CHILIS BIG MOUTH BITES
Chilis Big Mouth Bites are tasty little cheeseburgers also known as sliders. Get the easy copycat recipe to make best homemade mini burgers for an appetizer or dinner. Seasoned ground beef patties are cooked in a skillet then placed in toasted brioche buns with cheese, bacon, sautéed onions, and jalapeno ranch sauce.

- Cook bacon in a large skillet and drain bacon on a wire rack. Wipe out the skillet, you may want to save the bacon grease for cooking. When the bacon has cooled, break the bacon into 2 to 3 inch pieces.
- Place the ranch dressing, and pickled jalapenos into a blender.
- Puree until the dressing is smooth. This will taste better the longer it sits.
- Add butter to a large skillet. When the butter has melted, add diced onion. Cook the onion until the onion until has become translucent. Remove the onions and set aside.
- Prepare the burgers by placing ground chuck into a bowl. Add the salt and freshly ground black pepper, mix well.
- Divide the seasoned ground beef into 8 portions. Place as many of the burger patties into the skillet without over crowding them.
- Cook the ground beef patties on each side for 3 to 4 minutes on each side, or until the patty has browned. When the burger has browned add a ¼ of a slice of American cheese to each patty.
- Build the burger by placing cooked chopped onions and bacon on the bottom bun. Top with the burger patty, and drizzle some of the spicy ranch sauce on top of the meat. Add the top bun.

- Using your hands, gently mix together the beef, bacon, mustard, salt, onion powder and pepper.
- Form into 30 (golf ball size) meatballs.
- Heat a grill or grill pan to high heat and grill 3 minutes on each side, or until your desired doneness.

BACON CHEESEBURGER BITES

- Heat a skillet with a lid over medium heat. Add the bacon and cook, turning occasionally, until crisp, about 12 minutes.
- Meanwhile, mix together the ground beef, salt and pepper, Worcestershire sauce and garlic in a small bowl until well combined. Divide the mixture into 6 equal mini patties. Set aside.
- Remove the bacon from the skillet and set aside. Add the burger bites and cook until well browned all over and cooked through, 4 to 5 minutes per side. Add 2 of the quartered pieces of cheese to the top of each bite and cover the skillet with the lid. Allow the cheese to melt, 1 minute. Remove the bites to a plate.
- Tear each bacon piece into bite-size pieces. Start building up the bites by placing a piece of bacon on top of each patty, then a couple of folded leaves of spinach, a couple of pickles, a dollop of your favorite burger condiment, and a half a tomato, securing it all with a toothpick or small skewer. Repeat with the remaining ingredients until all the bites are built, and serve.
MINI MAN BURGERS

- Preheat the oven to 250 degrees F. Preheat a griddle to 350 degrees F.
- Combine the onion powder, garlic powder, pepper, and salt in a small bowl. Set aside.
- Line a jellyroll or sheet pan with parchment paper, and place the ground chuck in the middle of the pan. Cover the meat with a large sheet of plastic wrap. Roll meat with a rolling pin until it covers the surface of the pan; it should be very thin. Remove the plastic wrap, and sprinkle the meat with the seasoning mixture. Fold the meat in half, from side to side, using the parchment paper. Use a pizza wheel to cut the meat into 8 even squares.
- Wrap the buns in foil and place in the oven for 5 to 10 minutes. Meanwhile, place the burgers on the griddle and cook for 2 to 3 minutes per side.
- Remove the buns from the oven. Spread a small amount of mayonnaise on each bun and top with the burger and any other condiments, as desired. Serve immediately.
MINI BURGERS

- For Paul's burger sauce: In a medium bowl, whisk together all of the sauce ingredients.
- For the burgers: Heat a large cast-iron skillet over medium-high heat until almost smoking. Add about 1 tablespoon of oil and 1 tablespoon of the butter to the skillet. When the butter has melted, working in batches, open the buns and toast them in the skillet until they are golden brown.
- Wipe out the skillet and reheat it over medium-high heat. Season the burger patties with salt and pepper. Working in batches and using more of the oil and butter, place some of the burger patties in the skillet (do not crowd the pan). Cook until the burgers are well seared (about 3 minutes) and flip. Place a slice of cheese on each burger and continue to cook the burgers for 2 minutes longer. Cover the skillet to melt the cheese and steam the burgers. Continue until all the burgers are cooked, adding more oil and butter to the skillet between batches as necessary.
- Spread each side of the buns with about 2 teaspoons of Paul's burger sauce. Season the tomato slices with salt and pepper and place the tomatoes on the bottoms of the buns. Place the cooked burger patties on top of the tomatoes and then top the burgers with shredded lettuce. Secure the tops of the buns on the burgers with frilled toothpicks or small bamboo skewers.

- Preheat an oven to 350 degrees F (175 degrees C). Cover a baking sheet with aluminum foil and spray with cooking spray.
- Mix together the ground beef and onion soup mix in a large skillet; cook and stir over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Remove from heat. Stir the mayonnaise and Cheddar cheese into the ground beef mixture.

- Cook beef in 10-inch skillet over medium-high heat about 8 minutes, stirring frequently, until brown; drain. Stir in ketchup, onion and mustard.

- In a mixing bowl, combine ground meat with salt, black pepper, dried oregano and garlic powder. Mix well with your hand. You want all the seasoning be distributed evenly so take your time.
- Place a sheet of baking parchment on your worktop. Using the smallest cookie scoop, scoop out the meat and transfer it onto the baking parchment. Roll each into a ball and them press down to make a patty. With your finger, make a small dent in the center of each patty (this should keep them hold their shape).
