¼ cup heavy cream
⅓ cup freshly grated Parmesan cheese
¼ cup unsalted butter
¼ cup reduced-fat cream cheese
1 teaspoon sea salt

Steps:

  • Bring a pot of water to a boil. Add cauliflower and reduce heat to medium. Cook cauliflower until very tender, about 10 minutes; drain, shaking the colander to remove as much water as possible.
  • Blend drained cauliflower and cream in a blender until smooth; transfer to a pot over low heat.
  • Stir Parmesan cheese, butter, cream cheese, and sea salt through the blended cauliflower; cook and stir until hot, about 5 minutes.

12 ounces tiny new potatoes
4 ounces whole onion or 3 ounces chopped, ready-cut onion (1 cup)
1 teaspoon olive oil
8 ounces whole broccoflower or cauliflower, or 4 ounces ready-cut florets (2 cups)
2 teaspoons curry powder
1/2 cup nonfat buttermilk
1 teaspoon cornstarch
1/8 teaspoon salt
Freshly ground black pepper

Steps:

  • Wash but do not peel potatoes; cook in water to cover until tender, 10 to 20 minutes, depending on size.
  • Chop whole onion.
  • Heat medium nonstick pan until very hot. Reduce heat to medium high, and add oil. Saute onion until soft.
  • Meanwhile, wash and remove tough stems or leaves from broccoflower or cauliflower. Cut florets into very small pieces. Add to onion along with curry powder as onion cooks.
  • Add 1/4 cup water to vegetables; reduce heat to simmer; cover, and continue cooking for a few minute longer, until florets are tender.
  • Mix small amount of buttermilk with cornstarch to make a paste; return to remaining buttermilk.
  • When potatoes are cooked, drain and mash.
  • Stir buttermilk mixture, salt and pepper into vegetables; stir in potatoes, and serve.

1 1/2 cups whole milk
6 tablespoons unsalted butter
1/2 cup sour cream
1/2 teaspoon freshly ground black pepper

Steps:

  • Peel the potatoes, cut them into 1-inch cubes and place them in a large pot of boiling salted water. Simmer uncovered for 10 to 12 minutes, until the potatoes are tender. Drain the potatoes in a colander and then return them to the pot.
  • Meanwhile, heat the milk and butter in a small saucepan until the butter is melted.
  • Using a hand held mixer, break the potatoes up and at low speed slowly add the hot milk/butter mixture to make the potatoes very creamy. Add the sour cream, 2 teaspoons of salt and the pepper and whisk to combine. Serve hot.

Boiling potatoes can leave them waterlogged, diluting their earthy subtle sweetness, but steaming them preserves their inherent flavor. As the potatoes soften, they absorb just the right amount of moisture. Seasoning the dish only at the very end heightens their intrinsic subtle sweetness. If you have a ricer, use it for an exceptionally smooth texture: Press the steamed potatoes through the ricer back into the pot, then gently fold in the butter and milk with a wooden spoon or flexible spatula.

  • Prepare a steamer: Arrange an insert or basket (or a large colander, if you have neither) in a large pot, and add enough water to come just below the base of the steamer. Bring water to a boil over medium-high heat.

Mashed potatoes thicken as they cool, so they need cream to regain the right consistency. If kept warm, gently mash in heavy cream until smooth and loose again, adding more if you'd like. If cold, heat the cream in a large pot until steaming, then add the potatoes. Gently mash and whip, adding more cream as needed, until heated through and fluffy. Season to taste again before serving.

Steps:

  • Put the potatoes in a large saucepan and cover with water by 2 inches. Add 2 tablespoons of kosher salt, bring to a boil and cook until fork tender, about 25 minutes.
  • While the potatoes are cooking, heat the milk in a small saucepan over high heat, bring to a boil, cover and remove from the heat. Keep warm until the potatoes finish cooking.
  • Drain the potatoes in a colander and return them to the saucepan over low heat. Stir the potatoes for about a minute in the saucepan to evaporate any additional water.
  • Put the potatoes into a ricer or food mill set over a large bowl. Stir in the butter then 1 1/2 cups to all of the warm milk until creamy. Stir in creme fraiche, mascarpone or pesto, if desired. Season with salt and pepper.

1 teaspoon sea salt flakes
4 cloves garlic, peeled
1/2 cup Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1 large head cauliflower

Steps:

  • In 1-quart saucepan, heat butter, salt, garlic and chicken broth to a simmer over medium heat. Reduce heat to low; simmer 12 to 15 minutes or until garlic is completely soft. Set aside.
  • In stockpot or Dutch oven, heat 3 quarts water to boiling over high heat.
  • Cut florets from heads of cauliflower. If using stalks, cut stalks into 1/2-inch chunks. There should be about 8 cups raw cauliflower. Add cauliflower to boiling water; return to boiling. Cook 15 to 20 minutes or until cauliflower is extremely soft when pierced with knife. Remove from heat; set aside.

2 teaspoons canola oil
8 ounces whole broccoli (1 large stalk)
3 tablespoons low-fat sour cream
1/4 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Scrub potatoes; do not peel. Cover with water, and boil in a covered pot until done, about 20 minutes. (If you cannot find tiny new potatoes, buy larger ones and cut them up.)
  • Chop whole onions. Saute the onions in hot canola oil in a nonstick pan until they soften and start to brown.
  • Wash the broccoli. Trim off about 1/3 of the stem and discard. Slice the remaining stem into rounds 1/4 inch thick, and cut the florets into small chunks. Six to 8 minutes before the potatoes are done, add the broccoli to the potatoes, and continue cooking until done. Drain.
  • Put the sour cream, onions, broccoli and potatoes into a food processor, and process until smooth. Season with salt and pepper.
