Mummy's Sweet White Scones image

This mouthwatering recipe for scones is courtesy of Petersham Nursery.

Yield Makes about 18 scones

Number Of Ingredients 8

6 1/4 cups all-purpose flour, plus more for work surface
Pinch of salt
1/4 cup plus 2 tablespoons superfine sugar
1 heaping tablespoon baking powder
3/4 cup (1 1/2 sticks) unsalted butter, chilled and cut into pieces
4 large eggs
1 3/4 cups plus 2 tablespoons milk
Granulated sugar, for sprinkling

Steps:

  • Preheat oven to 475 degrees. Line two baking sheets with parchment paper; set aside.
  • In a large bowl, whisk together flour, salt, superfine sugar, and baking powder. Make a well in the center and add butter. Using your fingers, work butter into flour mixture until a crumbly mixture is formed.
  • In a medium bowl, whisk together 3 eggs and milk. Add milk mixture to flour mixture and stir to combine.
  • Turn dough out onto a lightly floured work surface; knead lightly and shape into a round. Roll dough out until it is 1 inch thick. Using a 3-inch biscuit cutter, cut out scones and transfer to prepared baking sheets.
  • In a small bowl, beat remaining egg and brush the top of each scone; sprinkle each with granulated sugar. Transfer baking sheets to oven and bake until golden brown and cooked through, 12 to 14 minutes. Transfer scones to a wire rack and let cool slightly before serving.

I learned how to make these when I was a little girl. After looking at other more complex recipes, involving eggs and cream, I thought there might be space for mine. All you need is self- rising flour, butter and milk, and Hey Presto! You have afternoon tea or a snack.

Number Of Ingredients 4

2 cups self rising flour
1/4 teaspoon salt
30 g butter
250 ml milk

Steps:

  • Preheat your oven to 250C
  • Sift flour and salt in a bowl.
  • Rub in the butter with your fingertips, until it resembles breadcrumbs.
  • Make a well, and add almost all of the milk.
  • (Reserve about a tbs) With a butter knife, quickly work in the milk to the flour, making a dough.
  • On a lightly floured surface, knead the dough very lightly.
  • Flatten gently with your hands to 1.5cm thick
  • Use a round cutter to cut out discs.
  • On a buttered tray place scones next to each other.
  • Brush with reserved milk.
  • Bake for 10 minutes, or until scones sound hollow when tapped.
  • Serve with tea, whipped cream and strawberry jam and you have Devonshire tea.
  • Or add herbs/grated cheese for savoury scones to serve with soups and casseroles.

2 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
8 tablespoons cold unsalted butter, cut up
1/4 cup granulated sugar (use 1/3 for slightly sweeter scones)
2/3 cup milk

Steps:

  • Heat oven to 425°F (220 Celsius).
  • Put flour, baking powder and salt into a large bowl; stir mix well Add butter and cut in with a pastry blender or rub in with your fingers, until the mixture looks like fine crumbs.
  • Add sugar; toss to mix.
  • Add milk and stir with a wooden spoon until dough forms,(the dough may be a bit crumbly).
  • Place dough on floured counter and knead gently until the dough comes together in a ball.
  • Pat or roll into a circle about 1 1/2 inches thick.
  • cut each circle into 6 or 8 wedges.
  • place wedges on a greased cookie sheet- slightly apart for crisp sides, touching for soft.
  • Bake about 12 minutes, or until medium brown on top.

2 cups all-purpose flour
⅓ cup sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
8 tablespoons unsalted butter, frozen
½ cup raisins (or dried currants)
½ cup sour cream
1 large egg

Steps:

  • Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
  • In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
  • In a small bowl, whisk sour cream and egg until smooth.
  • Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
  • Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.

3 medium mugs of self raising flour
a medium mug of cold water
1 teaspoon of salt
a liberal spreading of butter
liberal amounts of strawberry jam (or any flavor)
enough oil (any type you like i use sunflower) to grease your baking trays

Steps:

  • grease the baking trays with the oil and preheat your oven to 200C/gas mark 6 my oven is fan assisted so you may need to adjust it to suit your own oven
  • sift the flour into a large glass bowl,add the salt and make a well in the middle to pour your water in slowly,dont add all the water at once,slowly mix the flour into the well of water untill it starts to form a dough,if your dough is still sticky add a couple of tablespoons of flour or as much needed to make the dough drier
  • lightly dust a chopping board or a clean work surface and start kneading the dough,break into ten balls or how ever many you want depending on the size,it is a heavy dough though so bare that in mind
  • roll each ball with using your hands until smooth,place on the baking tray and press flat with your hand again this can be how ever thick or thin as you like
  • place the baking trays into the oven for about 15 minutes or untill you see a golden color on top
  • remove and allow to cool down slightly then while still warm slice in half and enjoy with butter and strawberry jam

Steps:

  • Preheat oven to 200℃/Fan 180℃/Gas Mark 6. Sieve the flour and baking powder into a large bowl. Add the butter and rub in with your fingertips until the mixture resembles breadcrumbs. Stir in the sugar.
  • Make a well in the centre of the mixture and stir in enough milk to make a fairly dry dough. Turn out onto a lightly floured surface and knead to remove any cracks, then gently roll or pat out to to about 2.5cm/1in thick.
  • Stamp out 5cm/2in rounds using a fluted pasty cutter dipped in flour. Gather the trimmings into a ball, re-roll and cut into more rounds. Transfer to a baking sheet.
  • Bake in a preheated over for 10-12 minutes until well risen and pale golden. Transfer to rack and leave to cool. Serve with strawberry jam and clotted cream.
