Easy Low Carb Salmon Cakes Recipe with Creamy Garlic Sauce image

6 - 6 oz salmon patties
2 tablespoons Old Bay lemon pepper seasoning
1 tablespoon pink Himalayan salt
1 teaspoon black pepper
1/4 cup olive oil
Cooked salmon (from above ingredient list)
1 cup pork panko
1 cup Parmesan cheese (grated)
1 tablespoon yellow mustard
3 tablespoons mayonnaise
1 tablespoon dill
2 teaspoons Old Bay Lemon pepper seasoning
2 tablespoons fresh garlic (minced)
4 eggs (whipped)
1/3 cup olive oil or avocado oil
1/2 cup mayonnaise
1 teaspoon paprika
1 teaspoon Old Bay garlic and herb seasoning
1/4 teaspoon salt
3 tablespoons water

Steps:

  • Preheat oven to 400 degrees.
  • Place salmon skin-side down on a baking sheet lined with parchment paper or using a silicone mat.
  • Drizzle with olive oil and sprinkle with the seasonings from the first ingredient list.
  • Bake at 400 degrees 12 to 15 minutes or until the internal temp reaches 145 degrees.
  • After the patties have been cooked, shred the salmon and mix all the ingredients from the second ingredient list. Mix well.
  • Create patty cakes using a 1/4 cup to measure out each patty so they are all the same.
  • Add about 1/3 cup olive oil or avocado oil to a large frying over medium heat.
  • Place the patties in the pan once the oil is hot.
  • Cook about 3 minutes on each side or just long enough until the crust is golden brown.
  • Place the salmon cakes on a plate lined with paper towels to absorb the excess oil.

This is very much like my Salmon Cake Sliders, but with a few tweaks, and with a much lighter sauce. These cakes are very delicate because there's only a minimal amount of breadcrumbs, but they're also very tasty.

1 lb salmon
1/4 cup dry breadcrumbs
1/4 teaspoon garlic powder
1 tablespoon dill (for salmon cakes)
1 teaspoon kosher salt
1/2 ounce green onion, finely chopped
1 egg
4 tablespoons olive oil mayonnaise
1 teaspoon spicy brown mustard
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce
1 tablespoon lemon juice
1/2 cup bell pepper
1/2 teaspoon seafood seasoning (such as Old Bay)
1 cup fat free Greek yogurt (for sauce)
1 tablespoon lemon juice (for sauce)
1 tablespoon dill (for sauce)
1 medium garlic clove, minced (for sauce)
1/4 teaspoon kosher salt (for sauce)

Steps:

  • Set aside ingredients for sauce to be mixed separately.
  • Mix together salmon, chopped dill, garlic powder, and kosher salt. NOTE: fresh salmon tastes much better, but canned salmon can also be used. Add pepper as desired.
  • Chop bell pepper finely. Beat together egg, yogurt, hot sauce and mustard and blend with ingredients in the bowl.
  • Combine all ingredients (except ailoi ingredients) and mix well. The mixture will appear loose, which is how it's supposed to be. Most recipes load up on bread crumbs as a binder, which makes the patties more firm, but also cheats you out of some of the beautiful salmon.
  • Set out sheets of wax paper that are larger than the salmon cakes. Season bread crumbs with a little bit of salt and pepper and place in a shallow bowl. Dust a bit of the wax paper with the bread crumb mixture, then place 1/12 of the salmon mixture on top. Form into patties (I used a ring mold).
  • NOTE: with a good teflon pan, you shouldn't need to use oil or cooking spray.
  • Heat a pan to medium temperature. Pick up the wax paper along with the salmon patty, then flip over onto the pan, discarding wax paper sheet. Cook for about 3 minutes, then flip over and cook for 2-3 minutes, or until lightly brown.
  • Mix sauce ingredients together thoroughly and top as desired.

2 strips bacon, cooked until crispy, crumbled, bacon fat reserved
1/4 cup chopped onion
1 egg
1/2 cup mayonnaise
2 teaspoons Dijon mustard
1/2 teaspoon sugar
1/2 lemon, zested
1 (14-ounce) can wild salmon, checked for large bones
1 baked or boiled russet potato, peeled, and fluffed with a fork
1/4 cup bread crumbs
2 tablespoons grated Parmesan
Freshly ground black pepper
1/2 cup vegetable oil

Steps:

  • Heat 1 tablespoon of the reserved bacon fat in a small saute pan over low heat. Add the onions and cook until translucent. Cool the onions for a bit.
  • Mix the bacon, onion, egg, mayonnaise, mustard, sugar, and lemon zest in a bowl. Add the salmon and potato, mixing gently after each addition. Form the mixture into 12 small patties. In a shallow dish, combine the bread crumbs, Parmesan, and pepper, to taste. Coat the patties in the bread crumb topping. Heat 1/4 cup of the oil in a large saute pan over medium heat, and cook the salmon cakes in batches until golden, about 3 to 4 minutes per side. Add more oil, as necessary. Arrange on a serving platter and serve.

  • Preheat a grill to medium-high. Remove the salmon from the marinade and blot off excess yogurt with paper towels.
