flour,baking powder, and salt mix together in bowl. In another bowl mix together butter,add sugar, gradually cream together until blended and light.Add egg and mix.
  • 2. Now add flour small amounts at a time with milk into creamy mixture once blended add vanilla.
  • 3. Bake in two greased 8-inch layer pans,in moderate oven (375`F.)25 minutes,or until done

2 cups all-purpose flour
2 teaspoons baking powder
1 cup white sugar
1 teaspoon salt
½ cup butter
1 egg
1 cup milk
1 teaspoon vanilla extract
1 teaspoon lemon extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C) grease and flour an 8x4 inch loaf pan.
  • In a large bowl, mix flour, baking powder, sugar and salt. Cut in butter. Break 1 egg into a measuring cup and then fill to the 1 cup line with milk. Add to dry ingredients and beat well. Add vanilla and lemon flavoring.
  • Pour batter into an 8x4 inch loaf pan. Bake at 350 degrees F (175 degrees C) for 30 minutes or until a toothpick inserted into the center of cake comes out clean.

Steps:

  • Cream butter and sugar. Add unbeaten egg. Add vanilla. Beat thoroughly.
  • Mix flour and baking powder.
  • Add flour mix alternately with milk to creamed egg/butter/sugar mixture, beating each time for a smooth batter.
  • Pour into well-oiled loaf pan. Bake at 375 F for 35 minutes.
