STEAMED MUSSELS WITH LIME & CILANTRO



Steamed Mussels with Lime & Cilantro image

Yield four as a main course; eight as an appetizer.

Number Of Ingredients 11

4 lb. mussels
2 Tbs. extra-virgin olive oil
1 medium carrot, peeled and cut into small dice
1 large fresh jalapeño, seeded and minced
2 cloves garlic, minced (about 1 Tbs.)
Finely grated zest and juice of 1 lime
1/2 cup dry white wine or white vermouth
1/2 cup heavy cream
1/3 cup loosely packed cilantro leaves and tender stems, coarsely chopped
1/2 to 1 tsp. Asian chile sauce, such as Sriracha, or other hot sauce (optional)
Kosher salt

Steps:

  • Rinse the mussels in a colander under cold water, scrub the shells thoroughly, remove the tough, wiry beards, and discard any mussels with broken or gaping shells. While the mussels drain, heat the oil in a large, wide pot over medium- high heat. Add the carrot and jalapeño and sauté, stirring occasionally until they begin to soften and lightly brown, about 2 min. Add the garlic and 1/2 tsp. of the lime zest, and continue to sauté until fragrant, 30 seconds. Pour in the wine and raise the heat to high. As soon as the wine boils, add the mussels and cover the pot. Steam the mussels, shaking the pot once or twice, until the shells open, 5 to 6 min.
  • Remove the pot from the heat. With a slotted spoon, transfer the mussels to a large bowl and keep warm. Return the pot with the cooking liquid to the heat, add the cream, and boil until the sauce reduces just a bit, 2 to 3 min. Add 1-1/2 Tbs. of the lime juice, the cilantro, and the chile sauce, if using. Taste and add more lime juice and salt if needed. Ladle the mussels into wide, shallow bowls, pour some of the sauce over each portion, and serve immediately.

1 bunch fresh coriander, about 20 stems
1 tablespoon olive oil
1/4 cup finely chopped fresh scallions
1 large garlic clove, finely slivered
3 fresh serrano chilies, seeded and cut in fine slivers
1 cup dry white wine
1 lime, juice of
2 lbs mussels, scrubbed and debearded
1/2 cup heavy cream

Steps:

  • Reserve 4 small sprigs of cilantro for garnish. Remove the leaves from the stems of the rest, and discard the stems. Rinse and dry the leaves, and set them aside. You should have about 1 1/2 cups of loosely packed cilantro leaves.
  • Heat the oil in a heavy 3-quart saucepan. Add the scallions, garlic and chilies, and saute a few minutes over medium heat until soft but not brown. Add the wine and lime juice, bring to a boil, then add the mussels.
  • Cover, and cook until the mussels open, about 8 minutes. Using a slotted spoon, remove the mussels from the pan, and place in a bowl. Cover to keep warm.
  • Return the saucepan to the stove, add the cilantro and simmer a few minutes, until the cilantro wilts. Place the contents of the saucepan in a blender, and puree. Pour back into the saucepan, add the cream and bring to a simmer. Return the mussels to the saucepan, cover and reheat briefly.
  • To serve, place the mussels in 4 soup plates and spoon the sauce over each portion.
  • Garnish with the reserved sprigs of cilantro.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
4 cloves garlic, cracked away from skin and crushed
1 small onion, chopped
1 jalapeno, seeded and chopped
A couple pinches salt
2 1/2 dozen mussels, scrubbed and beards removed
1/2 bottle dark Mexican beer, such as Modelo Negro or Dos Equis
1 (15-ounces) diced tomatoes
2 tablespoons chopped flat-leaf parsley or cilantro, your preference

Steps:

  • In a deep skillet with a cover preheated over medium high heat, add oil, garlic, onion and jalapeno. Season with salt. Saute 2 minutes. Arrange mussels in the pan. Pour in beer and tomatoes and shake the pan to combine. Cover pan and cook 3 minutes or until mussels open. Remove from heat and spoon sauce down into shells. Garnish with parsley or cilantro. Serve immediately from the pan.

