MINI BACON AND CHEDDAR QUICHE CUPS WITH PHYLLO CRUST

Steps:
- Lightly spray a muffin tin with cooking spray, and preheat the oven to 350 degrees.
- Cut the large sheets of phyllo dough into squares that will fit into the wells of the muffin tin. Line each well with 3-4 layers of phyllo dough.
- Beat eggs and add cream, bacon, cheese, onions, salt and pepper. Mix together well.
- Pour the egg mixture into the phyllo dough cups, filling each about 2/3 full.
- Bake for approximately 20 minutes or until the tops are lightly golden. The egg mixture will puff up while baking, but will fall again after you remove it from the oven. Serve warm.
MINI QUICHES WITH PHYLLO DOUGH CRUST
Steps:
- Pre heat oven to 325F.
- In a large bowl, whisk together the eggs with heavy cream and dash of salt and pepper. Add the chopped cooked sausage, green onions, and cheddar cheese and mix well.
- On a clean surface or cutting board, lay out a sheet of phyllo dough and brush the top with oil. Add 3 more phyllo sheets and brush with oil after each one.
- Use your knife or pizza cutter to cut the stack of phyllo dough into four equal squares. Gently press each square stack of phyllo dough into a muffin pan.
- Continue working with the rest of phyllo dough until all mini/muffin molds are lined with phyllo sheets.
- Pour the egg mixture into the phyllo dough molds, taking care to distribute the sausage and cheese mixture evenly between each quiche.
- Bake at 325F until the eggs are set and puff up a little, approximately 15 to 20 minutes. Allow to cool for a few minute and serve warm.

These would make great appetizers, but I keep them in my freezer and reheat them in the air fryer on busy mornings when there's no time to make breakfast.

- Preheat a 6-quart air fryer to 325˚ F. Line the air fryer basket with foil and coat with cooking spray. Arrange the phyllo cups in the basket in an even layer. Divide the chorizo, scallion and cheese among the cups.
- Whisk the eggs with the heavy cream and 1/2 teaspoon each salt and pepper; pour into the phyllo cups. Cook until the eggs are puffed, 5 to 7 minutes.
MINI BRIE AND APPLE QUICHES
The classic pairing of Brie and apples works beautifully in this recipe for bite-size appetizers that came to The Times in 2010 from Eating Well magazine. Premade mini phyllo cups (available in the freezer section of your grocery store) make it easy to make an elegant hors d'oeuvre in about 30 minutes. The cups do not need to be defrosted before filling and baking.

- Preheat oven to 350 degrees Fahrenheit. Arrange phyllo shells on a large parchment-lined baking sheet. Divide apple among the shells.
- Whisk eggs, mustard, salt, pepper and nutmeg in a large measuring cup. Pour the egg mixture over the apple (do not overfill the shells). Place a Brie square in each shell.
- Bake until the egg is set, the Brie is melted and the phyllo is starting to brown around the edges, about 15 minutes. Let cool slightly before serving.
