CREAMY PASTA CASSEROLE
This easy meal uses cream cheese to add an extra creamy texture to ingredients that are usually on hand. Quick and delicious!

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Cook the bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain and return pasta to pot. Melt cream cheese into the pasta. Stir pasta sauce, Italian seasoning, and red pepper flakes into the pasta mixture.
- Heat a skillet over medium heat. Break ground beef into small pieces and add to the skillet; cook and stir until some of the fat has rendered, 2 to 3 minutes. Add onion and garlic to the beef, continue cooking until the ground beef is completely browned, about 5 minutes more. Stir beef mixture into the pasta mixture.
- Pour pasta-and-beef mixture into a 3-quart casserole dish. Sprinkle mozzarella cheese over the dish.
- Bake in preheated oven until the mozzarella cheese melts, 5 to 10 minutes.

- Cook pasta according to package directions. Meanwhile, in a Dutch oven, cook beef, sausage, mushrooms, onion and green pepper over medium heat until meat is no longer pink, breaking meat into crumbles; drain., Drain pasta; add to the meat mixture. Stir in the tomatoes, spaghetti sauce, salsa and pepperoni. , Preheat oven to 350°. Divide half the pasta mixture between 2 greased 13x9-in. baking dishes. Sprinkle each with 1/4 cup Swiss cheese, 1 cup mozzarella cheese and 1/3 cup Parmesan cheese. Spread 3/4 cup 3-cheese spaghetti sauce over each. Top with remaining pasta mixture and 3-cheese spaghetti sauce. Sprinkle with remaining cheeses., Cover and bake until bubbly, about 25 minutes. Uncover; bake until cheese is melted, about 10 minutes longer. Freeze option: Cover unbaked casserole and freeze for up to 3 months. To use, thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole, covered, 45 minutes. Uncover; bake 10 minutes or until cheese is melted.

MINCE AND PASTA CASSEROLE
Great quick, easy, re-heatable and freezable family favourite. Add or remove ingredients according to likes/ dislikes - great for children!

Steps:
- Cook the pasta according to the instructions, drain and rinse with cold water. Leave draining for now.
- Brown the mince and drain of any excess fat once brown. (3-5 mins microwave on high)
- If adding onion and/ or mushrooms fry them in a little olive oil on the hob until the onions are browning and the mushrooms starting to shrink.
- Break up the mince until it is in very small pieces with no lumps. Season to taste with the listed seasonings and then add the rest of the ingredients (including fried onions and mushrooms if adding) except the pasta (and raisins if adding).
- Cook the mince (12 mins in microwave on high) stirring occasionally (about every 4 mins if microwaving).
- If using stir in the raisins.
- Add the cooked and drained pasta and mix well. This is a good place to stop if pre-preparing or freezing. When wanting to serve heat (unfrozen) gently until hot all the way through (approx 5 mins microwave on medium).
- Serve with grated Parmesan, peas or salad and if feeling indulgent garlic bread.
MINCED BEEF AND NOODLE CASSEROLE
A hearty winter meal on its own or a light tasty summer meal with salad. I've been making this for years and have forgotten where it came from, but I know that now it's got my own personal recipe additions of more of everything. It's become the favourite of my children and their friends...and their friends.

Steps:
- Boil egg noodles (fetteccine or linguine) in water until al dente.
- Rinse, drain and leave.
- Brown minced beef in oil, stirring regularly.
- Add crushed stock cubes (or powder).
- Add water.
- Stir in tomato sauce.
- Add mixed herbs.
- Stir in salt and pepper to taste.
- Stir in corn flour paste until mixture combines and thickens.
- Simmer for 5 minutes.
- Stir, then take from heat.
- In a large oblong or square casserole dish, spread half the noodles.
- Spoon, spread and cover the noodles with half the meat mixture.
- Spread half the grated cheese over the meat mixture.
- Repeat a noodle, meat and cheese layer.
- Bake in medium oven (180C degrees or 350F degrees) 'till browned.
- Take from oven, cut into meal portions and serve with fresh salad and crusty bread.
- Can be made before hand and heated when the hordes arrive for their favourite meal.
SPAGHETTI AND MINCE CASSEROLE

Steps:
- Cook spaghetti in large pot boiling salted water for 10 minutes and drain.
- Brown beef and onion together in medium pot and cook for 5 minutes, pour off surplus fat.
- Add tomato puree, cinnamon, bay leaf and salt and pepper, bring to boil and simmer covered for 15 minutes.
- Discard bay leaf.
- Spread half the spaghetti over base of an ovenproof dish, top with half beef mixture, repeat layer of spaghetti and beef mixture.
- Pour sauce over top, sprinkle with parmesan.
- Bake uncovered in moderate oven for 30 minutes.
- Sauce- Melt butter in a pan, stir in flour, add milk, stir until sauce boils and thickens.
