A spicy but flavorful chili recipe. Trust me, you won't miss the meat! We love to pair this with one of our favorite microbrews.

⅓ cup olive oil
2 cups sliced fresh mushrooms
1 cup finely chopped onion
1 cup chopped carrot
¾ cup chopped green bell pepper
¼ cup chopped celery
1 tablespoon minced garlic
1 tablespoon chili powder, or more to taste
1 tablespoon ground cumin
1 ⅛ teaspoons salt
¾ teaspoon ground black pepper
¾ teaspoon dried basil
¾ teaspoon dried oregano
1 (28 ounce) can whole peeled tomatoes with juice
3 cups black beans, undrained
½ (6 ounce) can tomato paste
¼ cup red wine
¾ teaspoon hot pepper sauce (such as Tabasco®)
2 cups water

Steps:

  • Heat olive oil in a large pot over medium heat; cook and stir mushrooms, onion, carrot, green bell pepper, celery, garlic, chili powder, cumin, salt, black pepper, basil, and oregano until the onion begins to soften, 2 to 3 minutes.
  • Stir in tomatoes with their liquid, black beans and their liquid, tomato paste, red wine, hot pepper sauce, and water.
  • Bring the chili to a boil, reduce heat to low, and simmer until vegetables are tender, about 20 minutes.

Another of Marjorie Druker's wonderful combinations from the New England Soup Factory in Boston. The chili powder, cumin, and Tabasco add a real kick to this colorful combo. Takes a while to make, but not difficult. If you prefer more of a soup, add more V-8 and adjust spices to taste. (If you forget to soak the beans overnight, cover with water, bring to a boil for 2 min, turn off heat, cover and let stand 1 hr).

1/2 cup dried great northern beans
1/2 cup dried red kidney beans
1/2 cup dried black-eyed peas
1/2 cup dried black beans
1/2 cup dried garbanzo beans
1/2 cup olive oil
3 tablespoons minced garlic
2 1/2 cups onions, diced
2 cups carrots, diced
1 cup yellow pepper, diced
1 cup sweet red pepper, diced
1 cup green pepper, diced
3 cups canned diced tomatoes
2 cups v 8 vegetable juice
1 cup vegetable stock or 1 cup water
1 1/2 tablespoons chili powder
1 1/2 tablespoons cumin
1 tablespoon oregano
1 tablespoon basil
3 bay leaves
2 tablespoons kosher salt
1 teaspoon pepper
2 tablespoons Tabasco sauce (not GF)
2 tablespoons balsamic vinegar

Steps:

  • Place all beans in water (cover with several extra inches of water) and soak overnight.
  • Place in large pot (with fresh water if desired) and boil until tender, 2-3+ hours.
  • Drain and cool.
  • In a large stockpot, Sauté garlic, onions, carrots and peppers in oil for 10 minutes.
  • Add beans, tomatoes, V-8, cumin, chili powder, oregano, basil and bay leaves.
  • Cover and simmer gently for 1 hour.
  • Season with salt, pepper, Tabasco sauce and balsamic vinegar.

1 tablespoon olive oil
1 medium sweet onion, chopped
1 jalapeno pepper, seeded and finely chopped
3 garlic cloves, minced
1-1/2 teaspoons ground cumin
1 teaspoon chili powder
2 cups diced fresh tomatoes (about 3 medium)
1-1/2 cups fresh or frozen corn (about 8 ounces)
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2 cups reduced-sodium vegetable broth
1/2 teaspoon salt
1/3 cup chopped fresh cilantro
Optional: Sour cream, diced avocado and lime wedges

Steps:

  • In a Dutch oven, heat oil over medium heat. Add onion and jalapeno; cook and stir until tender, 4-5 minutes. Add garlic, cumin and chili powder; cook 1 minute longer., Stir in tomatoes, corn, beans, broth and salt; bring to a boil. Reduce heat; cover and simmer until heated through, about 5 minutes. Stir in cilantro. Serve with optional toppings as desired.

I borrowed this from The New England Soup Factory Cookbook. This is a thick, hearty, and filling soup for the winter and is easy to make. Feel free to substitute canned beans for the dried variety, but it's best to be ready for this a day in advance as the beans need to soak overnight.

1 lb great northern bean, dried
1/2 lb chickpeas, dried
4 tablespoons olive oil
5 garlic cloves, minced
1 large yellow onion
4 carrots, peeled and diced into 3/4 inch pieces
1 yellow bell pepper, seeded and diced into 3/4 inch pieces
1 red bell pepper, seeded and diced into 3/4 inch pieces
24 ounces diced tomatoes
6 ounces tomato paste
2 cups tomato juice
1 cup white wine
8 cups vegetable stock
3 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons ground coriander
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil
3 bay leaves
salt
pepper
1 jalapeno pepper, minced
1 tablespoon lime juice
1 cup corn kernel
1 bunch scallion, diced
1/4 cup fresh cilantro, chopped

Steps:

  • Place beans and chickpeas in a deep bowl. Add enough cold water to cover by 2 inches. Place the bowl in the refrigerator and soak overnight. Drain before using.
  • Heat a large pot over medium-high heat. Add the olive oil, garlic, onion, carrots, and bell peppers.
  • Saute for 7 minutes, stirring frequently.
  • Add the drained beans, chickpeas, tomatoes, tomato paste, V-8 juice, wine, stock, chili powder, cumin, coriander, oregano, basil, bay leaves, and salt.
  • Cover and bring to a boil. Reduce heat to medium or low and simmer for 1-1/2 hours, or until the beans are tender and fully cooked.
  • Remove from the heat and discard bay leaves. Add jalepeno, lime juice, corn, scallions, cilantro, pepper, and additional salt to taste.