5 garlic cloves, minced
3/4 cup diced tomatoes
1/2 cup sliced green onions
1/2 cup thinly sliced celery
6 1/4-inch-thick slices jalapeño chili with seeds
1/4 cup tequila
2 tablespoons fresh lime juice
1 1/4 pounds mussels (about 40), scrubbed, debearded

Steps:

  • Melt butter in heavy large pot over medium-high heat. Add garlic; sauté until fragrant, about 1 minute. Mix in tomatoes, then next 5 ingredients. Add mussels. Cover and steam until mussels open, about 7 minutes (discard any mussels that do not open). Using slotted spoon, transfer mussels to large bowl. Simmer sauce uncovered until slightly reduced, about 3 minutes. Season with salt and pepper. Pour sauce over mussels and serve.

4 pounds fresh mussels
1/4 cup extra-virgin olive oil
1 medium onion, finely chopped
4 scallions, finely chopped
4 cloves garlic, minced
2 1/2 cups finely chopped fresh ripe tomato
2 jalapeno peppers, seeded and minced
2 cups dry white wine
Juice of 1 lime
2 tablespoons minced fresh coriander

Steps:

  • Scrub and debeard the mussels.
  • In a saucepan large enough to hold the mussels with room to spare heat three tablespoons of the oil. Add the onion, scallions and garlic and saute over low heat until tender.
  • Add the tomatoes and jalapeno peppers and bring to a simmer. Stir in the mussels and add the wine. Return to a simmer, cover and cook over medium heat until the mussels have opened, about 10 minutes.
  • Remove the mussels to individual bowls, discarding any that have not opened. Add the lime juice and coriander to the sauce, pour over the mussels and serve.

30 small mussels
3 medium tomatoes, peeled,seeded and chopped
1 red bell pepper, finely chopped
1/3 cup cilantro, finely chopped
1/4 cup balsamic vinegar
2 tablespoons butter
1 cup white wine

Steps:

  • Scrub mussels, removing any beards that may still be attached.
  • Steam until they just open; discard any that remain closed.
  • Pull each mussel open, being careful not to tear the shell apart.
  • Onto each mussel put a teaspoon of tomato seasoned with salt and pepper to taste.
  • Sprinkle with bell pepper and cilantro.
  • Drizzle with balsamic vinegar and heated butter and white wine.
  • Serve hot.

24 mussels, about 1 pound
1/2 cup water
Mexican vinaigrette sauce (see recipe)
2 tablespoons finely chopped coriander
Lime wedges for garnish

Steps:

  • Pull off and discard the stringy beard from the mussels. Scrub the mussels as necessary and drain them well.
  • Put the mussels in a kettle and add the water. Cover closely and bring to the boil. Cook four or five minutes or until all the mussels are open. Drain. Discard the cooking liquid or put it to another use.
  • Pull the mussels from the shells and save both the mussels and half the shells. Return one mussel to each shell and arrange them on a plate. Spoon an equal portion of the vinaigrette sauce over each. Sprinkle the mussels with coriander. Garnish the platter with lime wedges.

1 3/4 cups chicken stock or canned low-salt chicken broth
6 dried pasilla chilies* (about 4 ounces), stemmed, halved, seeded
1 tablespoon vegetable oil
1 cup chopped onion
1 cup fresh corn kernels (from about 1 ear)
1 large garlic clove, minced
24 mussels, scrubbed, debearded
1 tablespoon butter
2 teaspoons fresh lime juice
2 cups chopped peeled jicama (about 10 ounces)
1/2 cup (loosely packed) fresh cilantro leaves
Lime wedges

Steps:

  • Simmer stock and pasilla chilies in heavy medium saucepan over medium heat until chilies are soft, about 20 minutes. Strain pasilla broth into medium bowl, pressing on solids to extract as much liquid as possible. Discard solids in strainer.
  • Heat oil in heavy large pot over medium-high heat. Add onion, corn, and garlic; sauté 1 minute. Add pasilla broth, mussels, butter, and lime juice. Cover and simmer until mussels open, about 2 minutes. Uncover; stir in jicama and cilantro. Season broth to taste with salt. Transfer mussels with broth to large bowl (discard any mussels that do not open). Serve, passing lime wedges separately.
  • Available at Latin American markets and in the produce section of some supermarkets.
